Welcome to the latest edition of The Menu guide.since the last issue, there have been a lot of changes taking place in the city and its surrounds. several exciting new venues have opened, many of your existing favourites have undergone refurbishments and the bar has been raised again.

Not only has this increased competition for your custom, but it has added another layer to the quality and choice of eating and drinking venues at your fingertips!

for some time, restaurants across the south West have sought constant improvement, year on year. this determination to better themselves has, in recent times, seen the quality of food in the region rocket skyward and the variety of menu choices explode. service standards have set new benchmarks and every angle has been covered when it comes to the décor, atmosphere and ‘feel’ on offer.

as always, this edition is packed with great features and all the information you need to find the perfect place to go. Days, nights, lunches, brunches, you’ll find it within these pages.

Benjamin shearn delves into the sustainability aspect of eating out. What exactly does ‘locally sourced’ and ‘locally produced’ mean? and why is Plymouth the ‘Blue City’? Benjamin has all the answers.

You may be surprised to hear the terms ‘great wine’ and ‘British’ in the same sentence but as Yannick Loue explains in his rule Britannia feature, they are fast becoming comfortable bedfellows. Playing the french at their own game, us Brits are now producing award winning sparkling wines. Lovely Bubbly!

It’s unlikely to have escaped your notice, but england has well and truly made the transition to a café society. stuart James’ feature explores the coffee revolution and traces the roots of the humble bean.

Where do you work now? CS: Jolly Jacks, Plymouth.

What motivated you to become a chef? CS: Working as a kitchen porter at the age of 13 and seeing how much enjoyment the chefs got from a busy service and producing good food.

Tell us about your current menu. CS: at Jolly Jacks we try and make as much homemade produce as we can, using fresh local and in season ingredients.

Which dish on the menu would you recommend to a customer? CS: scallops with black pudding fritter apple purée and mini toffee apples.

Which chef has been your greatest inspiration? CS: I wouldn’t say any one chef had been my greatest inspiration. But I do owe a lot to the head chefs who I worked under when I was younger, and whilst I was travelling doing the job I love.

What is your favourite local ingredient? CS: at present I’d say strawberries, but being in Plymouth and being surrounded by the sea, the fish on our doorstep is some of the best in the world.

Why should people visit you? CS: Jolly Jacks is a very informal and fun place but when it comes to the food we take it very seriously.

In your experience what is the most important thing about cooking? CS: Being a chef and working the hours we do, I would

definately say the most important thing is you need to love what you do. If you don’t, you won’t give 100% day in day out. also teamwork is also very important, and I’m a strong believer in you’re only as strong as your weakest link, so it’s important to keep your team motivated and happy.

Where do you work now? BC: Moorland Garden hotel, Yelverton, Dartmoor, Devon.

What motivated you to become a chef? BC: My love for food started at an early age. My grandmother took me under her wing as she saw that I had what it took. My mother never had any interest in cooking. she did try very basic recipes but by the age of 10 I was cooking the family meals. although I studied to become an accountant, my passion for food took over and I found myself following my passion rather than the numbers.

Tell us about your current menu. BC: our current menu showcases the best of the south west produce and producers from Dorset to Cornwall but mostly Devon. We put this menu on to highlight the great produce we have available to us in the southwest of england, and offer our guests the quality produce along with unfussy cooking they can’t get anywhere else. We won the taste of the West Best restaurant in the south West award last year and this menu helps to showcase some of the other award winning producers too.

Which dish on the menu would you recommend to a customer? BC: My favorite has to be the duck dish, pan roasted free range

Where do you work now? MP: the two Bridges hotel on Dartmoor, Devon.

What motivated you to become a chef? MP: Working in kitchens from a young age, I enjoyed the teamwork, banter and camaraderie. I loved seeing and being involved in the team; brainstorming new ideas and learning the skills to put them into practice.

Tell us about your current menu. MP: all our menus revolve around what’s local and in season. I love to use game and it really suits our venue so now is a really great time of year for inspiration!

Which dish on the menu would you recommend to a customer? MP: our dishes evolve all the time as we work our way through the season - I’m a huge fan of our locally caught rabbit: potted leg & loin with liver parfait, gingerbread granola & apple.

Which chef has been your greatest inspiration? MP: I wouldn’t be able to say just one. Many of the local chefs have been a huge influence and I believe some of the pubs and restaurants we have locally in Devon are second to none! one of the most inspirational dining experiences to

date for me was Michael Wignall at the Latymer, Bagshot.

