FOOD SECURITY.FOOD UTILIZATION- THORN MELON.

Food security is a condition related to the supply of food and individuals' access to it. Food utilization is the various forms in which a particular food can be consumed.The thorn melon was initially used as a source of water in the Kalahari desert. Most consumers have resented it due to the bitter taste of its pulp. The seeds and pulp are great spooned over ice cream, desserts, salad dressing and yogurt. The fruit has many nutritional values and gastronomical uses. Primary source of vitamin C, K and Fe. Yellowish-green colored pigment in seeds and pulp contain vitamin A. Additional minerals that are less abundant include Mg, P, Ca and Na, vitamin E. Seeds contain a number of fatty acids. Research by WHO identified the thorny melon as highly nutritious which could provide necessary nutrients and micro-nutrients to combat deficiencies and other regions of developing world.mNew processed products of the fruits are deficient in the market thus need the to create them to accompany other foods.
