Pavan is crafted with fine Muscat grapes from the renowned AOC (Appellation d’Origine Contrôlée) region of Frontignan, where vineyards are surrounded by seaside air and gentle hills.

Long exposure to the sun and proximity to the sea provide the perfect conditions for the Muscat vines to thrive, producing small berries that are naturally sweet and rich in aromas.

The Muscat grapes are hand picked, pressed and blended with fine grape-based spirits. This “vin de liqueur” is then aged two to three years in oak casks dating back to the 19th century, allowing the blend to mature slowly while retaining the original aromas of the grape.

Finally, the Muscat “vin de liqueur” is blended with a touch of fine orange blossoms. This infusion gives Pavan its aromatic citrus notes and characteristic freshness.

A perfect base for an elevated Sangria and in simple, refreshing cocktails, Pavan celebrates the colors and flavors of the Mediterranean.

When Master Blender Pascal riBes created Pavan, he envisioned its ideal enjoyment simply with ice, sparkling water, and fresh fruits - the perfect elevated Sangria! The simplicity of Pavan allows for many variations to this signature Sangria! The simplicity of Pavan allows for many variations to this signature recipe. Karma Tequila is produced from 100% blue agave grown in The highlands of Jalisco, a region referred to as the Napa Valley of Mexico and recognized for having the richest volcanic soil and ideal climate. Each agave is hand picked and tested ensuring that only the ripest agave is used. Authentic brick ovens slowly cook the agave allowing all the flavors to be captured in every sip. Karma’s distillery is family owned and operated utilizing traditional distilling methods that have been passed down from generation to generation for over 70 years. Karma 100% agave tequila is handmade in small batches through a multiple distillation process ensuring a complete balance in taste and smoothness.

CAMPFIRE

High West Campfire is the world’s only three-whiskey blend utilizing a unique international whiskey known for its smoky quality, scotch! Bourbon, rye, and peated scotch combine in one bottle for one of the world’s most unique whiskey combinations. The faint smoke qualities of the scotch are backed by the sweetness of the Bourbon and spicy kick of the rye to make one complex sipper.

Utah’s first distillery since the 1870s, High West Distillery and Saloon offers a truly unique experience as the world’s only ski-in distillery and gastro-saloon. They are located at exactly 7,000 feet in the Wasatch Range of the Rocky Mountains in Old Town Park City, Utah.

Founded by prospectors in the late 1860s, Park City became one of the richest silver mining towns in the West, and the best watering hole in Utah. Their aim is for the High West Distillery and Saloon to contribute to that reputation. They invite you to share in their passion for great spirits, and their love for the American West.

RENDEZVOUS RYE The high wesT flagship whisKey

Rendezvous Rye celebrates the first recorded whiskeyfest out West … in Utah. The “rendezvous” was the annual summer gathering of mountain men to exchange pelts for supplies. Alcohol was not one of the “supplies” at the first rendezvous. This oversight was corrected with a generous supply of whiskey at the second rendezvous in Utah’s Cache Valley.

Rendezvous Rye is a blend of two exotic straight rye whiskies - one old, and one young. It marries the rich aromatic qualities of a 16-year-old rye with the bold spicy properties of 6-year-old rye to create a full flavored, very complex whiskey. The 6-year-old boasts an uncommonly high 95% rye mashbill. Almost every other straight rye whiskey you can buy today is barely legal, with 51-53% rye in the mashbill.

Proprietor and distiller David Perkins married his background as a biochemist, his love of bourbon and cooking, and his passion for the American West to bring the craft of small-batch distilling back to Utah, of all places.

The High West Barreled Manhattan is made from two parts of High West’s Double Rye Whiskey, one part sweet red vermouth, and two dashes of Angostura bitters for every 2.5 ounce serving. It is then aged in a 2-year-old rye whiskey barrel for 120 days allowing the flavors to integrate in a well-balanced harmony of the rye’s spiciness, the vermouth’s herbal qualities, and the bitters’ aromatic complexity. The cocktail is bottled without dilution, therefore stirring with ice is recommended, just like making a Manhattan from scratch.

american prairie reserve bourbon

Named for the preservation initiative in northeastern Montana, The American Prairie Reserve is an effort to assemble the largest wildlife reserve in North America, totaling roughly 5,000 square miles. The idea is to return this area back to the conditions at the time of Lewis and Clark. Partial proceeds from the sale of each bottle of this bourbon goes toward funding this effort and keeping the extraordinary Wild West alive. American Prairie Reserve is a blend of two straight Bourbons, one 6 years old, the other 10 years old.

