food & drinkPeachesMost people either love or hate them, the fuzzy skin definitelybeing an aquired taste, but peaches really are the taste ofsummer.Buying & Storing PeachesBest bought late July through to SeptemberA ripe peach will always have a fragrant aroma. It should feelfirm with a slight ‘give’ when gently squeezed. Avoid buyingpeaches with blemishes or bruising as they can mould veryquickly.PreparingCut around the peach with a sharp knife and twist the twohalves apart, then slice or chop as required. The fuzzy downon the skin can be rubbed off under cold water if you have aparticular dislike of it. Alternatively just bite into a succulentfruit and eat as you would an apple.CookingPeaches are delicous eaten raw, as they are, sliced into fruitsalads or served with cream, ice-cream or coulis, but they canalso be poached or roasted to make a really tastly dessert.

To PoachPoaching works really well with peaches that are under-ripe. Skin the peaches by covering whole fruits with boiling water, leave for 30 secs and then plunge them into cold water. Theskins should peel away easily. Simmer skinned wholepeaches in a mixture of about a pint of sweet white wine, 2tbsp clear honey and a vanilla pod, split (or a teaspoon ofvanilla extract). Simmer until peaches are tender but not toosoft, usually about 15-20 mins. Turn the fruit a couple oftimes. Remove from syrup mixture and reduce the syrupdown by boiling hard for about 10 mins. Spoon thickenedsyrup over peaches and cool. Stored covered in the fridge andserve either warm or cold with cream, ice-cream or yoghurt.Spicy Poached PearsPoach skinned and halved peaches in a mixture of red wine(add wine to pan until peaches float), a tablespoon of sugerper peach, one or two cloves or a pinch of mixed spice.Simmer until soft (30 mins to 2 hours), remove peaches, reduce syrup down and pour over peaches to serve or store.Experiment with poaching liquid by adding citrus flavours andzests, different wines, liquids or water and different sugarsand honey. Have fun!

It all started when my mother and dad

became the landlord and landlady at the

Drum & Monkey in Outwood - now the

Rescuers. I was all of 12 years old and the

resident drummer at the pub took me under

his wing, teaching me how to play drums

and bringing me on stage at weekends to do

my little bit. This sparked a love of playing

drums that has stayed with me my whole

life.

My dad gave me an old radio mic and

amplifier to exchange for a drum kit and the

exchange was done with The London pub

in the Springs, Wakefield. The drum kit

consisted of bass drum, solid brass snare

drum, tom tom, high hat foot pedal and 2

old bashed cymbals. I was invited to try out

the drums on stage at The London and at

the tender age of just 13 years old, I

enjoyed my first real public appearance on

stage which seemed to go down well with the

audience - in fact I was offered a job on the

spot and told I was going to be a star! I played

at The London, without my parents’

knowledge, for 5 nights and earned 12/6

shillings - I remember going on holiday and

the landlord giving me an extra 1 shilling and

sixpence, which at the time felt like a pools

win! My time at The London didn’t last long

as, at the time, I was going to Wakefield

College of Art and soon formed my own

band, getting all the experience and practice I

could. On leaving college, I couldn’t wait to

join my first ‘real’ band and in 1957

auditioned with a skiffle group called The

Calder River Skiffle Group, which at the time

was one of the best skiffle groups on the

scene. We played mainly pubs and youth

Redundant but not Retired!Local legend Colin Dack has backed acts like Craig Douglas, Marti Wilde, Emile Ford,

Marti Caine, Kenny Lynch and Jane McDonald and has been resident percussionist at

Crigglestone Working Mens Club in Wakefield since 1972. After starting drumming at

age 13, Colin looks back on an incredible 56 years as a drummer.

13

clubs and appeared on many cinema stages - the Regal on

Kirkgate, the Playhouse, City Varieties and Theatre Royal

Castleford.

Playing with the group gave me my first real taste of the

business and when the skiffle era ended, I took a couple of

resident jobs in Wakefield pubs (Crown & Anchor,

Daulphin, British Oak) and one of my claims to fame is to

have played to the first ever stripper to appear in Wakefield!

That was at the Crown & Anchor on Kirkgate, which is now

Wilkinsons store.

My next group in the sixties was a five piece rock and

roll group called Roy Hant & the Rhythm Makers. We

worked local pubs, clubs and dance halls and finally signed

a contract with Butlins through a London agent, George

Ganjou, who at the time was agent to many stars such as

Cliff Richard. He sent us to Butlins in North Wales, where

we had our own ballroom and appeared every Sunday

evening on the Gaiety Theatre. We spent sixteen weeks in

the camp and worked with some great names - Clinton Ford

was there and I actually met a young drummer called Ringo

Starr!

