The Rudioso Chili Society Cookoff held on Sunday had thirty-two cooks participating in the event. Make plans to join us next year. Rick Thomas The 41 st Annual Terlingua Championship is quickly approaching so I would like to take this time to say Thank You” to all who have made this past year so wonderful. I feel truly blessed to have been the 40 th TICC CASI Champion and given the opportunity to meet so many new friends. I could not have been the ambassador for CASI that I was without the support of the Cooks, the Pods, the organizations putting on the cookoffs, and the Directors. Thank you!!! I would also like to thank my husband for his support and putting up with me throughout the year so that I could go out and promote CASI. Thank you for being there for me, Cary, I love you. The results are in and boy did we have a great turnout. The weather was nice andsunny, but a little breezy. We fed about 75 people at the cooks' party on Friday night.We had our charity, donors and sponsors come as guests. On Saturday we had acrowd of about 500 show up for chili tasting and judging. Important Insurance Notice

If you are holding a cookoff, please make sure the venue has their owninsurance before having them listed as an additional insured on the CASIcertificate for that event. Holding a cookoff at a location that does not haveinsurance, and basically sharing the CASI insurance for their liability, couldhave catastrophic consequences to our insurance and ability to continueholding cookoffs.

The purpose of CASI insurance is to protect CASI and is not to protectthose too foolish to protect themselves.

This month I’ve been pondering membership. ‘How toincrease CASI membership’ was a source of muchdiscussion at the Great Peppers Meeting. I believe theanswer is simple.

The first step is realizing that we all are owners ofCASI. In our chili family, we all have different roles butwe also all share a responsibility for our collective

welfare. If we each do our own small part, significantly increased membership willbe easy.

We must reach out to new cooks, let them know we value them and want to havethem join our family. If we think back to our first cookoff, we probably weren’tthere because we wanted to debate the meaning of rules or to desperately get thatnext chili point. We were looking for a fun new activity and the chance to meet newpeople. Let’s show our fun sides and be the friends these new cooks are lookingfor.

There are some membership experts amongst us. Jim Maturo signed up close to100 new members last year. Momma Sue (Caffey) is equally effective. They’lltell you that all you have to do is establish a relationship with a new cook, thenapproach them with a copy of the Terlingua Trails turned to the membershipapplication. If you’ve helped them feel as they belong, the sale will be easy.

I challenge every CASI member to take some responsibility for increasingmembership by signing up one new CASI member this year. One member for eachof us would be an unprecedented, dramatic increase. One member. It’s simple.Let’s get to work.

The CASI History ProjectAs most of you are aware, President Jim Ezell hasproposed a CASI Museum to be built on the groundsat TICC. He continues to seek funding for theMuseum but in the mean time, we are losing valuableCASI history. At the Board Meeting in Tyler, ReneeMoore was designated as Historian to implement anarchive program.

Jim Stateczny of Hill Country Software & Support hasgenerously offered to compile a book of the history of CASI (using contributedinformation) that can be accessed online through the CASI website. Each story orarticle will be in HTML format and accessible through a central table of contentsand/or alphabetical index. The finished product would appear much as a book youwould purchase. In time, it’s possible a printed product would be available.

Since this important project cannot happen without input, you are invited to submitbiographies, articles, pictures, and other related materials to Renee [email protected], or deliver them to Renee at TICC.

Additionally, we would like information relative to each individual whose nameappears on the Memorial Board. If you know someone who is honored on theMemorial Board, please submit a brief biography to Renee.

The preservation of the CASI history will not be possiblewithout you. Please help us with this important project.

CASI INSURANCE

Nobody Told MeMy second Great Peppers Meeting has come and gone, andI had a great time! The members of the Rose City Chili Poddid a great job, and everything went very well. Theirhospitality was everything one could hope for.

I think that perhaps my first GPM left me in a bit of a daze,because I really don’t remember much of anything, exceptthat Robert Mondavi Woodbridge Winery became a sponsorand taught us about wine at a “wine tasting” party.

This year, in Tyler, we were not so fortunate. I was hoping that maybe a Scotch whiskeycompany would become a sponsor, but it was not to be. Nevertheless, there were plentyof distractions to help us unwind after a hard day of CASI business.

