Coconut oil has traditionally been used by the Thai people from time immemorial. Although the original methods of boiling grated coconut and fermenting of coconut milk are still practiced nowadays in the rural areas for home consumption, the small to medium-scale production of virgin coconut oil at present depend on two new techniques, namely, (1) Dry Process based on mechanical press of dried grated coconut and (2) Wet Process based on extraction of coconut milk and used in: (i) Improved techniques of fermentation, (ii) Various techniques of distillation, (iii) various techniques of centrifugation. ………………
Materials used in the production of virgin coconut oil in Thailand are freshly harvested, fully mature coconut fruits. …………………………………..
Coconut meat is extracted from the fruit by hand or machine. It is then grated by machine. For the Dry Process, grated coconut is dried prior to applying mechanical pressure to obtain coconut oil. For the Wet Process, grated coconut with water is crushed by machine to obtain coconut milk, which is then used in obtaining coconut oil through various processes, namely fermentation, distillation and centrifugation………………...