Butlins gave me some great experiences but we came

home to Wakefield where the group disbanded after playing

locally for a while and I returned to doing resident work in

the pubs and clubs around the city. A young fella by the

name of Prince Dav Khan advertised in a Leeds paper to

form a backing group called The Babes and after

auditioning, the final selection included four of us from the

Rhythm Makers. The job was to play rock and roll for 2

weeks in a large tent at the

fairground in Town Moor,

Newcastle. The set up was

a boxing booth in which we

were paraded outside,

shown to the crowd and

then took up our places on

a stage 10 feet high with

crash barriers to stop the

crowd pushing forward.

My next move, which

lasted five years, was to

an excellent group

called the Dene Stanton

Four, a four piece

playing anything from

rock to ballads. We played

all the local clubs and made a real name for

ourselves in the Yorkshire area - we even made a record for

the Pirate Ships at EMI Studios. Eventually, I was offered a

job with The Hillbillies Showband, which went on to

become The Sterling Showgroup. We did just about

everything from social clubs to Batley Variety and Wakefield

Theatre Club to television extra work and had some great

times mixing with top names such as Jimmy Tarbuck,

Kenny Lynch and Bruce Forsyth.

I received offers to work on the QE2 and to go with

American artiste Guy Mitchell to South America as his

personal drummer, but due to commitments at home, it just

wasn’t to be. I spent quite a few years playing jazz and

worked with the Wakefield Arms Jazz Band which gave me

even more experience in the music field. I had the honour

whilst working with the jazz band to be selected, with other

jazz musicians, to represent Yorkshire at the Wakefield

Theatre Club, which was recorded and played on radio.

In 1972 I was asked to work at the Crigglestone Working

Mens Club and remained as resident percussionist. Thirty

eight years after starting to work at Crigglestone, the club

has decided to dispense with its resident backing, bringing

my time with the club to an end. I’ve had an amazing career

and been involved with hundreds of fantastic musicians,

many were household names such as Jane McDonald and

many were unknown to the public but nevertheless

incredible.

My last evening at Crigglestone Working Mens Club on

9th July will be a special and emotional evening and anyone

who has come to know me over the years is very welcome

to attend. But that isn’t quite the end of Colin Dack.

Although I am intending to slow down a little bit, music is

for life and one or two offers have already come my way, so

look out for details. My main passion now though, is to

pass on the benefit of my experience to local youngsters

who would like to be introduced into the world of drums. If

you are interested in learning more about playing drums or

have a child who is interested, please give me call on 01924

825587.

Most people know obesity is on the increase, and so are all

the medical conditions associated with it. What you may not

realise is that being just three stone overweight classifies you

as being clinically obese and this can affect self confidence,

fitness levels and more seriously, according to figures released

by the NHS puts you at an increased risk of developing type 2

diabetes, hypertension and cancer. Obesity is estimated to

shorten life by an average of nine years. But you no longer

have to be another statistic thanks to LighterLife.

LighterLife is a unique weight-loss and weight-management

programme that has been designed specifically for men and

women who have a Body Mass Index (BMI) of 25 or over, and

the programme has successfully helped thousands of people

to make lasting changes and enjoy happier, healthier lives.

The medically monitored programme was developed over

a decade ago by three professional women with personal

experience of obesity who wanted to offer a lasting solution

to the familiar phenomenon of yo-yo dieting. It is the only

national weight-loss and weight-management plan that looks

beyond food to examine lifestyle and emotions in order to

help clients to break the weight loss / weight gain cycle.

“There is more to weight loss than eating less and

exercising more,” comments Peter Barrett, a LighterLife

Counsellor for the Wakefield area. “If it was that easy

everyone would be slim and healthier. That is why LighterLife

uses a powerful combination of very low calorie nutritionally

complete soups, shakes and bars, which enable fast and

effective weight loss, along with counselling techniques which

include cognitive behavioural therapy (CBT) and transactional

analysis (TA) to examine the thoughts, feelings and behaviours

that have led clients to become overweight.”

Peter runs LighterLife meetings in small, single sex groups

of 7-12 people and “by removing conventional food from the

equation, his clients are able to focus on themselves and to

question their eating habits, whilst at the same time having the

motivation to keep on the programme because they see the

weight coming off week after week, which is really important

when you have a lot of weight to lose. The counselling,

coupled with motivational tools, enables people to make

lasting changes to their diet and ultimately their life,” says Peter

The nature of the weekly groups is extremely supportive

and clients can also make additional visits to Peter if they feel

they need a little more support. And the support doesn’t stop

there. Once the target weight has been achieved, the qualified

LighterLife Counsellor re-introduces clients to conventional

food slowly and educates you on healthy choices in order to

help you maintain your weight loss and new figure for life.

