over the summer, some exciting and major components have been making tremendous progress, including our new swimming pools and the framework for the band shell. seeing these things develop really makes the renovations come to life. our new francis ford coppola winery sign is also in place, welcoming guests at the en-trance of the driveway.

certainly one of the most frequently asked questions we hear is, “when is the restaurant going to reopen?” we assure you, we’re working hard to reopen just as soon as we can. The project is mov-ing full-speed ahead and while we had planned on being in our new Tasting room and restaurant this fall, we are instead going to unveil the entire project at the same time.

over the next few months we’ll complete the installation of the slate and copper roof. we’ll begin preparing the grounds, and finish the interior details. we’ll set the gorgeous new fold-away doors in place and mount the windows. The elevator and two new staircases lead-ing to the second level will also be completed.

Throughout the first and second levels, francis’s movie memorabilia will be intermingled with cool, new retail merchandise. The movie memorabilia includes the Tucker car from the film “Tucker”, “The man and His Dream” and an “apocalypse now” installation featuring the bamboo tiger cage which imprisoned martin sheen, along with other props from the film. what else will you see? we don’t want to spoil all the surprises just yet, but there’s much more!

Before you know it we’ll be reopened in a wonderful new space, with expanded amenities and offerings, which means expanded member benefits for you, our first members! in the meantime, please visit us, enjoy your membership benefits, and get a first-hand look at the renovations in person!

francis ford coppola Presents…diamond Pavilion!

pavilion, the white blend counterpart to our popular claret, is reminiscent of a char-donnay and Viognier blend we used to make at rubicon estate. always well received, this wine was quite elegant and complex in nature. with this model for pavilion, our winemaking team went in search of prime chardonnay and Viognier vineyards for this blend.

as the partner to claret this new chardonnay-based wine shines in its gold netting, both inside and out. The chardonnay for this wine hails from the santa lucia High-lands. in addition to regular morning fog and afternoon breezes, the nighttime tempera-tures in this area can be as much as 30° lower than the daytime temperatures. This makes for a very slow, even ripening process, which leads to extremely concentrated fruit with good dimension. Barrel fermentation in french oak lends richness and a full-bodied quality to the wine. To add a unique character and intriguing notes of flowers and spices, we also blended in a touch of Viognier from russian river Valley.

our debut vintage of pavilion has the rich, creamy texture of chardonnay and the wonderful perfume, silky texture, and juicy tropical fruit flavors of Viognier. with ex-cellent body and beautifully aromatic fruit flavors of apricot, pears and passion fruits enveloped in spicy vanilla crème, it pairs perfectly with crab cakes, ginger chicken, or curried butternut squash soup.

(welcome spain)francis ford coppola presents…Diamond Tempranillo!Get ready for a fiesta with the newest addition to our Diamond collection. from its inception, the Diamond collection was designed to showcase pure, authentic vari-etal expressions from the best vineyard sites across california. our new Tempranillo, however, is a departure from this mission because the fruit was grown in the navarra region of spain, which is just north of rioja.

Tempranillo has long been considered spain’s noble varietal, creating a sturdy, robust wine with intriguing spice qualities. The navarra region, where this wine was grown, has limestone soils that accentuate this grape’s smoky mineral notes and luscious fruit flavors. our 2007 debut offers dazzling aromas of ripe berries, black plums and sweet cigar smoke as well as rich, ripe flavors of crushed raspberries, dark chocolate, and spices. with smooth tannins and an earthy edge, it pairs perfectly with lamb, beef, or spicy empanadas. fall into the sauceSpice up fall with a chimichurri sauce

A steak with chimichurri sauce is a great pairing for our Diamond Malbec or our new Diamond Tempranillo. The recipe for chimichurri sauce comes directly from Argentina as does our very own Chef Lidia of San Francisco’s Cafe Zoetrope. Chef Lidia says, “’the sauce’ is probably a little simple. But simple is always good, no?”

Here is Chef Lidia’s recipe for Chimichurri sauce. It’s perfect for any meat, espe-cially for a steak fresh off the grill.

Chimichurri Sauce 1/2 cup Italian parsley chopped

2 teaspoons Mammarella crushed pepper5 teaspoons dried oregano

1 teaspoon Spanish Pimento (smoked or sweet)Juice of 1 1/2 lemons

1/2 cup olive oil

Salt and pepper to taste

Will keep in the refrigerator for up to one week.

Our Chimichurri Sauce can be used as an accompaniment or as a marinade for beef, pork or poultry. We also love to use it on tuna, egg or potato salad. It’s great for dipping wraps, sandwiches and pizza. It tastes wonderful as a salad dressing, over steamed vegetables or drizzled over a baked potato. What will you use your chimichurri sauce for?

HARVEST UPDATESfrancis ford coppola winery

2009 harvest by Director of winemaking corey Beck

we’re finally under way with the much anticipated 2009 vintage. The first grapes across the scale were merlot from el Dorado county, which will be used as a blend-ing component for our claret. The growing conditions for the upcoming vintage have been ideal. i like to think of the different stages of the growing season as hurdles. The first major hurdle and maybe the most important is our spring frost and this year was very mild especially compared to 2008. in 2008 we had over 30 days of freezing temperatures compared to about 15 in 2009. This was great news on two fronts; first our growers got more sleep and second, we didn’t have to use as much water, thus saving it for the growing season when our days reach over 100f.

our next hurdle is what we call set or ‘berry set’, it’s when the little flowers become grapes. This can be a challenging time because there are many different factors that can affect berry set; wind, rain and heat being at the top of the list. i would say overall we experienced a really great set, meaning most flowers became berries, making us very happy. The next step in the growing season is working with our growers to ensure all the needs of the grapevine will be meet over the summer. most of this is canopy management, irrigation schedules, and crop thinning. right now our degree days are tracking very similar to 2005 so if that’s any indication we could have a spectacular vintage on our hands.