What is your favourite local ingredient? MP: Dartmoor beef! When well hung I don’t think you can beat it!

Why should people visit you? MP: Why not!? We enjoy a stunning setting in the heart of Dartmoor and showcase some fantastic local produce!

In your experience what is the most important thing about cooking? MP: the important thing about cooking is the quality of the ingredients and the seasoning.

sladesdown duck breast, fig jus, parmentier potatoes, pancetta crisp and wasabi. the ingredients used are so fresh and diverse and come together in harmony

Which chef has been your greatest inspiration? BC: Pru Leith has been my inspiration from the beginning. her dedication and values of using fresh ingredients has brought me to where I am today. I am also inspired by thomas Keller who uses traditional and foraged ingredients in his cooking. But I enjoy reading what other chefs are doing and more importantly trying various different chefs’ recipes and then putting my own spin on them.

What is your favourite local ingredient? BC: It is between the sladesdown duck and the Dartmoor beef. Both have been carefully cared for by the producers and the effort they have put into them shows in the result. Both are very moreish and I could happily eat either.

Why should people visit you? BC: We cook good honest local produce with passion and let the ingredients talk for themselves. I hate messing about with ingredients too much and like to share the best we can get our hands on.

In your experience what is the most important thing about cooking? BC: “the more you cook the better you become. the better you become the more you can cook”. eating is like walking, it’s an essential part of day to day living. so like you taught yourself to walk you can teach yourself to cook, even if it is basic food. remember, learning to walk almost came naturally to you, well so does cooking with enough practice. Keep it simple and keep it fresh and develop your skills. always do what’s comfortable to you. try new things for yourself before trying it on friends and family. happy cooking!! and keep it simple!!

rULeBrItaNNIaMaKING a sPLash or BareLY a fIZZLe?

Good old fashioned ale, the Cornish pasty, fish & chips: there are so many things that are so uniquely, wonderfully British. But wine? Cold weather, grey

skies and once in a blue moon sunshine: not exactly the ideal climate for growing those all-important grapes.

But with over 400 vineyards in the UK and a string of international awards under their belt, British winemakers must be doing something right. But is it best to buy British or continue to enjoy the much loved grapes from overseas? Is english wine even any good?

With Britain’s reputation for rain, you’d be forgiven for thinking that a bit of drizzle would take the fizz out of english wines, but far from it.

Counties in the south, where the best english sparkling wines are found, have that lovely chalky soil and are only about 90 miles north of Champagne; so weather permitting, the potential for harvesting some exceptional grapes is there.

In the grand scheme of things england is only a tiny wine producer but there’s logic to our focus on the fizz and our home grown wines are certainly making a splash

in the wine world.the awards are rolling in thick and fast:

Cornish vineyard won gold in the english and Welsh Wine of the Year Competition, and their sparkling rosé has been voted the best in the world on three separate occasions.

the 2003 Classic Cuvée from West sussex vineyard, Nyetimber, was named Champion of Worldwide sparkling Wines, beating renowned wine houses Bollinger and Louis roederer; and Devon winemaker’s sharpham won the coveted effervescent du Monde award. the list goes on.

a few years ago a bottle of english wine was a real novelty, not to mention the butt of a few industry jokes. once dubbed ‘shampagne’, now everyone from the humble wine merchant to the royal family are singing english Wines’ praises.

so impressed with the quality of english sparkling wines, the Duchess of Cornwall

wants us to shrug off the title ‘Champagne’ and forge a new name for our home grown tipple. But with the abundance of grape varieties and specialist vineyards dotted about the UK, I don’t know where we’d begin.

But what a wonderful thought – we’re spoilt for choice. award-winning wine houses on our doorstep and some of the world’s most fabulous wines just a stone’s throw away. More than enough reason to buy a bottle and indulge in some of england’s finest.

If you haven’t tried a bottle of english wine yet– now’s the time. With english Wine Week just gone last month and the latest vintages now out be carefull as it is nearly all sold out. and remember, only with an english wine can you “smell the hedge rows and taste the english Countryside”.

T he Franchet Family (Jo, Didier, Chloe and Rochelle) have created a menu to suit every pocket, and taken into

account all the past 9 years’ experience to produce a top class Menu Chic. Casual dining is the way forward for the hospitality trade these days and it should come as no surprise to know that Chloes has excelled at getting the “Casual Dining Experience” down to a fine art. It has wonderful family photos on the walls, including the chefs early years in La Rochelle, as well as Chloe, Rochelle and even Dylan the family Westie. There are little metal French chefs on the display shelves around the room and comic metal wall art of chefs to amuse you whilst you are seated. Each little feature within and around the restaurant is provided with care and attention.

