truly divine: the open air building, withits white drapes and gorgeously huedBelizean woods, combined with the softbeautiful music and fresh air simplyscreams romance in the tropics. Thedrinks are cool; the company is superfun, and the service – impeccable. Onesimply has to turn slightly and Dwayneor Marina comes over immediately totake care of you. Not once did we haveto wait to get service. And, in a fastpaced tourism environment like SanPedro, where the competition is fierce,and new restaurants crop up only togive in a few months later, excellentservice is not just a plus, it is expected.

Well, Hidden Treasure has that notchbuilt in on their belt. Everyone worksover time to ensure that the client iswell attended, so that they neither neednor want for anything. Talk about pam-pering! Our dinner arrives shortly after ourorders were placed, and we’re look-ing forward to dig in to Chef Juan CarlosRosales’ creations. The scents that waftfrom the dishes tell a tale of delight,and the taste buds perk up in anticipa-tion. quantity of food, and as we can attest, neither on thequality. The lamb chops are soooooo soft and buttery,melt-in-the-mouth tender, with the perfect balance ofspices and an explosion of taste that simply says “sub-lime”. A delightful dark and saucy mushroom dressingmarries each bite perfectly, and with the accompani-ment of buttery, fluffy mashed potatoes and delicioussteamed vegetables, the meal is simply perfection.

Achiote spice rubbed chicken is roasted to a goldenbrown, and topped with an herb butter sauce. Accom-panied by Belizean rice and beans, potatoes and veg-etables, it is a hearty meal.

Ambergris Caye’s neighboring isleCaye Caulker is only five miles or sosouth as the crow flies, but is worldsapart in ambiance. Where AmbergrisCaye is predominately an upscale,swank hustling and bustling touristhaunt that draws hordes of sophisti-cated, moneyed international jet-set-ters, Caye Caulker is a low-keyed,laid-back tourist hang-out that drawsa menagerie of arty-types and staunchindividualists- individualists walkingthe colorful edge of eccentricity. I think of Caye Caulker as in someobscure ways (and some not so ob-scure) similar to popular myths of theAmerican “Wild West” circa 1870 asdepicted in tinsel-town flicks. ment and generate good vibes galore.Every time his vessel the HeritageCruz returns from an excursion theclientele are dancing, singing and car-rying on in a decidedly high spiritedmanner. In spite of Ras Creek’s historicalsignificance, he has not been given theprops he deserves by the, at times,fickle tourist industry. Believe it or notthere are some philistines in the tour-ist biz that harass him on a regularbasis. A true disservice to a man thathad the vision to create somethingnovel in a highly competitive fieldwhere new ideas are few and far be-tween. Ras Creek might come off af-ter he’s tipped a few too many, or likesome kind of vociferous, persnicketyRasta hustler, though underneath thatbohemian demeanor is an astute mindwith a wealth of information on thesea life that lives in the waters sur-rounding Caulker. A cowboy-esque,mythic character that knows his stuff. Caye Caulker’s celebrity chef WishWilly, born Maurice Moore on themean streets of Belize City’sSouthside 50 years ago is a study incontrasts. His unique culinary concoc-tions are sophisticated, highly nuancedaffairs that come as close to palateheaven as this itinerate critic has foundin Belize. In contrast to Wish Willy’sclassy cooking is his bohemian, beach-bum, casual-to-the-point-of-disheveledlook and his ad hoc, outrageously funkyopen-air eatery. Wish Willy (his birth name Mauricejust doesn’t capture the elegant-downto earth contradictory essence of theman) was born and for his first twelve

years raised on West Street in BelizeCity. At twelve, he relocated with hisfamily to Chicago, Illinois. Aftergraduating from high school stateside,Wish Willy, who had a natural knackfor business, worked as a stock bro-ker in the Chicago Stock Exchange forseveral years. Then in his late twenties Wish Willyon a lark enrolled in one of those fancyculinary institutes that all big cities upnorth have in aces. Wish Willy’s in-structors readily noticed that he had aspecial aptitude for putting a new, ex-citing twist on traditional dishes. Achef whiz was created. After plying his unique culinarycreativity a few years in the kitchensof some swank five star restaurantsin the Windy City in 1989 Wishwillygot tired of the cold winds blowing offLake Michigan and headed back hometo Belize. Chicago’s loss is our gain. Wish Willy’s way with food hasmade him well known on CayeCaulker. His emphatically rustic res-taurant counter-pointed by elegant con-coctions has over the years become alocal tourist attraction. Wish Willy’susual attire is short pants, unbuttonedshirt and bare feet. While his sub-limely seasoned nouveau dishes are onpar with the works of renowned chefslike Wolfgang Puck and PaulPrudhomme. There are no high-rise resorts onCaye Caulker, no structure is morethan two, three stories, about theheight of the ubiquitous coconut palmsthat are sprinkled across the mini-caye. double yes. Honest to a fault, tripleyes. He called it like he saw it, noapologies. This critic can’t imagineanother place in Belize that would havetolerated Griz’s bluntness except CayeCaulker. On the reverse side of thecoin, Griz was one of the most, if notthe most, community minded residenton the island. When any civic organi-zation needs funds the Griz was theone with the deepest pockets. “Well, isn’t that the same thing? Come on; admit it. You really think I’mdumb, don’t you?”

“Hold on. Let me get the phone before I answer that.”

“What!!?,” she said, after she answered the phone. “I am so sorry. Myhelper must have delivered the wrong one by mistake. I’ll send him back rightnow.”

“Did you even look at those floral arrangements that you delivered?” sheasked, when she got off the phone.

“Uh, …. No. But I thought I took them to the right places. What’s wrong?”
