We have worked closely with our wine partner Hallgarten Druitt to ensure that

we have created a wine list that is balanced, versatile and that will enhance

your dining experience in our 2 Rosette Orangery. Our wine list will offer you an

exciting mixture of high quality wines from around the globe, offering a balance

of classic wines alongside some hidden gems.

Celebrating 80 years of importing wines into the UK, Hallgarten Druitt is proud

to represent a wide range of producers worldwide from iconic wineries to

volume focused powerhouses. Slotting neatly alongside this is Novum’s edgy

and boundary-pushing collection of world class boutique producers.

Throughout this list you will find some of the world’s great wine growers; Gerard

Bertrand from France, Saint Clair from New Zealand, Carmen from Chile and

Feudi di San Gregorio from Italy to name just a few. Alongside such prestigious

producers we also work closely with less well-known wineries and featured

in this wine list are some superb and unique wines made by Woollaston from

Nelson in New Zealand, Chateau Ksara, the oldest winery in Lebanon and Gaia

from Greece.

We feel the selection of wines available complement the excellent food offering

at The Spa Hotel and showcases the quality and diversity of the Hallgarten

Druitt & Novum portfolio and most importantly offers distinctive wines that taste

great.

QUASAR, RIOJA CRIANZA, Spain 4.8 7.2 9.6Ruby colour with soft oak and dried fruit aromas on the nose, followed by raspberries and warm earthy tones on the palate with a touch of oak on the finish. Good integration of tannins and fruit make this a rich, smooth, balanced wine.

Quady, Essensia Orange Muscat, California, USA 4.3Vibrant orange in colour, this wine delivers luscious sweet oranges and apricotson the palate. The bittersweet orange marmalade notes balance well with thezesty citric acidity.

Saint Clair Awatere Valley Reserve Noble Riesling, Marlborough, New Zealand 5.3The palate has a luscious texture and notes of pear and stone fruit with a long lingering honey and lemon zesty finish.

Quady, Starboard Batch 88, California, USA 4.3Rich and spicy, port-like wine with luscious ripe blackberry, raisin and chocolatetruffle flavours on the palate and a fine acidity and soft tannins.

Barros Late Bottled Vintage, Douro Valley, Portugal 4.7Aromas of fresh mint and orange peel with a richly sweet palate backed by a honeyed finish. “A taste of sunshine”.

EMERGING WINE REGIONS

We have created a wine list that is diverse, versatile, and eclectic that we hope

will both enhance and compliment your dining experience with us.

At the Spa Hotel we are also seeking to push boundaries when it comes to our

menus and with this we have added this new section “Emerging regions”.

Some of the most exciting wines nowadays are coming from up-and-coming

“emerging wine regions” with their own signature varietals.

Countries such as Greece, Cyprus, Japan, India and the UK are taking the wine

scene by storm.

Greece is making some of the world’s most exciting, individualistic wines and

producers such as Gaia and Gerovassiliou are certainly leading the way in this.

Indian producers, Sula and Fratelli are spearheading the Indian wine revolution.

Whilst interest in Koshu wines from Grace winery in Japan has escalated in

the last few years. There are also some fantastic wines coming from Croatia

and Cyprus, which has been kick-started by a small core of energetic artisan

producers. Nearer to home, two of England’s top wine estates; Goring Brut and

New Hall Vineyards in Essex are producing some stunning sparkling and still

wines.

The selection of wines featured below has been carefully selected to offer you

something original and exciting and enhance your wine experience.

Gaia wines, Notios white Moschofilero Roditis, Peloponnese, Gaia, Greece 28.5Two traditional Greek varieties combine to give an elegant wine: the Moschofilero contributes a vibrant, floral flavour while the Roditis provides a smooth lemony character.

Domaine Gerovassiliou, estate white Malagousia Assyrtiko, Macedonia, Greece 35An expressive aroma, with alternative impressions that bring memories of exotic fruits together with pepper, orange, jasmine, herbs and lemon.

