Grilled Corn Cakes (Arepas) with Cheese

Ingredients• 1-1/4 cups white cornmeal• 3-1/2 ounces costeño cheese (a salty, hard cheese)

• 1/2 teaspoon ground anise• 1 cup hot water• 1 teaspoon butter

1. Place the cornmeal in a bowl.2. Shred the cheese. Mix the cheese and anise with the cornmeal.3. Add the hot water and mix

until combined.4. Let rest for 10 minutes,

then knead the dough for several minutes.

5. Form the corn cakes into circles about 5" wide and 1/2" thick.

6. Place the butter in a pan and cook the corn cakes until slightly browned on both sides.

Vegetarian Egg Fried RicePortions: 6 Serving size: 1 cup

Ingredients• 2 garlic cloves• 1 tablespoon fresh ginger root• 1 cup fresh carrots• 1 cup yellow onion• 1 cup extra firm tofu• 1/2 cup cilantro• 1/2 cup green onions

• 6 large eggs• 3 tablespoons canola oil• 1/2 cup green peas• 1/4 teaspoon dry mustard• 4 cups rice, cooked• 1 tablespoon reduced-sodium soy sauce

1. Mince the garlic and ginger root. Slice the carrots. Dice the yellow onion and tofu. Chop the cilantro and green onions. 2. Beat the eggs, then sauté them in a skillet like an omelet. Chop the cooked eggs into pieces and set aside.3. Heat the oil in skillet over moderate heat. Stir in the garlic, ginger, carrots, yellow onion, tofu, peas and dry mustard.

4. When the carrots are softened, add the rice, chopped eggs and soy sauce. Mix, and turn off heat.5. Stir in the cilantro and

green onions.

Armando’s Chiles Rellenos Portions: 2 Serving size: 1 stuffed chili pepper

Recipe submitted by DaVita dietitian Christie from Nevada.

Ingredients• 1 tablespoon carrot• 1 teaspoon onion• 4 ounces cream cheese• 1/4 cup fresh sliced mushrooms

• 2 California green chili peppers• 1 egg white• 1 teaspoon all-purpose flour• 1 cup canola oil

1. Mince the carrot and onion.2. In a bowl, combine the cream

cheese with the mushrooms, carrot and onion to make the filling. Set aside in the refrigerator until the chili peppers are prepared.

3. Heat a frying pan on medium heat. Place the peppers in the pan and roast, turning several times, until the skin bubbles. Remove from heat.  When the peppers are cool enough to handle, peel off the skin.

4. Cut the chili peppers open lengthwise, remove the seeds and gently spoon half the cream cheese stuffing inside each pepper.5. In a separate bowl, beat the

egg white and flour until stiff. Coat each stuffed chili pepper with the egg mixture.

6. Place the canola oil in a saucepan, enough to fill the pan approximately one inch. Heat on medium-high heat.7. Carefully place the chili

peppers in the hot oil and fry until golden brown, turning once. Serve hot.

Singapore Rice NoodlesRecipe submitted by DaVita dietitian Michele from New Jersey.

Portions: 6 Serving size: 1/6 of recipe, approximately 1-1/2 cups

Ingredients• 8 ounces thin rice noodles• 1 cup snow peas• 2 medium carrots• 4 scallions• 1 bunch cilantro• 14 ounces low-sodium chicken broth

• 1 tablespoon reduced-sodium soy sauce• 1/2 teaspoon curry powder• 1/2 teaspoon garlic powder• 1 tablespoon canola oil• 2 large eggs

1. Prepare the rice noodles according to the package directions and drain. Set aside in a bowl.2. Slice the snow peas thin on

the bias. Slice the carrots into thin matchsticks. Thinly slice the white bulb of the scallions. Finely chop the cilantro.

3. In another bowl, mix together the chicken broth, soy sauce, curry powder, garlic powder and oil; set aside.

4. Heat the broth mixture in a non-stick frying pan. Cover and cook on high until it's boiling, then lower to medium heat. Add the snow peas and carrots, and cook until the snow peas turn bright green and the carrots have softened. Turn off the heat. Add half the cilantro and cooked rice noodles, and mix together. Cover.

5. Spray another frying pan with non-stick cooking spray and place over medium heat.  In a small bowl, mix the eggs with a fork vigorously until well combined. When the pan is hot, add the eggs, stirring as they cook. When completely cooked through, chop the eggs into small pieces with a fork.

6. Add the chopped eggs to the rice noodle and vegetable mixture, and mix together. Serve in individual bowls. Add the chopped scallions and remaining cilantro on top as a garnish.