Chloes Menu Chic is a truly unique achievement which enables you to dine on everything from Home-Made Soup to Local Lobster, Salads, Omelettes, Scallops, Steak, Fish & Chips and Fowey Estuary Mussels. There is a “Light Bites” section which encompasses everything from Croque Monsieur through to Confit Duck Noodles, Salade Nicoise and Moules Frites.

Prices are so unbelievable for such a wonderful venue and menu you really would be missing out if you didn’t give it a try.

I’ve had thirty five years in the bar and restaurant trade and can honestly say the simple coffee bean has revolutionised this trade. My business made a firm commitment to move the coffee

experience to the next level and in doing so I have travelled extensively through south america and asia visiting growers and building relationships, importing beans, roasting and blending and ultimately serving the result to the customer. Chandlers is now one of the very few operations to have all of these steps leading to a great cup of coffee in one business.

so here we go, the beginners guide to a great cup of coffee.

first and most importantly the best coffee is produced from an Italian style group head machine, so find a venue that has one and don’t be fooled, there are some automatic machines known as bean to cup which do produce a tasty coffee but it’s not the real thing so be aware of the equipment being used. Next you need to understand how the beans have been roasted and blended and of course where they originate from. any coffee shop that can’t tell you the bean type they are using should flag a warning sign for you.

A LITTLE ABoUT THE BEAN… there are many countries producing coffee at different times of the year, the choice is quite bewildering. Well know bean producing countries such as Columbia, Guatemala, India, Costa rica and Kenya are renowned favourites and it’s fairly safe to presume beans from theses producers will make a quality coffee, however if the bean is known as arabica it should be of good quality. It may be cut with a robusta bean which adds a bitter hue to the coffee but no more than five percent or your coffee will taste sharp and bitter.

Pay attention to the roast, this can vary

from a light city roast to a full Viennese roast with varying subtle degrees in-between.

Depending on your palate a good measure is to assume a city roast is perfect for most beans to produce a good shot of espresso for all day drinking coffee.

the longer the roast and by taking the beans beyond what is known as second crack, the stronger the coffee will taste. this is ideal for that after dinner coffee or that late night shot of espresso.

the style of coffee or how you like it is a very individual choice. today’s café society has brought new ways of turning that shot of espresso that is the base for all coffees into a confusing mix of strange choices, so my advice is keep it simple. the americano is just a straight black coffee with all the taste. a latte is best if you like it with hot milk and a mild taste. the cappuccino is one third coffee, the base shot of espresso, one third milk and the last third foam topped off with a sprinkle of chocolate or just try a shot of espresso.

Make sure that the barista serving you has

ensured that there is a rich crème on top of the shot and sip gently sucking a little air in with the coffee to experience the fullness of the shot.

Let me give you a little tip, try a small piece of chocolate with your next coffee they compliment each other beautifully and bring forward some of the hidden taste that can be lost in some roasts.

Making coffee at home can be fun and rewarding. there are a host of machines out there with pre packaged product and they are expensive, so if you are not lucky enough to have a Italian group head machine in your kitchen, the best way to get variety and taste is to buy yourself a coffee bean grinder and grind your own beans. You will be amazed at the difference fresh ground beans make to the taste and you will also be able to experiment and sample various styles of bean and roast. You can then serve with a cafétier or a peculator. this is also a great way to entertain if you have friends over.

so go and be bold, immerse yourself into the coffee revolution and enjoy.

ayear on from opening, in Plymouth’s royal William Yard, and Bistrot Pierre (located in the New Cooperage building overlooking the green) can

justifiably claim to be one of the City’s most popular restaurants.

Its fixed price lunch menu continues to be a great hit and has seen diners overflowing onto its terrace area across the summer - competitively priced at £10.95 for two courses, or £12.95 for three - it includes courses such as steak-frites; filet de haddock with asparagus in a light mint & lemon butter; and Confit de poulet with creamy puy lentils, fresh thyme and french beans.

