Do not open the oven door during this test. • After reaching the selected preheat temperature, allow the oven to cycle three more times. • During these three cycles, record the HIGH temperature and the LOW temperature of each cycle (a difference of up to 50⁰F/27⁰C between the HIGH and LOW temperature is normal). • When the 6 temperature readings have been recorded Add all 6 numbers together Divide the total of all 6 readings by 6 Your result is the average temperature of the oven • If the average oven temperature is more than +/- 30⁰F/16⁰C of the set temperature (350⁰/177⁰) follow the Temperature Calibration procedure located in the Use and Care Guide or Tech Sheet to adjust the average oven temperature up or down closer to the desired 350⁰F/177⁰C. Another good way to test the oven temperature is to buy a basic muffin mix and follow the directions exactly, cooking for the exact time recommended. If the muffins are overcooked (dry) or undercooked (raw), the oven temperature might be out of range.

A “weighted” thermocouple (adding mass to the tip) reduces the amount of temperature swing which, when calculated, more accurately represents the average oven temperature.

To Weight the Thermocouple: • Use a 5” x 8” piece of aluminum foil. • Fold the foil five (5) times, doubling the thickness with each fold. • Place the thermocouple tip in the center o the aluminum foil and fold once more. • Fold the sides so that the foil clings to the thermocouple tip.

There may be times that the pans being used, rather than the temperature, could provide different cooking results. The cookies shown below are from the same recipe and baked at the same temperature and time. Typically, the darker the cooking surface the darker the cookie bottoms.
