At press time, the field for this year’s Kentucky Derby was not yet solidified but a solid cast of characters was coming together. Most attention has been focused on trainer Bob Baffert’s duo: the 2014 juvenile champion American Pharoah (yes, spelled that way) and the super-sized Dortmund. Stop! Before you tell me that times are tough for the working stiff, and the cost of living is way too high; I agree, but going out to eat at a “sit down” restaurant isn’t (and never was) for the common man—except on special occasions—which as you’ll see, supports what I’m talking about here. As a publisher of several dining guides, and a marketing consultant for dozens of businesses, I’m constantly telling my clients that most of what they do to promote themselves is all wrong. Do they listen? I see businesses doing the same thing week after week, month after month, and year after year; and wondering why the new places in town always gets more patrons than they do. By the way, that’s the definition of insanity. The thing is, 9 times out of 10, you’ll note that the places that people are flocking to, don’t have the cheapest prices, or coupons in the paper, or advertise on billboards; they simply do things better. Things like service, consistency of taste, distinctive house specialties and a comfortable, appealing environ. All that and an ad in 157GUIDE. All the efforts that I see restaurants and bars putting into discounts and drink specials is an absolute waste of time. And, all of this madness of hoping to get the “student crowd” is like trying to catch the wind. First, students have fast food on campus, near campus and around town. They go to parties and get cases and kegs when they want to drink on the cheap. Basically, they (too), are looking for a good experience when they go out; and except for the bums, the price isn’t the primary motivation. This brings us back to the question why does anyone go out to a “fine dining” restaurant? And I believe I answered that question above (and you know the answer). To the visitors and parents reading this in a hotel or motel room, my advice for choosing a place to eat (and drink), is to look for the ones that have the least number of specials, and instead tell you what they have to offer.