“We have been delighted with the

reception we’ve had from Plymouth” comments robert Beacham, joint founder of Bistrot Pierre. “Customers have taken to our specialist dining evenings - ‘soiree Gastronomique’ on the second and fourth tuesday each month and ‘Dine with Wine’ on the first and third Wednesday, as well as our regularly changing À La Carté menu and I’m delighted to see many returning regularly.”

Plymouth’s success is one of the reasons the privately owned group has recently confirmed its intention to open its second Devon bistrot within the new £12million landmark development abbey sands, on torquay’s seafront, once the site of the town’s Palm Court hotel.

“as soon as we saw the plans for abbey sands we knew we wanted to be part of such a prestigious scheme”, continues Beacham. “It will be a landmark building for torquay and a very striking addition to the seafront, and the thought of a bistrot – quite literally – by the sea

is something we are all hugely excited about. each of our bistrots is styled a little differently to complement the building it is in but, whilst our look changes between each bistrot, customers can expect the same personal, attentive service and high quality french cooking every day, and we now look forward to welcoming them to both our Devon homes.”

Plymouth meanwhile is to see some changes to its layout. the stylish bar area, popular with customers - which serves a range of cocktails, local real ales on draught and 35 wines by the glass – is to be extended as the main entrance is moved to the centre of the bistrot. It will enable the bar to seat another 20 covers.

however food remains first and foremost. a fact recognised this year when Bistrot Pierre won the award for Best restaurant Menu and ajay Barak came runner-up as Best Group Chef in awards organised by restaurant magazine.

vegetarian offering, with new dishes salade Niçoise végétarienne; risotto with wild mushrooms and Crêpe aux legumes joining long term favourites such as tarte à l’oignon.

they also introduced a number of other new dishes including epaule d’agneau à la Maroicaine (slow-cooked shoulder of lamb with toasted pine nuts, pearl cous cous, mint, harissa and dried apricots); and a popular new entŕee, assiette Méditerranéenne designed for two people to share and including honey-glazed chorizos, olives, Brie de Nangis and lightly curried crab claw meat.

the soirée Gastronomique menu remains popular with customers, changing each time and consisting of six courses for just £22.95.

over the next few months customers will be able to sample Pan-fried scottish pasture-fed 21 day-aged bavette steak with black pepper butter; filet de morue, black olive tapenade crusted filet of cod with a soft herb and caper vinaigrette and honey-roasted

goat’s cheese with brioche, sun-blushed tomatoes and rocket and Poulet aux truffes amongst many other tasty dishes.

Joyeux Noël - and with Christmas just round the corner, the bistrot has launched its festive £16.95 set lunch menu and its 3 course set dinner menu (£25.95) and is already taking bookings. a popular venue last year, the 2014 menu includes rump steak with roasted garlic and green herb butter; ‘Les Landes’ duck leg confit with a cassoulet of smoked bacon, toulouse sausage and french beans and Coq au vin with red wine and wild mushrooms.

The new academy will help young people in the area prepare for work in many sectors of the industry whilst also providing a range of skills that can be transferred to other industries.

During a career spanning 34 years to date, Peter has enjoyed much success and significant recognition, running a number of acclaimed restaurants and hotels including The Horn of Plenty and The Carved Angel Group and, more recently, Gorton’s in Tavistock.

“I have seen how the catering industry can bring positive change to people’s lives, helping them to develop a wide range of specialist and general workplace skills,” commented Peter. “I am very keen to pass on the knowledge and experience that I have gained throughout my career and am very excited to have the opportunity to do so, both through the Academy and through my consultancy business.”

Alongside his restaurant business, Peter has, for many years, offered training in catering and has spent a great deal of time providing Food Technology courses in schools throughout the South West. Describing his new venture as a natural progression in his career, Peter has decided to sell the successful Gorton’s restaurant to allow him to devote his time to education for young people and consultancy support for new and existing catering businesses.

Students at the Academy will take a 12-week course during which time they will receive thorough training in the basic principles of food preparation and cooking and all aspects of service and front-of-house tasks, as well as basic business and workplace skills.

A pivotal part of the Academy, ensuring that students are fully

prepared for the workplace, is its fully functioning bistro, The Academy Kitchen, in which much of the training and work experience will take place. Students will operate the kitchen and front-of-house in the café, serving lunches, afternoon tea, coffee and much more, under the guidance of Peter and the team of staff that he will be bringing with him from Gorton’s restaurant. The Academy Kitchen will be open five days a week from 8.30am – 5.00pm and lunches can also be ordered for delivery to businesses in the local area and for meetings, conferences and other functions.

