Diabetic

Dietary Guidelines from the American Diabetes Association

The Exchange Lists are the basis of a meal planning system designed by a committee of the American Diabetes Association and the

American Dietetic Association. While designed primarily for people with diabetes and others who must follow special diets, the Exchange

Lists are based on principles of good nutrition that apply to everyone.

A Registered Dietitian can help a person with diabetes determine the amount of carbohydrate that should be eaten per day and at each

meal and snack. For consistent blood glucose levels, the amount of carbohydrate eaten should be spread throughout the day to allow for a

more even release of glucose into the blood from meal to meal and from day to day. The total number of meals and snacks and their

timing throughout the day can differ for each person depending on nutritional needs, lifestyle, and medications.

According to recent research, the amount of carbohydrate in a meal is more important than the type of carbohydrate. Foods high in

carbohydrates include grains such as rice, pasta, breads, cereals, and similar foods; white and sweet potatoes; fruits and juices; vegetables;

milk and milk products; and anything made with added sugars, such as sweetened beverages, candies, cookies and other desserts.

In addition to the Exchange Lists, many diabetics now use carbohydrate counting. By knowing the carbohydrate goal (the number of

grams of carbohydrate to eat) for each meal and snack, choices can be made by counting the total number of carbohydrates in the meal.

Each Starch, Fruit, and Milk exchange serving contains roughly 15 grams of carbohydrate and each Vegetable exchange serving contains

roughly 5 grams of carbohydrate. Fat and protein content of foods should also be monitored for overall good health.

General Guidelines

• Know the number of exchanges or carbohydrates you have available for the meal.

• Request a take-home container at the beginning of the meal. Take home the additional food beyond the servings you can eat at

your meal.

• Use the specific information provided for each item to determine the amount of each item you can eat.

• 2% milk is available.

High Protein/Low Carbohydrate Diet

Diet Guidelines

Eat liberally of combinations of protein and fat in the form of poultry, fish, shellfish, eggs and red meat, as well as pure, natural fat in the

form of butter, mayonnaise, Olive Oil, safflower, sunflower and other vegetable oils (preferably expeller-pressed or cold-pressed).

Carbohydrates are limited to 20 – 50 grams per day depending on the High Protein/Low Carbohydrate diet or phase of dieting you

are following.

General Recommendations

• Meat, poultry, fish and seafood items can be enjoyed.

• Salad greens, steamed broccoli, cheese, lettuce, tomato, onion and pickles can be ordered based on your available carbohydrates

Heart Healthy Diet

Dietary Guidelines from the American Heart Association

The eating plan from the American Heart Association is based on the latest advice of medical and nutrition experts. The best way to help

lower your blood cholesterol level is to eat less saturated fat and cholesterol, control your weight and walk or do another physical activity

for at least 30 minutes each day. The plan is based on these dietary guidelines:

• Total calories should be adjusted to reach and maintain a healthy weight.

• Saturated fat intake should be 7 to 10 percent of calories (or even less).

• Polyunsaturated fat intake should be up to 10 percent of calories.

• Monounsaturated fat can make up to 15 percent of total calories.

• Total fat intake should be adjusted to caloric needs. Overweight individuals should consume no more than 30 percent of

total calories from fat.

• Cholesterol intake should be less than 300 milligrams per day.

• Sodium intake should be less than 2,400 milligrams per day, which is about 1 teaspoon of sodium chloride (salt).

In addition, the American Heart Association makes the following recommendations related to Meat, Poultry and Fish:

Servings per Day

Eat no more than 6 oz. (cooked) of lean meat, poultry and fish.

Try to eat 1-2 servings of baked or grilled fish each week.

Serving size

3 oz. cooked (4 oz. raw) lean meat, poultry or fish

Choose from:

Fish and shellfish – Shrimp and crayfish are higher in cholesterol than most other types of fish, but lower in fat and saturated

fat than most meats and poultry so can be included in your diet plan.

Poultry – This can include chicken, Cornish hen and turkey (without skin), as well as ground turkey.

Lean beef – Use cuts from the round, chuck, sirloin and loin. Buy “choice” cuts or “select” grades of beef rather than “prime.” Choose

lean or extra lean ground beef (no more than 15% fat).

Lean ham, lean pork – Use tenderloin and loin chop. Avoid ham and Canadian bacon, which are higher in sodium than other meats.

Lean lamb – Use leg, arm and loin.
