The Tolpuddle Vineyard was planted in 1988 and since then has enjoyed almost continuous recognition and priase. Since 2011, owners Michael Hill-Smith MW and Martin Shaw (of Shaw + Smith fame) continue the legacy and greatness of just 20 hecatres in the Coal River Valley, 20 minutes from Hobart, Tasmania. Chardonnay and seafood are old friends, there is no question there; bottle age and prestige are perhaps even more so. Sit back and enjoy a retrospective flight flaunting the efforts of expert vineyard management, careful winemaking and some of the world’s finest cool climate Chardonnay.

SAKE

Sake is a Japanese style of rice wine. The process of production is incredibly complex compared to that of other alcoholic beverages. It is a masterfully created blend of certain types of rice, grown different ways, mould with different properties and water with certain characteristics. This is all fermented together to create an end product that can behave like wine; some styles are meant to be drunk whilst young, fresh and zippy, whereas some styles are made to age gracefully, revealing layers of texture and depth. Sake is a traditional drink in Japanese culture and has roots dating back to the 3rd century BC. It is no wonder that the worlds inspiration for fresh and raw seafood cuts choose to drink such charismatic and satisfying ferments as these.

MARCO DE JEREZ AND THE GRAPE PALOMINO

Marco de Jerez is a gorgeous region of rolling hills inland from the atlantic coast and north from the bay of Cadiz. Of the nine wine-making villages of the region, it’s centered on, and is named for the main town, Jerez de la Frontera. The most famous local wine, ‘sherry’ also takes its name from Jerez. In most places you can see the atlantic; you can feel it everywhere. Cool, moist, mythical. The lands glisten and twinkle when the sun catches the dazzling chalky soil.

Palomino is one of the white grapes native to Marco de Jerez, and nowadays by far its dominant cultivar. In the wine styles of Jerez, potentially acid-shy Palomino gets plenty of help in filling the hole where acidity should go. In the great vineyards, with quality viticultural values, Palomino naturally gains structural mouthfeel from the textured, earthy but fresh and highly sensual chalk soils. And then, winemaking adds on complex overlays from the region’s techniques of ageing in conjunction with moderated oxidative ingress. Air, time and the interplay of flor yeast give secondary compounds.

2018 Callejuela ‘Blanco de Hornillos’ A Palomino aged without flor. Delicate herbal tea. The palate is floral-flavour equivalent of marmalade, without any viscous sweetness, finishing lean and dry. Soft, gentle, mineral, and clean.

We were eager to source a wine of this provenance and when Stuart Angas, winemaker and seventh generation custodian of the property, offered us the remaining 80 bottles in South Australia we immediately jumped at the opportunity. Lemon and lime come to the front with generous support from a shining acidity and a chalky mineral texture. Balanced to the max, this can be mistaken for off dry, but don’t be fooled - a true rollercoaster of flavour and emotion.

CHENIN BLANC

Anyone who has a habit of taking comfort in the expected should be familiar with Chenin Blanc. Drinking Chenin is a trait shown in those with a discerning palate, mostly due to the highest common denominator of worldwide examples: fresh and lingering acidity. Fresh cut green and yellow apples give backbone in cooler years with textural notes of beeswax and a crunchy figs. Warmer years give way to a depth and richness unmatched in ginger, lashings of lemon custard and chamomile. With wines crafted to show the best of regionality, this will, time after time, vintage after vintage provide comfort when needed, both with food, and without.

DOMAINE MARC BREDIF

Established in 1893, this domaine is synonymous with the production of Chenin Blanc in Vouvray (Loire Valley). Located in central Touraine on the banks of the River Loire, Marc made name for himself when he took over production from his uncle in 1919. Ethereal, silky, elegant and age worthy, some of the best of his wines drink for well over 50 years in the bottle. Using three levels of classification, the quality and ability for ageing growing exponentially with each, Bredif stands true as a champion of his region and a master of the nuances of Chenin Blanc.

WHITE BURGUNDY

Situated in east-central France, Burgundy is synonymous with prestige, intensity and a refined sense of terroir. Dominated by limestone soils, Bourgogne (the French spelling) produces some of the finest Chardonnays in the world, and by extension, some of the most sought after. Diversity is key here, with individual areas (known as communes) producing a vast array of flavour, texture and age-worthy wines. From the zippy, light and unoaked styles of Chablis in the north, to the power and precision of the Montrachets, and further south to the Macon, where oak regimes give butterballs and weight, Bourgogne wines are a slow but steady addiction. This is a red wine offering based on, yes, our seasonal menu, but also, much more than that. It is an exploration and celebration of some of the world’s best, some of the world’s most unique and some of the world’s unsung beauties. As the provenance of our fresh seafood is of the utmost importance insofar as understanding flavours, seasonal availability and decadence, as is the story behind our wine selections. Drawing from Tony Carroll’s menu, a menu rooted in cuisine from the globe, we are proud to offer the same philosophy with your beverage experience.

From the cooler Adelaide Hills, our closest local region, through to the mediterranean McLaren Vale and Blewitt Springs down south then north to the Barossa and Eden Valleys, local legends and young blood are championed here. International entries from all the colours of the red varietals rainbow make their mark from the crisp, acid driven reds of Etna through to the grandeur and prestige of Burgundy and Barolo. Varietals of the Iberian Peninsula are reflected both in true representations (Rioja) as well as our own (McLaren Vale, Barossa Valley).

Perhaps the most exciting thing here are the reds that pair so well with seafood dishes. If tradition can convince you, then don’t worry, a large portion of the world has been doing it for centuries. Dessert wines always present an issue when dining out. Unless you’re weak of will, like us, then it is simply impossible to drink everything you want over the course of a meal.