In addition to this invaluable first-hand experience, the Academy will be establishing close links with a wide range of hospitality businesses in Plymouth and beyond, through which students will benefit from further six week placements, culminating in the achievement of a City and Guilds qualification. Peter is very keen to develop partnerships with local catering establishments that wish to support the training programme by providing work placement opportunities for students, at no cost to their own businesses.

“We will be working closely with food and drink producers, other suppliers to the industry and catering businesses to ensure that students learn about the entire supply chain,” said Peter. “Building awareness of so many sectors of the industry will help them to decide where their future lies. With the benefit of the broader subject areas, others may decide to transfer their new skills to other industries. Our main aim is to help build the confidence and self-esteem of young people in the area to allow them to achieve their goals.”

sUstaINWell, a ‘supplier’ could be

a frozen food wholesaler set in Burington way industrial estate or it could be a fisherman sole

trader (excuse the pun) who rowed out into Plymouth sound and caught a sea bass with his fishing rod. But which makes the more ethical option for the restaurateur or chef?

Well I tend to look at it like this, buying from a local producer creates jobs for the local economy and keeps our customers money in the pockets of their community, transport mileage is reduced helping save our planet for our children and finally I know the produce is as fresh as it can possibly be. Buying from national suppliers takes the customers money out of the community which ultimately has no benefit to improving

our existence locally.When choosing where to eat, think about the

restaurants ethical choices... do they really care?Look for restaurants who advertise local

‘producers’ instead of ‘suppliers’ and who are accredited by bodies such as fish2fork.

fish2fork rates restaurants according to the impact their seafood has on the seas and marine life they review restaurants across europe and challenge the chefs on their ethical sourcing so customers can check online the restaurant rating of their favourite restaurant.

Plymouth qualified as the inaugural ‘Blue City’ because just over half its restaurants have earned a blue fish rating from fish2fork.

this is a marvellous achievement by Plymouth. our city is to be congratulated for its attitude to marine sustainability.

aBLethat two of the three most popular types of seafood on menus in Plymouth, one of the biggest centres for landing seafood in the UK, are tropical prawns and salmon. the prawns have to be imported from abroad while most if not all the salmon would have to be transported from scotland or further afield

We also have to be aware of ‘buying line caught’. trawlers are now using boats equipped with dozens of lines baited with live fish to catch sea bass as they fetch higher prices at market, but to kill a fish to catch a fish this isn’t particularly ethical. Neither are the sea birds that get caught up with the ‘artificial shoal’ of fish. Just because its local doesn’t mean its sustainable either, lots of huge bream trawlers land at Plymouth market. some of these have indiscriminately trawled the waters and sometimes the catch has been

in the hold for three days before being landed, then it’s bought, sold delivered prepared and then cooked... a process that can take up to seven days since the fish was swimming…

here’s our review on fish2fork: “the treasury clearly makes an effort to choose seafood sustainably and when it has concerns about a species is not afraid to act. When cod stocks in the Channel were especially low the restaurant chose to replace it on their menus with Pollock. Now, shocked to learn of the adverse environmental impacts that are caused by some king prawn farms - including overfishing through the heavy use of fishmeal - the treasury has elected to stick to sustainable cold water prawns. We take our hats off to them. the restaurant makes other sustainable choices too, such as taking its sea bass from an organic farm”

Interestingly the major chains don’t fare well with the ratings but the chef owned or independent restaurants seem to really care where their fish are sourced from.

Many chains advertise ‘white fish’ or ‘fish and chips’ on their menus without description, this is commonly ‘panga’ a Vietnamese catfish that is farmed in the muddy rivers of the Mekong, frozen in the water itself and shipped over 3 months to the uk for processing and wholesaling to chain restaurants central depots. Its always worth asking the waiting staff, “what fish is it?”

the seas are a harvest but some seafood needs protection if we are to be able to savour them for years to come. real thought and time needs to be given by the chefs when sourcing their customers fish and I’d recommend the customer takes a little time also.

A new hospitality training academy is opening in Plymouth in August 2014, fronted by renowned chef, Peter Gorton.

Together with leading training company, JTJ Workplace Solutions, Peter and his team will be providing a high standard of training for students aged 19-24 in the fundamentals of catering and hospitality, followed by comprehensive work experience in the Academy’s own bistro.

To complete their qualifications, students will then undertake work placements for six weeks in the wider hospitality industry, either in the kitchen or front-of-house.
