concierge levels, 16 meeting rooms, and a ballroom space this hotel is well placed in suburban Chicago. The hotel’s world-class food and beverage facilities compliment the grand architecture for its guests. The project’s food and beverage components consist of a coffee bar, lobby lounge, concierge lounge, Bevande Lounge, and the Bluefire Grille Restaurant with indoor and outdoor dining. A Garden Marguis tent is also served from the main kitchen and is utilized for receptions, wedding and banquet dining.

William Caruso & Associates was commissioned by the Gila River Indian Community to provide expert assistance to both find and secure a world-class food and beverage operator as an operating partner, as well as to complete foodservice facilities design for the Gila River Indian Resort complex. The resort consists of both the Lone Butte and Wild Horse Pass Casinos and Resorts. The Lone Butte Casino Resort architectural design was led by the well-known casino design architect, Group West, of Seattle Washington. The Resort is an aesthetic jewel in the Arizona desert and employs multiple foodservice venues including a casino lounge bar, an all-day 24/7 restaurant, a fine dining Italian restaurant and a “branded” food court that includes Quizno’s, an American Bandstand Grill, and a Boars Head brand deli. The casino’s unique main kitchen produces all food service for the property and has an accessible connection to all food and beverage venues. The Wild Horse Pass Casino Resort, completed in 2010, was designed by JCJ Architecture of San Diego. It is also equipped with multiple foodservice outlets, including a Casino Round Bar and a High Rollers Bar, a fast-food branded food court, an all-day dining 24/7 restaurant, banquet facilities, a Ling and Louie’s Chinese Restaurant, and a Shula’s Steak House. The main production kitchen of the facility incorporates the latest in food systems, including a state-of-the-art food service cook/chill system and a central beverage distribution system.

Description:

William Caruso & Associates was commissioned to design the food, beverage, and laundry/housekeeping area for this 300-key hotel in the exciting city of Austin. The food and beverage amenities include a tequila bar, lobby lounge, pool bar, "Craft" restaurant and the well-known Austin City Limits Music Club. 1930’s to cater exclusively to “movie stars” and the “rich and famous”. The original resort had its own airfield and airplanes to shuttle guests to and from the property. In 2003 Kerzner International purchased the facility and developed it into a world-class destination resort. The Palmilla is a five star property with upscale amenities including beach side golf, a world-class spa, the world-renowned Charlie Trotters fine dining restaurant, a palapa beach and poolside bar/grill outlets, a 24-hour room service department and outstanding banqueting facilities.

Budget: Overall project - $500 million / Food Service Equipment - $3 million Number Served: 2000 meals per day - including guests, banqueting and staff Description: The Westin at Denver International Airport (DIA) is planned to be a new world-class 500-room airport terminal hotel. William Caruso & Associates was chosen as the food service and laundry consultant for this prominent and complex project consisting of all Westin hotel amenities, a public transit center to accommodate a train line from downtown, and a public plaza for community programming and events. DIA is the 10th busiest airport in the world generating over $22 billion annually for the region. The Westin Hotel will provide additional revenue to this base and an asset to the traveling guest. The food service elements consist of a lobby lounge, 24/7 restaurant, 24/7 room service, ballrooms and meeting rooms, pool deck and mobile thematic service elements.

OTHER HOTEL PROJECT HIGHLIGHTS: AUSTIN HILTON HOTEL - Austin, Texas

WC&A designers were involved in all aspects of the food/beverage and laundry facilities design for this 300-room resort property located in downtown Austin, Texas. Included in the planning was the design of a main production kitchen, restaurant kitchen, pool and lobby bars, as well as all laundry and housekeeping facilities. WESTIN HOTEL - DENVER INTERNATIONAL AIRPORT - Denver, Colorado

William Caruso & Associates is now involved in the planning of this unique new world-class 500 room airport terminal hotel. GAYLORD OPRYLAND HOTEL/CONVENTION CENTER- Nashville, Tennessee