RedEstate red Agioritiko, Gaia wines, Peloponnese, Greece 49Simply stunning - sweet, serious and velvety. Great depth and complexity with loads of black and red fruits with powerful yet smooth tannins. A top red not just from Gaia Estate but in our opinion,the whole of the Mediterranean.

IndiaWhite

Sula Dundori, Viognier, Nashik, India 25.5Typical tropical fruit of apricots and peaches on the nose. Full bodied, rich and opulent tropical fruits can also be found on the palate with a distinctive mid palate fruit sweetness and long minerally finish.

RedFratelli, Classic Shiraz, Maharashtra, India 22.5This Shiraz is deep ruby red in colour, with aromas of plum, blackberry and spice, along with subtle hints of typical earthiness and coffee on the nose. It is medium bodied on the palate with a soft supple mouth feel.

Sette, Fratelli, Maharashata, India 36A flavoursome and smooth wine with rich flavours of smoky coffee and chocolate with a lingering finish.

LebanonWhite

Blanc de Blancs, Château Ksara, Bekaa Valley, Lebanon 30Chardonnay gives this wine its finesse and elegance, Sauvignon Blanc its subtle aroma of hazelnuts and exotic fruits, whilstSemillon provides roundness, length and finesse. The result is an elegant wine with a complex aroma of spice, pineapple and nuts which is followed through on the palate.

RedReserve du Couvent, Château Ksara, Bekaa Valley, Lebanon 28.5A complex aroma of cloves, vanilla and mulberry. On the palate it shows an abundance of blueberry fruit with supple tannins giving it length and persistence on the palate.

EnglandSparkling

Goring Estate, Goring Brut NV, Sussex, England 45An elegant, complex English sparkling wine combining a youthful purity of fruit with subtle toasty, nutty notes.

WhiteNew hall, Bacchus, Essex, England 28Pale lemon colour with gentle floral notes and a dash of cinnamon. Off dry, with a slight ‘spritz’, and fresh acidity, the palate is perfectly balanced with layers of rounded fruit. Perfect as a refreshing aperitif.

CroatiaRed

Kozlovic, Teran, Istria, Croatia 30A fresh and medium bodied red wine with a combination of black fruits and bitter chocolate, reminiscent of Refosco from Northern Italy.

Italy (Sardinia)Red

Poderi Parpinello, Isola del Nuraghi Cagnulari, Sardinia, Italy 37A deep red showing hints of mature red fruits with a note of spices on the palate. A dry, pleasant, flavourful and elegantly full-bodied wine.

JapanKoshu Kayagatake, Grace Winery, Yamanashi, Japan 37Light and floral in style, the freshness and elegance of this wine is quite remarkable. The palate, like the nose, shows lemon and grapefruit notes, and a peppery spicy nuance with minerality on the finish. It has thirst quenching acidity.

1 Laurent-Perrier Brut NV 69 This popular champagne is fresh, elegant and delicate with good complexity and a hint of citrus fruits.

2 Laurent-Perrier Ultra Brut 89 Made without the addition of the sugar dosage found in most champagnes, this delicate champagne is crisp and dry with mineral notes.

3 Laurent-Perrier Cuvée Rosé 95 A fine reflection of the 2004 vintage, this is a rich and rounded champagne full of character and with a silky finish.

10 Doña Paula ‘Sauvage Blanc’, Uco Valley NV 30 Dona Paula’s Sauvage Blanc is the first 100% Sauvignon Blanc sparkling wine from Argentina. Showing intense aromas of orange blossom, white peach, with hints of grapefruit and an intriguing touch of mint, it is crisp, lively and persistent on the palate.

11 Sacchetto Pinot Grigio Rosato Spumante Brut, Veneto, Italy 29 Fine and continuous bubbles, this off dry sparkling wine is fruity and appealing with a floral and fresh fruity bouquet and a lingering finish.

13 Château de Campuget, Grenache Viognier, IGP de Gard, Costières de Nimes, France 22 A very typical modern and contemporary wine with some green apple fruit flavours. It is vibrant and extremely tasty, and enjoyable with or without food.

