Reasons to be ThankfulDear Campus Community,
Chartwells at UWS is ready for fall. In November we will be hosting Late Night
Breakfast on the 9th, a special Thanksgiving meal on the 21st, and Fish Market Night on
the 28th.
For Thanksgiving break the Union Café and retail areas will be closing early on
Wednesday the 22nd and re-opening for dinner on Sunday the 26th.
We hope everyone has a wonderful Thanksgiving break and returns refreshed and
ready to finish the Semester.

Brain BoostersYou have to feed your brain to think clearly! Our brains use a lot of energy and if
we don’t fuel it, or give it the wrong type of fuel, we tend to think a little slower and
recall less information. A healthy diet supports our brain and keeps it healthy just
as well as the rest of our bodies.
We all know omega-3 fatty acids found in salmon and walnuts are good for your
heart, but those same fats are great for your brain too. They provide protection
for the sensitive and critical nerve endings that help us connect thoughts.
Superfoods: MushroomsMushrooms are a great immune system booster as well as being a good source of
fiber.
Balanced BiteThis month’s superfood is mushrooms. Often grouped with vegetables, mushrooms
provide many of the nutritional attributes of produce, as well as those more commonly found in meat, beans, or grains.
Mushrooms with Spaghetti Squash and tomatoes.
This dish can be served as a healthy side dish or add cannellini beans for a complete vegan
meal.
Ingredients
16 ounce Squash, Spaghetti, Fresh
3 tsp Oil, Olive
4 ounce Mushrooms, Crimini, Fresh, Sliced
1 tsp Garlic Cloves, Peeled, Fresh, Minced
4 ounce Tomatoes, Cherry, Fresh, Halved
3 tsp Basil, Fresh, Chopped
1/4 tsp Salt, Kosher
1/8 tsp Spice, Pepper, Black, Ground
Directions
Preheat oven to 350oF.
Wash spaghetti squash. Cut in half and remove seeds. Place squash cut side down on a pan
lined with parchment paper or aluminum foil. Bake for 1 hour or until tender.
While the squash is baking slice the mushrooms, mince the garlic, halve the tomatoes and
chop the basil.
Once squash has finished cooking and it is cool enough to handle, remove the flesh from
the rind and gently pull apart the strands.
Heat the olive oil in a large sauté pan. Add garlic and saute for 30 seconds or until fragrant.
Add remaining ingredients, combine and stir until completely heated through. May be
served hot or at room temperature.

Ideas
A Meatless Night in the Union Café
May be on the Horizon
To complete their academic service learningproject, a group of students from the Law,
Citizenship, and Civic Engagement class have met with Chartwells food service director Jeff Spangenberg and suggested a meatless night in the
cafeteria. The Union Café currently dedicates one serving station to vegetarian/vegan entrees. The group would like Chartwells to expand the number of vegetarian and vegan options, and have proposed a meatless
dinner once a month. A petition is currently circulating.
Chartwells at UWS is always open to ideas and suggestions, if you have an idea, let us know!