son of bourye

Son of Bourye is a blend of straight bourbon and rye whiskies and a decendant of the original “first of its kind” whiskey blend, Bourye. This unique whiskey is blended of finished bourbon that could be bottled as such and finished rye that could be bottled and labeled as such and put into one bottle. The Bourbon mashbill is 75% corn, 20% rye, 5% barley malt and is a minimum of 5 years old. The rye’s mashbill is 95% rye and 5% barley malt and is a minimum of 5 years old.

double rye

A blend of two straight rye whiskies that combine the feisty properties of a high rye 2-year-old and the saddle-smooth richness of a 16-year-old. The 2-year-old has a 95% rye, 5% barley malt mashbill. The older rye has a “barely legal” rye mashbill of 53% rye and 37% corn. The extra age and corn provides some extra sweetness to calm the “bite” of the younger rye for a relationship that works very well when used in classic cocktails like the Manahattan and Sazerac. And High West Double Rye is priced accordingly to ring in at a per oz. cost suitable for a cocktail lucky enough to be made with it.

If all that distinguished Mount Even Vineyards were the almost three decades of phenomal, award-winning wines of owner and winemaker Jeffrey Patterson, these would be quite the distinction. If the only claim to fame this historic property could muster was that their Estate Chardonnay - widely considered to be one of the best (and longest-lived) white wines made in California - made Wine Spectator’s Top 100 list in the 2004, 2006, and 2008 vintages, that would be impressive in itself. If it was just the Estate Pinot Noir that was consistently rated as being one of the top Pinot Noirs made in Northern California, praised by critics as diverse as Robert Parker and Burghound’s Allen Meadows, that would be reason enough for excitement. And any winery would be overjoyed at the prospect of Wine Spectator’s Matt Kramer saying of their estate, “if I were to present a European, say, the wines of just one California winery to demonstrate the originality of California wine, I’d choose Mount Eden Vineyards.”

But the importance and history of Mount Eden Vineyards goes beyond even these lofty successes. Perched high up in the Santa Cruz Mountains, 2000 feet above the town of Saratoga, the estate dates back to the 1880’s, and the estate vineyards of Pinot Noir and Chardonnay were first planted here in 1945 by California winemaking pioneer Martin Ray (Cabernet Sauvignon was added to the estate’s plantings in the 1950’s.) In fact, the lineage of estate-bottled Pinot Noir and Chardonnay here is the longest of any winery in California!

Over the last several years Mount Eden has developed a second label, Domaine Eden. Located on a neighboring mountaintop, Domaine Eden focuses on the same varietals as Mount Eden Vineyards – Pinot Noir, Chardonnay, and Cabernet Sauvignon. Planted to a variety of vineyard clones, the vineyards here are well cared for and the wines are made with the same care and thoughtfulness found at Mount Eden. The style of these wines tends to be more immediate. That is, the wines are ready to drink younger and reveal the beautiful and complex character of their Santa Cruz Mountain terroir.

The estate wines of Chardonnay, Pinot Noir, and Cabernet Sauvignon are all phenomenal examples of the balance between the expressive and ripe nature of the New World and the

elegance and age-worthiness of the Old World. These wines are both drinkable and collectible, and have rightfully earned a passionate following over many years.

Txomin ETxaniz: Getaria spain

in norThern spain, where the wild, windy and chilly coastline of Basque country meets the Atlantic’s Bay of Biscay is where you will find the Txomin (pronounced “Cho-min”) Etxaniz winery in Getaria. Established in 1930, they are considered to be the best producer in Getaria. 90% of their production is the delicious wine Txakoli (pronounced Cha-ko-li) and is made from this region’s indigenous grape, Hondarribi Zuri. Now that’s a mouthful! Until the 1980’s, this wine was usually home-made and consumed locally in the Basque region. Txacoli was in danger of dying out until the DO certification came in 1989 which enhanced quality, leading to both increased appeal and widespread audience. When served, Txacoli is traditionally poured into tall glasses from a height. This slightly sparkling, delicious white wine has fresh acidity and crisp, lip-smacking green fruit that will quench your thirst, just the wine to pair with fresh seafood. Txomin’s 12 hectares of vineyards are planted in sandy soils over a mixture of clay, marl and limestone. The maritime climate here provides plenty of rainfall. In fact, in this coastal region of Getaria, many vineyards are planted on steep slopes to get rid of excess rain water.