14 Pinot Grigio ‘Torre dei Vescovi’ Colli Vicentini, Vicenze, Italy 25 Golden yellow in colour the bouquet is delicate with complex floral notes. The wine is dry, pleasantly

fresh and velvety.

15 Tramin Gewürztraminer DOC, Alto Adige, Italy 35 An intense nose, with notes of spice and minerals with tropical fruit, aromas of honey, a smoky hint in the end. Full and oily, but well structured, with good balancing acidity and a long finish. A beautiful almost off-dry wine.

Old World 16 Chéreau Carré Muscadet de Sèvre et Maine Sur Lie ‘La Griffe’, Loire Valley, France 29.5 Straw-coloured with golden glints, very clean and bright. A clean, fresh, fine nose with pineapple, kiwi, passion fruit aromas and minerals. Rich and well structured with a pure persistent finish.

17 Javier Sanz, Rey Santo, Rueda, Spain 26 Pale gold with green tints. The nose is complex and full of citrus and floral notes White peach, exotic fruit and a hint of pineapple. The palate is robustly rich with zesty fruit and livewire acidity which keeps your taste-buds tingling. The finish is long and well rounded.

18 Gérard Bertrand, Terroir Picpoul de Pinet, Languedoc-Roussillon, France 29 Bright yellow colour, with green tints. The nose shows white fruit and citrus fruits character (peach, grapefruit). The palate is smooth with notes of vanilla and exotic fruit. Cool and generous with subtle notes of peaches and blossom.

19 Mesta Organic, Uclés, Verdejo, spain 23 A crisp, aromatic wine, showing great purity of aromas and a precise expression of the Verdejo variety. Fresh notes of grass, fennel and white pepper lead to a dry and refreshing palate, with excellent balance and a persistent finish with a subtle hint of minerality.

20 Weingut Rabl, Grüner Veltliner ‘Langenlois’, Kamptal, Austria 28 Spicy grapefruit with tropical fruit notes on the palate through to a mineral, crisp finish.

21 Domaine de L’Elite Mâcon Villages, Burgundy, France 35 Pale gold colour. On the nose, floral notes of roses and lilac and fruity aromas of grapefruit. On the palate, slight Muscat flavours are lifted by fresh and balanced acidity through to a mineral finish

22 San Silvestro, Gavi del Comune di Gavi DOCG ‘Fossili, Piedmont, Italy 31.5 Two traditional Greek varieties combine to give an elegant wine: the Moschofilero contributes a vibrant, floral flavour while the Roditis provides a smooth lemony character.

23 Bodegas Martínez Laorden, ‘A&A Blanco’, Rioja 31 A straw coloured wine with rich tropical fruit and mineral aromas. In the mouth it is fresh and vibrant with passionfruit and pineapple characters. The finish is dry with subtle notes of oak.

24 Coral do Mar Albarino, Bodegas Pazo do Mar, Rías Baixas 30 This estate grown and bottled Albariño shows typical stone fruit and citrus characters as well as tropical notes, all held together by a crisp backbone of clean, fresh acidity.

25 Domaine Grand roche, Chablis, Burgundy, France 48 A straw yellow wine with green reflections. Intense aromas with a strong aromatic richness. It shows hints of apricot, pear and ripe exotic fruits complemented by a lemon-lime vibrancy. All perfectly blended together with its subtle flowery scent.

26 Domaine Gérard Millet Sancerre, Loire Valley, France 43 Clean fruit with balanced acidity and a dry, crisp finish. Typical fresh, mineral notes on nose and palate.

27 Feudi di San Gregorio, Greco di Tufo DOCG ‘Cutizzi’, Campania, Italy 42 Vibrant Sauvignon notes of grapefruit and lemon with good weight and a clean crisp finish.

28 Domaine Ferrand, Pouilly Fuissé, Burgundy, France 55 Full of green plum and notes of balsamic of mint. Full in the mouth with a lively acidity and spicy minerality typical of the territory.

