Cooking in the CanyonWeekly Recipe

Parsley Hummusingredients:1 can (15 oz) Garbanzo Beans, rinsed and drained1/4 cup Water1 Tbs. Extra Virgin Olive Oil2 Tbs. Lemon Juice2 cloves Garlic, minced1/2 cup Parsley, fresh, chopped

directions:1. Combine all ingredients, except parsley, in a food processor or blender and process or blend until smooth.2. Pulse or stir in the parsley3. Serve with baked pita wedges

Baked Pita Wedgesingredients:8 Whole Wheat Pita Pockets (6”), separated and cut in wedges4 Tbs. Extra Virgin Olive Oil3 tsp Garlic Salt

directions:1. Pre-heat oven to 400°F2. Lightly brush pita wedges with olive oil3. Sprinkle with garlic salt4. Bake for 7-10 minutes

THEME WEEK: global news & awarenessGlobal Awareness is a conceptual understanding based upon knowledge of global and cultural perspectives. The understanding of these concepts include, but are not necessarily limited

to, environmental, social, cultural, political, and economic happenings.  This week is devoted to getting PCV residents to see a global perspective of current events and happenings.  

UPDATE ON

THE CRISIS IN HAITI

By making an effort to become aware of global issues like the earthquake in Haiti we have the opportunity not only to enrich our lives but the lives of individuals affected.

 

• The recent 7.0 magnitude earthquake hit just 10 miles west of the Haitian capital Porte-au-Prince.

• The major quake sent 33 aftershocks ranging in magnitude from 4.2 to 6.1• At this time an estimated 3 million people are in need of emergency aid.• Authorities fear the death toll may have killed between 100,000 and 200,000

people and displaced countless more.• In near by towns some 80-90% of buildings were destroyed by the earthquake.

Check with your CA to see how you can donate to help those in need during this tragic time.