Even the hospitality tent proved to be a good place for CASI business. Much of theworkings of CASI seem to depend on the friendship and good will of the members of CASI,and in particular, the friendship and good will of the Great Peppers. The Great Peppers arejust extensions of the members, in that they are all friendly and helpful. Pod problems maybe discussed but in the spirit of helping each other. There is a lot of talk about recruitingnew members and a lot of talk about how to have good cookoffs. And, there is always timefor stories, anecdotes, and maybe a few fibs.

I continue to be amazed at the number of people who are not only willing, but downrighteager to serve us by running for Directors positions. We all know that those are not honorarypositions. They are not positions of great personal prestige and self aggrandizement, butthey are positions where one is allowed to work oneself halfway to death for the good ofCASI. We owe a great debt of gratitude to our Directors.

Enough words about the work of the GPM have been published in the Trails, so I won’t gointo the official actions taken. I will, perhaps, talk about a few of the unofficial things thatmay have happened. On the other hand, maybe I won’t say anything about anything thathappened at the Great Peppers’ meeting. You won’t read this until after TICC 2007, but afew things should be reported, regardless.

Jimmy Taylor, retiring 2nd VP and Ranch Manager, did tell us that Rancho CASI de los Chisoshas developed a bumper crop of tumbleweeds, and suggested that we should each bringa “hoe” with us to TICC. Much laughter ensued, until we all realized that he was talkingabout an agricultural instrument used to remove weeds. A shovel might be worthwhile, too.Having never tried to remove a tumbleweed from anything or anywhere, I have no idea howto do so the easy way.

I was very impressed with the amounts of money that CASI has raised and distributed tovarious charities. CASI itself has donated about $58,000 to Terlingua Schools, TerlinguaVolunteer Fire Department and EMT, and over $38,000 to the Scholarship Fund. Then, thepods have raised over $1,000,000 in 503 cookoffs. That’s a lot of money any way you lookat it. We have touched a lot of people this past year and had a great time doing it.

On a lighter note, somebody told us that we should keep our drinks covered at all times whenwe’re not actually drinking at TICC. The ranch bees are apparently quite thirsty, and theylike to crawl into our cups to slake their thirst. They don’t drink much, but they do getsomewhat testy when a human mouth covers their way out. Being bees, they do what comes

naturally and sting the offending tongue, resulting in considerable pain and extremecurtailment of drinking, eating and talking. At least one such sting in 2006 resulted in a tripto a hospital for the stingee. No word on the fate of the bee.

I would be remiss if I did not mention the Black Gold Pod, who raised something on the orderof $110,000 for its charities this year. That’s a lot of money, and my hat’s off to them! Theyalso serve great pie and homemade ice cream at Terlingua, with help from the Concho ValleyPod.

My memories of the 2007 Great Peppers Meeting are much the same as this article; somewhatdisjointed and disconnected. But it’s great to be able to spend time around the membersand Great Peppers of CASI. I’ve met a lot of fine folksin my life, but none finer than Chiliheads.

Tales from the RanchOrale, CASI. How you is everybody? Well, theyear has ended. If you had enough points forTICC, my hat’s off to you. If you did not, keep oncooking and maybe the chili gods will help youin the next chili year.

It has been a very good chili year as far as I cantell from talking to various folks. A few ups and downs here and there, but mostly a goodyear was had by all. A few RV’s got dented, some stoves didn’t cooperate, some chili wasburned, haven’t heard of any divorces, a whole lot of brew was consumed, and MaxineKnievil didn’t run over anybody.

As we start the new chili year, maybe we can use some ideas that we picked up during theyear, whether it be a new recipe or a new recruiting method. Change is always good for thebetter. Don’t be a dinosaur; look what happened to them.

A few days ago, I attended a bitching and gripe session held at one of the local parks whereeverybody gathers around and talks about how things used to work, how we did it in thepast, we don’t do it like this in my town, or it ain’t gonna work with the bozos in charge now– yada, yada, yada. Well, in the midst of all this, a chili cookoff broke out. Yea, it did.