29 Château de Tracy, Pouilly Fumé, Loire Valley, France 58 Spicy nose showing hints of fresh yellow plums and mineral carried through to the palate which has notes of butter. A well balanced and elegant style.

30 Collavini ‘Broy’, Bianco Collio, Friuli-Venezia Giulia 69 Intense, lingering aromas of ripe tropical fruits, acacia honey, orange peel and summer flowers open on the nose. Softly textured with a warm palate, this is beautifully balanced by freshness and minerality. A powerful wine with an exquisitely long finish.

31 Domaine Marc Morey, St Aubin 1er Cru Le Charmois, Burgundy, France 80 Citrus tones combined with minerality; long, powerful and full-flavoured.

32 Domaine René Monnier, Puligny Montrachet 1er Cru Les Folatières, Burgundy, France 119 Expressive and elegant white Burgundy with balanced oak and a lovely layered rich flavour with complementing minerality.

New World 33 Tierra Antica Sauvignon Blanc, Central Valley, Chile 22 An elegant and generous wine with apricot and mineral notes on the nose and palate. A refined and very fine wine with a lingering finish.

34 Vina Edmara Chardonnay, Valle Central, Chile 23.5 Intense mouth-watering citrus aromas that recall grapefruit and lime, along with a mineral slightly salty hint on the finish. With a moderate volume and elegant fruit character on the palate, this wine offers a bright refreshing acidity and good persistence.

36 Opal Ridge, Gewürztraminer Verdelho, South East Australia 22 Peach, honey, guava & fresh apples on the nose. A modern, fresh style of Chenin. The palate is notably rich, especially for a Chenin at this level, showing honeyed apples with notes of minerality and a dry crisp finish.

37 Berton Vineyard Metal Label Vermentino, South East Australia 24.5 This wine is pale lemon in colour and bursting with tropical fruit aromas, which follow through on to the palate. It is so refreshing with its vibrant acidity that one glass is never enough!

38 Sula Vineyard, Dindori Viognier, Maharashata, India 26 Attractive green colour, with appealing aromas of freshly cut fruits. It has a beautiful soft depth of fruit on the middle palate and finishes clean and dry. A delightful example of a youthful, fruitdriven, un-wooded style of Chardonnay.

39 Bishop’s Leap Sauvignon Blanc, Marlborough, New Zealand 29 The special micro-climate in the Cafayate Valley is ideally suited to this variety where it develops concentrated aromas and flavours, which build from start to finish. An intriguing aroma of rose water and delicate fruit flavours of grapefruit and honey make this is a very elegant wine.

40 SAINT CLAIRE Riesling, Marlborough, New Zealand 32 Typical tropical fruit, apricots and peaches on the nose. Full bodied rich and opulent on the palate with a distinctive mid palate fruit sweetness but with good long mineral finish. Great with exotic Kerala style cuisine.

41 Saint Clair, Pinot Gris, Marlborough, New Zealand 32 A full and crisp wine with intense aromas and flavours of passion fruit, blackcurrant, underlying gooseberry and herbal tones. Mouth-watering acidity is balanced by a full flavoured palate that leads to a long lingering finish.

48 Casa del Valle, El Tidon Tinto, Cabernet Sauvignon tempranillo, Castilla, Spain 22 Warm, earthy and mellow aromas with spice and ripe blackberry fruit with toasted wood in the background. Fruity and smooth.

54 Santo Isidro de Pegôes, Touriga Nacional VR, Península de Setúbal, Portugal 29 Deep red colour with shiny tints. The nose is complex, both floral (violets) and fruity (red fruits, raspberries). Smooth in the mouth with a lot of fruit and spice. Very long aromatic finish with very soft tannins and a lot of depth.

55 Ca’Rugate, Valpolicella Ripasso Superiore DOC, Veneto, Italy 38 Dry and velvety with an intense bouquet and a supple, lingering finish.

56 Château de Grand Pré, Fleurie, Beaujolais, France 37 A very elegant wine with a floral bouquet of violets and roses, leading through to velvety palate of wild strawberries combined with a hint of liquorice and spice.
