z Michelle Konstantarakis, Registered Dietitian [email protected] Turkey Spinach Egg Muffins (by: Nguyen) Ingredients: 9 whole eggs OR 4 whole eggs + 10 egg whites 2/3 cup chopped deli sliced turkey, turkey bacon, or ground turkey ¼ cup chopped red onion 5 cups spinach 1 Roma tomato 1 tablespoon minced garlic salt and pepper for taste Directions 1. In a nonstick pan sauté onions and garlic until onions are translucent or 12 minutes. 2. Add spinach and cook until wilted down. 3. In a large bowl crack eggs and beat together. Then add chopped meat, salt, pepper, and mix well with a fork. 4. Spray pam olive oil onto nonstick muffin tray and scoop mixture into them about 2/3 full. Then add a small spoonful of the cooked spinach and onions in each cup. Top with a piece of sliced tomato. 5. Bake 375˚for 35 minutes

Turkey  Spinach  Egg  Muffins    (by:  Nguyen)  

   Ingredients:  • 9  whole  eggs  OR  4  whole  eggs  +  10  egg  whites  

• 2/3  cup  chopped  deli  sliced  turkey,  turkey  bacon,  or  ground  turkey    

• ¼  cup  chopped  red  onion  • 5  cups  spinach  • 1  Roma  tomato  • 1  tablespoon  minced  garlic  • salt  and  pepper  for  taste    

 Directions    

1. In  a  non-­‐stick  pan  sauté  onions  and  garlic  until  onions  are  translucent  or  1-­‐2  minutes.    

2. Add  spinach  and  cook  until  wilted  down.  3. In  a  large  bowl  crack  eggs  and  beat  together.  Then  add  chopped  meat,  salt,  pepper,  and  mix  well  with  a  fork.