THE WHAT THE HECK IS THAT? SPOTLIGHTWhere the weird stuff gets explained!

The recipe originaTed with seventh-generation Piedmont vintner Giovanni Bosca of Cannelli d’Asti, who infused Moscato wine over 100 years ago with cardoon and blessed thistle (relatives of the artichoke family), then aged it in new oak for six months to add spice and texture. All this yields a softer product than most bitter amari, with intriguing nutty, sherried and spiced flavors. Cardamaro could be treated as an aperitivo or as a digestivo due to its subtle sweetness, but works well paired with food, most notably, salty cheeses and cured meats, even those that have been lightly smoked. Cardamaro is also excellent with cider and shines in place of vermouth in cocktails, like the Manhattan. Hey, WINE ONLY licenses! Cardamaro is the only amaro you can legally carry. So, make a Mockhattan by combining 2 parts Cardamaro with one part Dolin Rouge and a few dashes of bitters. Garnish with a nice twist of orange peel. This interpretation works because the oak aging helps Cardamaro mimic that of a whiskey. Try this great low potency tipple and enjoy!

as The only wine-based amaro in The u.s. marKeT, Cardamaro leads one to wonder whether to call it a wine or a spirit. The real answer would be a wine, something rare amongst amari which are often based on distillate in order to aid in extracting qualities from the flavorings. Seeing as Cardamaro uses wine as a base, it remains restrained and balanced as opposed to bracing, syrupy and bitter.

oui! ThaT’s righT, an aoc ouTside france. Well, on French soil, soil that is floating in the Caribbean!! Martinique to be exact. It’s called Rhum Agricole, a regionally specific sugarcane growing area for rum production and the purest expression of rum on earth. An AOC—Appellation d’Origine Contrôlée, or “controlled designation of origin”—is the certified geographic designation and regulation given by the French government for that nation’s cheeses, wines, spirits and other agricultural products. The island of Martinique is home to the only AOC outside the mother country, and it is the sole unique appellation for rum in the entire world. In other words, the rhums of Martinique are protected and strictly regulated by the same body that governs the production of Champagne, Bordeaux and, most relevantly, Cognac (and Armagnac).

NEW ARRIVAL

Arrrrggghhhh! Not a pirate’s rum...Rum appellation, you say???

aoc producTion laws

• Rhum Agricole is fermented and distilled from pure, fresh cane juice. • The spirit is distilled to about 70 percent alcohol, a lesser degree than most molasses-based rums, allowing the rhum to retain more of the original flavor of the full cane juice.

aoc aging laws

•“blanc” (white rum): Colorless rum which has been laid still for at least three months and not more than three months if the rum has been stocked in oak barrels.•“élevé sous bois” (cask aged rum): Rum has been aged in oak barrels within the production area and for at least 12 uninterrupted months. •“vieux” (extra aged rum): Rum has been aged in oak casks within the production area and for at least 3 uninterrupted years.

since 1887, the development of the prestigious Rhum Clement is in the purest tradition and inherited according to the rules of Homer and Charles Clement who purchased the Domaine de l’Acajou sugar producing estate at the peak of the era’s sugar crisis. The crisis was due to the cheap sugar being produced from the increasing growth of sugar beet cultivation and lead to the collapse of the Martiniquean sugar commerce. This 43-acre estate was considered one of the best sugar plantations on the island of Martinique, but as it was stuck in a poor and stagnate sugar economy, it was unfortunately forced into bankruptcy.

homère clémenT saw an opportunity and made the necessary investments to transform one of the island’s most prestigious sugar plantations into a producer of world-class Rhum Agricole. He had the planters return to the fields to harvest sugarcane once again, but not to refine sugar. His idea was to press his quality estate grown sugarcane to extract first-pressed aromatic and flavorful sugarcane juice to distill pure rhum. Inspired by the enjoyment of great brandies while studying in his early years in Paris, Homère mimicked the distillers of the great Armagnac’s of southwestern France to perfect his method of rhum production known today as Rhum Agricole.

