The information includes the ‘return’ of the Yard of the Month winner announcements, yard tips for building a ‘French trench,’ cat information, a notice from the Board of Directors, a Cinco de Mayo recipe, which happens to be May 5th – the day of the official pool opening and party, and a little bit more. There are some celebrations too. Thanks for submitting those for consideration in our newsletter. It looks as though 183A is coming right along, and looking pretty good too. I do not know about anyone else, but I am getting excited about having a direct link to Austin via 183A. At least we will not have a toll to pay once it opens – well, not until we get to 1431 that is. But I am sure it will be a nice road leading to bigger and better things. As a quick reminder, please be reminded about garbage cans. They should be put out no sooner than Thursday at 7PM, and should be put away Friday evening if possible. Some garbage cans are left by the curb for days, and it is not something we like to look at for days on end. Sometimes garbage is put on the curb after the garbage service has passed through the neighborhood. If this happens, just simply bring the garbage can back into the garage (out of sight) until the following Friday. It’s just common courtesy. Please abide by traffic laws – especially in our neighborhood. Be sure to stay at or under the posted speed limit of 30 mph, to stop at the stop signs, not to pass other vehicles that are going slower than you, and watch out for children that may ‘pop out’ from in-between the vehicles parked on the streets. There have been instances of local police giving out tickets and warnings to residents for whom have ‘broken’ certain traffic laws. So be careful out there! When you need to contact the HOA Board of Directors, be sure to contact Eddie Moreno first. His contact information is on our website and in this newsletter. He works for the HOA and is in constant contact with our Board Members (Harry, Eric, and Michelle). Any of the Board members can be contacted – please see the contact list located elsewhere in this newsletter. If you would like to add anything for our next newsletter, feel free to shoot me an email to [email protected] by the 8th of the month. Welcome to the May edition of “The Ridgewood Link.” We have a little bit of everything in this edition of the newsletter. The information includes the ‘return’ of the Yard of the Month winner announcements, yard tips for building a ‘French trench,’ cat information, a notice from the Board of Directors, a Cinco de Mayo recipe, which happens to be May 5th – the day of the official pool opening and party, and a little bit more. There are some celebrations too. Thanks for submitting those for consideration in our newsletter. It looks as though 183A is coming right along, and looking pretty good too. I do not know about anyone else, but I am getting excited about having a direct link to Austin via 183A. At least we will not have a toll to pay once it opens – well, not until we get to 1431 that is. But I am sure it will be a nice road leading to bigger and better things. Ahhh, Cats! Last month we spoke about rats. This month, it’s all about cats. The cats we speak of are not those of the house-hold variety. They are homeless cats, sometimes referred to as virile cats. These cats seem to be living and reproducing in the drainage areas of our neighborhood. They are living in the drainage tunnels which help support the flow of water from our streets to the retention ponds. If these animals are a problem, please contact the local animal control department.

It is created and maintained by the Newsletter / Website Committee under the guidance and directive of the Board of Directors. If you notice any links that do not work, have items to sale, or have suggestions for new links or content, please send them to: [email protected]. There is a links page that includes links to information concerning home value. There are also some great links for kids to reference. These links include links to Smokey The Bear, Scruffy, and other cartoon characters for the children to enjoy and the parents NOT to worry about. Our website is a great communication medium that is available 24/7, and you can always reference it for information on contacting the Board of Directors, our property manager, the committee’s, or even the police. We always have the latest news on our website. Information about upcoming meetings, parties, events, and other notices such as school closings, trash pickup information and changes, and reminders. It is a great compliment to the newsletter. Another service of the website is to provide the names and contact information for committee members, the board of directors, our property manager, and the advertisers in our newsletter. With the paid ad, the information is added to the website during the month for which the newsletter is representing.

Crime Watch / Social Committee: The Community Garage Sale occurred on April 1st. On May 5th a party is planned at the pool to celebrate the opening of it for the season. There is a DJ planned, along with some really good food to munch on. The Ridgewood LinkThe Secret Chef Presents: Cinco De Mayo Casserole

INGREDIENTS: 1 cup fat-free, less-sodium chicken broth 2 (4.5-ounce) cans chopped green chiles, divided 1-3/4 pounds skinned, boned chicken breasts 2 teaspoons olive oil 1 cup chopped onion 1 cup evaporated skim milk 1 cup (4 ounces) shredded Monterey Jack cheese 1/4 cup (2 ounces) tub-style light cream cheese 1 (10-ounce) can enchilada sauce 12 (6-inch) corn tortillas Cooking spray 1/2 cup (2 ounces) shredded reduced-fat extra-sharp cheddar cheese 1 ounce tortilla chips, crushed (about 6 chips) DIRECTIONS: Combine broth and 1 can of chilies in a large skillet; bring to a boil. Add chicken; reduce heat, and simmer 15 minutes or until chicken is done, turning chicken once. Remove chicken from cooking liquid,

reserving the cooking liquid; cool chicken. Shred meat with two forks, and set aside. Preheat oven to 350º. Heat oil in a large nonstick skillet over medium-high heat. Add 1 can of chiles and onion; saute 3 minutes or until soft. Add reserved cooking liquid, milk, Monterey Jack, cream cheese, and enchilada sauce; stir well. Stir in shredded chicken; cook 2 minutes. Remove from heat. Place 4 tortillas in the bottom of a 2-quart casserole coated with cooking spray. Spoon 2 cups chicken mixture over tortillas. Repeat layers twice, ending with chicken mixture. Sprinkle with cheddar cheese and chips. Bake at 350º for 30 minutes or until thoroughly heated. Let stand 10 minutes before serving. Note: Add more garlic or Chile peppers to spice it up more. All of my guests seem to like it without the extra peppers, but I like it extra spicy.