I asked one of the locals if anybody could cook and he said, “Sure, come on in.” So I gotme a pot and some chili meat and joined on in. I asked this cook I was next to if this happenedregularly, and he told me that they did this often. They try to get the griping over quicklyso that everyone can start cooking. I kind of whispered to him, while not trying to be heard,and asked him if it wouldn’t be a lot more fun if all you did was cook. He told me “Yea, thatwould be wonderful but you’re always gonna have a few who want to stir the pot andsomehow lose focus as to what they are supposed to be stirring.”

Does everybody follow me here? Cooking chili has always been fun and will always be afun event. Where and how did all of these negative political views come into play? Leavethat up to our elected Board. The public doesn’t need to hear this, and if we brought a newcook to try to get him interested in chili cooking, what do you think he’s gonna do? No punintended but let’s leave the politics at home and have some fun, okay? I’m off my Coke box. Things here at the Ranch are pretty quiet for now. Won’t be long and four-legged deerseason will be here and the City folks will be getting their first kitchen pass for the weekend.Yea, buddy, hunters with brand new hunting clothes and boots, brand new rifles, shinybright red caps, and a paperback book in the back pocket (How to Shoot a Deer). Oh, yeah,I’ve seen it all but it’s all in fun and a good clean sport. Plus, it’s good money for the economy.I own a boat and go fishing and some think I’m crazy. Hey, look at the money we spendcooking chili. Who’s loco now?

I’ve been talking with my fellow rancher and trusty companion, Dave Boone, from down atthe Marathon Ranch. He tells me that things are also slow right now. The toads and thetoad dogs have just been lying around being lazy. He said Sotol Sally and her crew havebeen resting up for the TICC fandango coming up.

The Mayor of Taco Flats, CD Hinds, just got back from some new law training that is to beenforced by the local law folks at TICC this year. It has something to do with a new dresscode for the ladies. Folks complained last year that the garter straps were too low, orsomething to that effect and I think that they have to be fluorescent orange this year. Mr.Boone will bring us up to date in the Gap as soon as he hears something.

Well, folks, I’m running out of English. It’s been a fun year. Let’s do it again.

My parent’s involvement with CASI is what inspired me to start cooking chili so Iam very thankful that they were able to share the experience with me. It was thrutheir passion and excitement that I discovered how much we can help others thruCASI, the giving nature of the cooks and, most importantly, the lasting friendshipsthat develop while cooking chili. I continue to cook chili after all these yearsbecause of what I discovered thru my parents. Now my own passion andexcitement for CASI, as well as new friendships, increases at each cookoff Iexperience. Chili, charity and fun…that’s what it’s all about! (Okay, I also havea competitive nature.)

All joking aside, I believe in CASI and the good work the organization does. Butthe organization is only as good as its members, and it is thru the hard work of allthe chili cooks that the organization continues to grow. My desire to attend cookoffsnot only in Texas but in other states was to help spread the word of CASI and informothers how much the organization contributes to charity each year. It was also anopportunity to promote our Sponsors and tell every one of the great products theyoffer. I hope my passion has inspired some new cooks to join us in helping CASIgrow.

I want to wish the 41st TICC Champion the best of luck whoever he or she may be. This past year has been a once in a lifetime experience and I thank all of you formaking it so memorable! Good Luck to everyone!