Tabbouleh Salad Portions: 8 Serving size: 3/4 cup

Ingredients• 1/2 cup dry bulgur• 1 medium tomato• 1 bunch green onions• 1 large cucumber, peeled• 2 bunches parsley

• 1/2 bunch mint• 3 lemons• 1/2 cup olive oil• 1/2 teaspoon salt• 1/2 teaspoon black pepper

1. Wash the bulgur. Drain and place it in a large bowl. Pour 1/2 cup of boiling water over the bulgur, cover the bowl and let it sit for 30 minutes. Drain any excess liquid.2. Dice the tomato; chop

the green onions, peeled cucumber, parsley and mint.

3. Add the vegetables to the bulgur and mix well.

4. Juice the lemons. Add the olive oil, lemon juice, salt and pepper to the bulgur mixture.

5. Let the salad set at room temperature for about an hour to absorb the lemon juice and olive oil before serving. Refrigerate leftovers and serve during the week.

Ingredients

Preparation1. Peel and chop the tomato. Mince the onion, garlic and ginger root. Remove the skin from the chicken and discard.2. In a large, wide pot, heat

the oil over a medium-high flame. When hot, add the cumin seeds, cinnamon stick, bay leaves and peppercorns. Stir once.

3. Add the onion, garlic and ginger. Stir this mixture until the onion picks up brown specks.

4. Add the tomato, chicken, salt, cayenne pepper and 1/4 cup water. Stir to mix and bring to a boil.

5. Cover the pot tightly, turn the heat to low and simmer for 25 minutes or until the chicken is tender. Stir a few times during the cooking period.

6. Remove the cover and turn up the heat to medium. Sprinkle in the garam masala and cook, stirring gently for about 5 minutes to reduce the liquid.

Ingredients• 2 cups white rice, uncooked• 1 cup green bell pepper• 1-1/4 cups zucchini• 1/2 cup onion• 2 cups asparagus

• 3 cups broccoli florets• 1 tablespoon olive oil• 1/2 teaspoon salt• 1/2 teaspoon saffron

1. Prepare the white rice according to the instructions. Chop the bell pepper, zucchini and onion. Slice the asparagus into 1" pieces. 2. Fill a 2-quart saucepan with enough water to cover the asparagus and broccoli. Boil the water and cook the asparagus and broccoli for about 4 minutes or until crisp-tender; drain.

3. In a 10" skillet, heat the oil over medium-heat. Add the asparagus, broccoli, bell pepper, zucchini and onion, and cook for about 5 minutes, stirring occasionally until the onion is crisp-tender.4. Stir in the rice, salt and saffron.

Cook for about 5 minutes, stirring frequently, until hot.

Green Asparagus with Eggs

1. Scrape the asparagus, then wash and cut each stalk into small pieces. Bring a pan of water to a boil and cook for 5 minutes. Discard the water, and then add fresh water and heat to a boil again. Drain the asparagus. (Double-boiling helps reduce the potassium in the asparagus.)

2. Peel and chop the onion and garlic. Sauté in the pan with butter. When the onion is translucent, add the asparagus and season with pepper. Sauté, stirring gently.

3. Beat the eggs with vinegar and add to the vegetables. Cook over medium heat, stirring constantly.

4. Pour the mixture into a serving dish.

Bavarian Apple TartPortions: 10 Serving size: 1 slice

Recipe submitted by DaVita dietitian Gertrude from Colorado.

Ingredients• 8 ounces cream cheese• 4 medium apples• 1/2 cup butter• 1 cup granulated sugar• 3/4 teaspoon vanilla extract

• 1 cup all-purpose white flour• 1 large egg• 1/2 teaspoon cinnamon• 1/4 cup slivered almonds

1. Preheat the oven to 450° Fahrenheit. Set the cream cheese out to soften. Peel, core and slice the apples.

2. Cream together the butter, 1/3 cup sugar and 1/4 teaspoon vanilla.

3. Fold in the flour to make a dough. Spread the dough on the bottom and sides of a 9" spring-form pan.

4. In a medium bowl, combine the softened cream cheese and 1/3 cup of sugar; mix well.

5. Add the egg and 1/2 teaspoon vanilla; mix until blended. Pour the mixture into the pastry-lined pan.

6. Combine 1/3 cup sugar and cinnamon; toss with apples until all are coated.

7. Spoon the apple mixture over the cream cheese layer. Sprinkle with almonds.

8. Bake for 10 minutes. Reduce the heat to 400° Fahrenheit and continue baking for 25 minutes. Remove from the oven to cool.