To find out more about LighterLife or to book a freeappointment, please call Peter on 01924 211855 or visitwww.lighterlife.com/peterbarrett

Planning a wedding involves skills that you may never

had had reason to use before - you need to be a skilled

manager, negotiator and mediator and be able to take

on the worry and frustrations of arranging what is

probably the most important day of your life.

The first thing that needs to be considered when

planning the ultimate wedding is how much time you

will give yourself for the planning. This is determined by

the date you set for your Wedding Day.

Some weddings can take up to 3-4 months to

prepare for and plan, but some can take much longer

and some need to be planned and arranged in only a

couple of months. The length of time you allow yourself

to plan your wedding will to some extent determine the

type of wedding you can have.

One of the most important factors that go with

planning a wedding is determining who you will be

delegating specific duties to. Many brides have a close

circle of friends and/or family members who are happy

to help out with different duties. Don’t be afraid of

accepting offers of help as it is easy to become

overwhelmed by the sheer number of tasks that need

doing and the responsibilities involved. Here are some

of the various duties that you can hand out:

• Catering - all of the arrangements for the food and

drink

• Invitations and seating arrangements - addressing and

mailing of invitations and the working out of seating

arrangements

• Decorations for the wedding and reception including

flowers, centre pieces, balloons etc

• Music, entertainment and/or DJ

• Bridesmaid and groomsmen gifts and favours

• Gowns and tuxedos

• Bridal showers/bachelor parties - usually the

responsibilities of the chief bridesmaid and bestman

It is usual to have all these things to organise for a

wedding and brides often start to plan their wedding

feeling and organised and wanting to be in control of

everything. The small details can however, quickly add

up to a lot of work and stress. It is very possible to

retain full control whilst delegating certain tasks.

PlanningYour Big

DayWith a bit of

organisation andattention to detail,

planning yourperfect wedding

can be stress-free

20

The secret to retaining control is setting a specific

time period to have all tasks completed after you have

delegated the responsibilities. Creating a to-do list and

time sheet is a great way to do this, checking off tasks as

they are completed.

Regular meetings to discuss the progress of tasks will

help you feel in control and should identify any potential

problems before they become real problems.

Ideally, at least a year is needed to comfortably plan a

wedding but this is not always possible or wanted. For

the purposes of this guide, we are looking at a 12 month

wedding timeline that will certainly make it a little bit

easier to host the wedding of your dreams.

of the flowers for the church.

• Choose and order your wedding rings

• Order your wedding cake. Check with the reception

venue if you will need to supply a cake stand and knife.

3 months before your wedding day: • Confirm the wedding music with minister

or vaccinations that may be necessary. If the bride

Distress, low mood and worry are the major

mental health problems of the 21st Century and

affect more than one in three of us at some time.

This course has been designed to give easier access

at an affordable cost to an effective Psychological

treatment and doing so in a way that cuts through

jargon.

By empowering users to understand why they feel as

they do, and to learn new ways of improving how they

feel, the course aims to provide ready access to key

information on how to be more confident and happier.

The course uses cognitive behaviour therapy (CBT)

which is an effective and practical way of helping

people tackle common problems such as low mood

and anxiety as well as helping them cope with longer-

term physical health problems.

It aims to provide a range of life skills that are practical

and effective, and is based on “Helping people to help

themselves”. A crucial element is to inform, educate

and teach key life skills.

The course is supported by a series of CBT self-help

workbooks that can be used between the sessions.

They encourage the reader to put what they are

learning into practice, and to stop, think and reflect on

what is being learned.

The course is designed for groups of between 7 and

10 people and is split into 8 one and a half hour

sessions.

There is also a free to use website to compliment the

course at:

www.livinglifetothefull.com

The course is run locally at Ashfield House in Ossett

by Peter Barrett Dip.couns MBACP who has many

years experience of using CBT within a group

process.

A midsummer Wilde sceneWilliam Shakespeare famously claimed that “all the world’s

a stage”, and Wakefield Council is taking heed of the

playwright’s adage this summer with a series of outdoor

theatre productions at Woolley Hall.

As part of the Council’s Summer of Culture, Woolley Hall –

in association with Heartbreak Productions – will be raising

the curtain on the summer sun by hosting a trio of shows

in its picturesque Italian Gardens.

A bar and refreshments will be available for thirsty

theatregoers – and if you fancy a side order of picnic food

with your performance, you will be able to bring your own

goodies into the beautiful gardens.

Cllr David Dagger, cabinet member for culture, said: “The

Summer of Culture promises to be a fantastic way of

providing activities and events for people all across the

district, and these outdoor performances will be particularly

enjoyable in the upcoming warmer months. The shows will

be a great day out for everyone from families to youth

groups in the grounds one of Wakefield’s finest venues.”

Tickets for the shows are priced at £14 for adults and £7

for children in advance. For more information or to book

tickets, call Woolley Hall on 01226 392300 or email