Over the past four years Burgundy has had small harvest yields yet increased global demands, which leads to sky rocketing prices. Please remember that Burgundy only produces 1/10 of what Bordeaux makes. However, if you know where to look, there is hope. 2014 will be very important when planning purchases for your clientele. The “LaForêt” wines from Joseph Drouhin will be a reliable entry-level Burgundy of great value to sell, with ample supply to make it a dependable choice. Other producers in the area are starting their “Bourgogne” wines at $160+ per case. This Domaine has been one of the most highly regarded and awarded producers in the region dating back to 1880. As of March 1st, we can offer these wines at incredible prices to our customers.

for a white rum with notes of brown sugar and hot-buttered toast. Creamy, with fresh ground coffee, cocoa powder and cappuccino. The palate is medium-bodied, much bigger and more expressive than one expects from a white rum. This blanco is soft, creamy and deliciously chocolaty. Perfectly rounded and balanced.

This 8-year-old rum, product of the small batch distillation process, has reassuringly weighty oak in the background and a polished

mahogany shade. On the nose it’s rich and full, with golden syrup aromas and notes of Demerara sugar. In the mouth comes hints of cinnamon, over-ripe oranges or orange liqueur and bitter dark chocolate. The Reserva is amazingly smooth and has a gentle texture. The finish is velvety like dark chocolate with creamy oak spice and citrus notes counteracting the rum’s sweetness.

A complex blend of Copper pot still rums aged for 12 long years. This rum has a characterful nose, showing fruit cake, rum’n’raisin ice cream, cocoa, dried ginger, cinnamon and clove. Develops baked bananas with fudge sauce and chewy toffee notes alongside vanilla oak and a deeper note of syrupy gingerbread, with hints of orange zest. Deep, vivid and extremely seductive flavors.

#1 trending rum[ ]

The youngest of the Diplomático family, 4 years old with a column still distillation process. The anejo has brown sugar

on the nose, with cocoa powder, raisins, caramel, sweet milky coffee and oaky spice. Creamy without being heavy or overpowering. The medium-full palate develops exactly as the nose would suggest, with chocolatey raisin fudge, sweet milky coffee again, and the oaky spices emerging to tingle at the edges of the tongue. This rum is very well-made and an extremely well-balanced spirit at an amazing value.

diplomaTico is a line of arTisanal rums made by disTilleria uniTas from The small venezuelan Town of la miel. The roots of Ron Diplomatico rum can be traced back to the late nineteenth century Venezuela where a man named Don Juancho Nieto Melendez of Hacienda Botucal (pictured on the label), an enthusiastic traveler and connoisseur of fine beverages, started developing a rum of his own using a set of special skills acquired on his travels, during which he had carefully studied the techniques and processes of making liquor in different cultures, particularly those of Jamaica and various spots in the Antilles. These areas, at the time, set the world standard for the manufacture and appreciation of rum. Don Juancho would collect the finest liquors from his travels to study them and amassed a notable collection of premium spirits. He delighted in sharing his knowledge and his exquisite collection of fine liquors with friends and associates which he called the “Diplomat’s Collection.” This is likely where Diplomatico got its name. Drawing from these experiences, Don Juancho crafted his own style of rum from sugar cane abundant in Venezuela. His decadent style survives today with four premium expressions. Most notably, Diplomático Reserva Exclusiva, which is produced in his honor and is one of Venezuela’s proudest and most treasured rum exports. This rum is meant to represent Don Juancho’s sentiment for the ultimate in expertise of the art of distilling, maturing and blending fine rum.

TucKed inTo The hills of souThwesT Tuscany, the DOCG of Vino Nobile di Montepulciano enjoys the sun and soil that help to produce healthy and structured Sangiovese grapes, or as the locals call it, Prugnolo Gentile. In the heart of the appellation, the Carletti family has been tending their estate vineyards and making the wines of Poliziano since 1961. It was in that year that Dino Carletti planted his first vineyards and established Poliziano, named in honor of the 15th century poet Angelo Ambrogini (1454-1494), known as “Il Poliziano,” who was born in Montepulciano.

in The decades since Then, Poliziano has gained widespread recognition as one of the greatest producers of Vino Nobile di Montepulciano, and there are many “firsts” associated with Polizano. Dino Carletti was an early proponent of the potential of the Sangiovese grape in this corner of Tuscany, an art that is too often overlooked for the more famous wines of Chianti and Brunello. He played a critical role in creating the defined appellation and in its ascension to DOCG status. One of the vineyards at the estate, the famed Asinone, was the very first single vineyard Vino Nobile. In addition, this wine – the winery’s flagship – has had the distinction of receiving Tre Bicchieri for 25 straight vintages, an honor that most wineries can only aspire to.

“TheseareamongthefinestwinesIcanremembertastingfromPoliziano,oneof Montepulciano’sreference-pointproducers.”

