We've circled around and now the days are starting to get longer again! According to our winter gardening books, crops start going dormant leading up to the Winter Solstice on Dec. 21st, but after that, they will start growing again. And we can see that happening right before our eyes! The true spinach, which was practically non- existent in the hoophouse a month ago, is reemerging, albeit slowly. :) Still, it's exciting to see more and more green out there.     Sausage Potato Soup Recipe

    This is one of our family's favorites and we shared it with you at our December Share days. Wehave it often during the fall, winter, and spring months. It's so quick and easy to make, let itsimmer in your crock pot all day while you're out and about and you have a yummy soup to lookforward to when you get home.

    5 - 6 medium sized potatoes, cut into 1" cubes1 lb. pork sausage1 medium onion, chopping finely1 cup light cream or milk1/4 cup butter6 cups chicken stock1 1/2 Tbsp vanilla extract2 Tbsp. balsamic vinegarfreshly ground black pepper

    Bring chicken stock to a boil in a large pan. Add potatoes and onions. Cook until potatoes aretender. Meanwhile, brown sausage in a separate pan. Add the cooked sausage to the potatoesand stock. Add the cream/milk and butter to the mixture, stirring until the butter is melted. Addthe vanilla and balsamic vinegar right before serving.
