West Indian Roti (Vegan) Do you love West Indian roti, and would you like to recreate this classic south Caribbean dish at home? Barbados-born bestselling cookbook author and food scientist Taymer Mason will guide you through the steps to making the perfect Dhal Puri Roti, which is a base to all of the classic fixings like Curried Potato, Island Styled Sautéed Spinach, and Curried Chickpeas and Pumpkin. If that’s not enough, learn how to make Caribbean-Style Apple Tamarind Chutney to accompany this epic meal. (This class is partially interactive; each person will make his or her own roti.) $30

Learn to Make Pasta (Interactive) As a sequel to last spring’s popular class “Learn to make Pasta,” this class led by Chef Heather Johnson will teach you how to make more pasta at home for friends and family. Prepare to get your hands dirty as you will learn to make a
beautiful semolina pasta dough, which will become a Beet and Goat Cheese Ravioli served with a light sage cream sauce. Then we will switch gears and make Sweet Potato Gnocchi with traditional Bolognese sauce. Buon Appetito! $35

Fifty Shades of Chocolate Chocolate is about to get heated. Who says you can’t start your evening with something decadent, after discovering the many pleasures of chocolate. Tonight, Chef/Culinary Instructor John Bela will tempt your wild side by creating savoury and sweet chocolate recipes to satisfy your insatiable appetite for all things chocolate, just in time to start a perfect romantic evening with that someone special. Sit back and enjoy the ride as tonight’s exotic menu features Harissa-Spiced Tomato and Dark Chocolate Soup, Baby Spinach and Caramelized Pear Salad with a Milk Chocolate-Balsamic Dressing, and Toasted Almonds and Dark Chocolate Covered Cranberries. The Louisiana Kitchen Tonight we head back to the kitchens of New Orleans where Chef Jim Comishen continues his never-ending journey to bring classic Southern cooking to the kitchens of Canada. We start with a rich and creamy Snow Crab and Corn Chowder finished with heavy cream and chives. Next it’s the classic Sausage, Blackened Shrimp, Red Beans and Rice as a great main. Come and join Fifty Shades of Chocolate creator Chef/Culinary Instructor John Bela for the second chapter of his chocolate trilogy, as chocolate is about to get heated again! This evening, Chef John’s objective is to demonstrate the versatility of dark chocolate as a culinary ingredient that provides a wonderfully rich depth of flavour. Your savoury journey will begin with a Dark Chocolate and Exotic Mushroom Mille-feuille (layered puff pastry), and continue with Chef John’s signature temptation Mussels. Let’s Make A Cake Ever wondered how to make those amazing creations that you see in bakeries and online? If so, this is the class for you. Join Wilton-trained Chef Lois Alexander as we decorate a cake from start to finish. Cake is the go-to for occasions such as wedding and baby showers, birthdays and potlucks, and that last-minute celebration. Learn about different fillings and how to make Swiss meringue buttercream. You will be shown the importance of crumb coating a cake and the proper way to torte and stack. There will be tea and coffee, plenty of cake tasting, handouts, a question and answer period, and door prizes. Come see why Chef Lois’s motto is “The more you weigh, the harder you are to kidnap. The afternoon tea menu includes Classic Crème Brûlée, freshly made Petit French Baguettes stuffed with Jambon and Gruyère, Tantalizing Savoury Tomato Confiture, Tarte au Citron and Chocolate-Orange Truffle Tartlets. Start with a Salad of Roasted Asparagus Wrapped in Prosciutto with cocktail tomatoes, olives, buffalo mozzarella, roasted yellow peppers, garlic crostini and balsamic glaze. Next it’s a classic and rich Napa Valley Syrah Risotto with crisp pancetta and asiago cheese. Our main is wine-poached Chicken Stew with creamy supreme sauce on a crisp puff pastry shell, finished with fresh herbs. All that’s left is the spa treatments to end this wonderful experience. $35