The winery’s sTaples, the Vino Nobile di Montepulciano and Rosso di Montepulciano, are stunning examples of great Sangiovese and represent incredible value. 2010 is already being recognized as one of the best vintages in Tuscany in many years, and the 2010 Vino Nobile is a fantastic example of this success. Rich and intense, the wine also shows the signature elegance and complexity that makes these wines so special.

Federico Carletti, Dino’s son, has headed the estate since the 1980’s. He has looked beyond Montepulciano in recent years, and has planted vineyards on the Tuscan coast in Maremma, in the Morellino di Scansano DOC. This property is called Lohsa and, like the Poliziano wines, produces wines of great distinction and character.

If there is one thing these guys know, it has got to be Zinfandel. Through the success of “The Prisoner” they were able to source some of the greatest Zinfandel fruit. The name “Saldo” in Spanish can be translated to “from here and there” which is exactly what this wine is. Incredible vineyards such as Aparicio, Pato, Eagle, Tofanelli, and Teldeschi, from multiple AVA’s in northern California, are blended to make Saldo. This wonderful grape started to appear on the Californian scene, where it is mainly planted, around the 1800’s. Zinfandel thrives on well-drained, hillside sites in warm climates. Unfortunately, in recent years it has been planted in areas that are too hot and flat. Saldo is blended from 85% Zinfandel, 9% Petite Sirah and 6% Syrah aged in French and American oak barrels, 20% new. Saldo hit Wine Spectator’s Top 100 list in 2008.

Saldo has a dark ruby color and opens up with bold aromas of black fruit, blueberry pie, juicy plum and hints of mulling spice. The entry is rich and full, with an inviting mid-palate that has concentration and density backed by lively acidity. The texture is soft and velvety, with smooth polished tannins that linger harmoniously. The finish is long and persistent with notes of toffee, roasted coffee beans and a subtle hint of vanilla spice”

iT’s no surprise To hear ThaT crafT spiriT sales have been sKyrocKeTing! Over the last three years, trade buyers and consumers alike are recognizing the quality and value (and excitement!) of these smaller-production, more interesting, craft spirits.

Of particular interest are whiskey (bourbon, rye, and scotch), gin, tequila, vermouth, and cordials. According to The Beverage Information Group, whiskey alone enjoyed a 30.3% increase in 2013 over 2012 sales, with bourbon accounting for 8.8% of that growth. Slocum & Sons has four of the fastest growing American whiskey brands in the business with Four Roses, Templeton, High West, and Hirsch. In 2013, Four Roses experienced 70% growth nationally, and 70% growth in Connecticut! On top of that, the 2013 Limited Edition Small Batch 2013 was named American Whiskey of the Year by Whisky Advocate Magazine for the second year in a row. Templeton Rye is the #2 rye whiskey in the U.S. market, and has been racking up awards and press attention, from the Whisky Advocate to TheNewYorkTimes. High West and Hirsch continue to grow at head-spinning rates, up triple digits in Connecticut in 2013!

On top of all this great news, the resurgence in interest in craft cocktails made with top quality ingredients (including GOOD vermouth!) has helped these craft spirits on premise. Slocum’s selection of vermouths and cordials is unparalleled in the state – Dolin, Cocchi, Carpano Antica, Luxardo, Punt e Mes, the list goes on and on – these ingredients can elevate your cocktail program and help you stay up to date with the developing trends in the business!

CRAFT SPIRITS GROWTH IS OFF THE CHARTS!

Connecticut born Robb Talbott, father Robert Talbott Sr. and mother Audrey moved out to California in 1950 where they started their luxury tie company. Robb’s mother sewed the ties while his father sold them up and down the Californian coast. During silk buying trips to Europe for their ties, the Talbotts fell in love with the great Chardonnays and Pinot Noirs from Burgundy, France. So it was no surprise that Robb would follow his love of these noble grapes and eventually plant his own vineyard in 1982, naming it Diamond T Vineyard after an antique “Diamond T” commercial truck he had restored. As the demand for Talbott Chardonnay and Pinot Noir increased, so did their need to find the more exceptional fruit. Sleepy Hollow vineyard would be the perfect fit. After years of working with the fruit, Robb Talbott was lucky enough to purchase this incredible vineyard, making Talbott an all-estate winery. Sleepy Hollow Vineyard has blocks of old Wente clone vines planted as far back as 1972 and has developed the reputation for producing wines of great depth, lushness, grace and age ability.