WC&A was commissioned to provide complete foodservice programming and design services for the Gaylord Opryland Hotel/Convention Center renovation/expansion project. Unique design considerations included integration of existing facilities with new; facility expansion logistics, analysis of storage, production, baking/pastry, Garde Manger, central ware washing and plating/serving capabilities; and budget demands associated with the state-of-the-art food and beverage system required. Additionally, Gaylord Entertainment Co. hired WC&A to conduct an independent audit evaluation for all existing food/beverage service system components in its building. A detailed evaluation report complete with long-term planning recommendations was provided. MARRIOTT RENAISSANCE - Schaumberg, Illinois

WC&A was selected to design the foodservice and laundry facilities for the Schaumberg Convention Center and its adjacent Marriott Hotel Complex by John Portman Associates and Marriott Hotels. Located in the Village of Schaumberg, this world-class facility hosts conventions and conferences worldwide. The 500-room Marriott Hotel is equipped with an upscale lobby bar, café, and restaurants. WC&A designed the entire back-of-the house services that included a main kitchen, banqueting facilities, laundry and housekeeping. The laundry is also equipped with a guest valet.

THE ST. JULIAN HOTEL AND SPA - Boulder, Colorado WC&A was directed to design a full-service kitchen for this nationally known select service hotel brand property. We were asked to program the kitchen space that services a themed restaurant, room service and moderate-sized banquet demands as well as the hotel’s laundry space

HOTEL CONTESSA - San Antonio, Texas

WC&A was commissioned by the owner’s developer representatives, Hixon Properties, Inc. to review and evaluate the existing foodservice areas of this famous historical hotel, located in San Antonio’s historic downtown Riverwalk. Recommendations made included adding a new banquet kitchen and renovations to the existing main kitchen to provide a more flexible use of the facilities. The objective was to provide better and quicker services through the different venue types during the day and evening. The

objective of this upgrade provided the client with better service of fresher more varied food products, which have come to be expected from this high-end hotel. HYATT REGENCY - DENVER TECH CENTER - Denver, Colorado

William Caruso & Associates, Inc. was commissioned to update the food/beverage program and space plan for this 20-year-old hotel. Operational schematics of a new lobby bar, renovated restaurant with upscale buffet, and public area facelift were proposed for this property located in the heart of the Denver Tech Center business district. WESTIN RIVERWALK SUITE - San Antonio, Texas

Hixon Properties, Inc. the owner’s representative contracted WC&A to design and specify foodservice and laundry facilities equipment for this hotel project renovation, along the historic San Antonio Riverwalk. INTERCONTINENTAL HOTEL MIAMI - Miami, Florida

The Intercontinental Hotel Miami was expanded and improved, and WC&A was contracted to program and design back-of-the-house facilities including new housekeeping and laundry areas. The expansion and renovation included the design of a state-of-the-art laundry that is equipped with the latest in heat and water reclamation technology and energy conservative laundry production equipment. This facility has the available capacity to acquire outside laundry production if desired. Upon project completion, this facility achieved a four diamond rating, representing the superior quality of the brand and setting the standard for other high quality hotels in Miami.

THE TANGLIN CLUB – Singapore, Republic of Singapore

Opened in the 1920's, The Tanglin Club is a very exclusive British country club. This prestigious five star club has extensive food and beverage facilities throughout the club, and WC&A was commissioned to provide operations and facility design consulting services. Foodservice areas involved were the main production kitchen, bakeshop, patisseries, the main dining room, an exterior dining patio, and refrigerated meat and vegetable prep rooms. Display cooking stations are designed in both the interior and exterior dining spaces for increased merchandising affect. THE REEFS RESORT HOTEL AND BEACH CLUB – Southampton, Bermuda William Caruso and Associates, Inc. was commissioned to design a major renovation for this famous five star resort’s food, beverage and laundry facilities. Work included master planning and design for a main kitchen, restaurant finishing kitchen, pool bar and laundry and housekeeping areas that were housed in a service wing planned for the resort. A unique element of this project was the request to carefully design all exterior visual elements of the receiving and loading (service) points adjacent to one of the main historical island roadways to ensure that no negative visuals could be seen from the roadway.