Bess’ Best Hello once again, everybody, from beautiful Lamar, Missouri,the retirement home of ole Harry & Bess. As you know, we are located just a stones throw from LamarInternational Airport, where we can see and hear theneighborhood kids flying kites in the March-like winds we arehaving in October. Activity has picked up around LamarInternational with the big Ford tri-motor planes coming in and out providing passengerservice. This is a big boost for Lamar. Now we have two means of connection with theneighboring towns - the train and airplane. A person can tell it is getting close to Terlingua time. When the leaves on the trees startfalling, Terlingua is not far off. It seems like the leaves are coming down faster this year thanin the past. Harry is outside with the blower trying to get the biggest part of the leaves outto the edge of the street so we can have our neighborhood leaf burning party (maybe tonightif the wind lays a little). Harry said this is not going to be a good year for burning the leaves.I guess he did a test burn and said they just don’t smell right. Guess that is because we havehad such a mixed up year for growing things with the weather like it has been. Just a little side note, Harry ought to be using the leaf rake and getting some exercise insteadof using that blower with the $3.59 a gallon gasoline. I have mentioned our leaf burning partybefore and all that attend sure do go home stinking like leaf smoke with a full tummy of cider,hot dogs and marshmallows. The weather maps all show the first freeze for the Lamar area to be around the 15th of October.The trees are about 50/50 on the loss of their leaves and we still have green grass. Abouta year ago we had a neighborhood project of everyone planting Canaas, all of which are nowin full bloom. And speaking of blooming, we have two large containers where we have ourtomato plants, which are also in full bloom, and we are still getting tomatoes. The tomatoesand my ferns are going in the shop before we leave for Terlingua. The year I won Terlingua(2000), the weather was very similar to what we are having now. We left Lamar on aWednesday with temperatures in the 90’s and came home Sunday night with a north windand freezing rain to greet us. I went to the grocery store and filling station after Mass last night and you could never tellthat Lamar had lost the big factory and 1700 plus jobs. Over half of the yards and houseshave been decorated for Halloween. Harry heard on one of the newscasts he listens to thatHalloween is now a 2.6 billion dollar business passing Valentines, Easter and Christmas.

Holidays don’t have the meaning as they did when Harry and I grew up or when we raisedour kids. The old time fun and enjoyment of the holiday or celebration have changed intoan event day with the emphasis on the all mighty dollar. This is only the first part of Octoberand I see Wally World is already running Christmas sales with 50% off on toys. I am surethe others are doing the same, but unless we go to one of the big cities, we don’t have storeslike Target, K-Mart, etc. Maybe if you lived in a large area like Kansas City, Houston, or Dallas, the discount storeis alright but for the smaller towns and communities it has ruined things. It used to be if youbought something and it wasn’t right, you took it back and it was replaced with a smile oryou took it to a local fix it up shop and it was repaired. Nowadays it is a pain in the neck toget something exchanged. If it is broken they tell you to buy another item as it is cheaperto buy than repair. I guess perhaps I better get down off my soapbox, take a short break, andsee what I need to do for the party tonight. Time is running out and we need to start packing for Terlingua. I think it gets harder andharder each year to condense 90% of everything you need to wear and cook with for threedays down into four suitcases. I can remember back when we drove down, spending a goodweek packing the van, and then we still stopped and bought things. It seems like each yearwe take less and come home with more. Harry is real good about helping me with this atTerlingua. Everything has a place, and with the exception of clothes and a few other items,if it is taken out it goes right back in.

For the past several years, Saturday evening and night after the cookoff is a rat race andwe miss a lot of the events, just getting to sit and talk a few minutes with others. Since wefly and with the crazy times out of Midland-Odessa on Sunday, we allow a little extra timefor the unexpected and know just how long it takes to get from Terlingua to the airport. Inorder to get a precious few hours of rest (not sleep), everything has to be loaded into thecar and the car gassed before 10:00 pm if at all possible. But as long as God will give us goodhealth and we have an extra dollar or two, we are going to make Terlingua a must in ourplans. For all who have never been to Terlingua, Texas, it has more to offer than being the homeof the CASI International Chili Cookoff. It is some of the most beautiful country in our UnitedStates, located on the Western edge of the Big Bend National Park and close to the RioGrande River. If you look up Terlingua on the computer, you will not only learn of its historybut thru the lens of the camera and the words of the author, you will see the beauty that drawsus back year after year. Sorry for the absence last month and I want to apologize, but sometimes things just happenand last month was just one of those times. Looking at the big John Deere clock on the wall looks like that tractor is beginning to sputterand stop so with that I will say “Thank you for your time this time & until next time rememberto start slow & then taper off”. The 2007 Chili Year is just about history. I know westopped cooking for 2007 points in September, but thereare still cookoff results to process. I would love to saythat all the paperwork for the September cookoffs hasbeen submitted, but as of this writing (10/15/2007) thereare still three cookoffs that have not been received.

For the past few years we’ve emphasized getting thepaperwork in on time and with no mistakes. This year has been the best I’ve had withregards to delinquent paperwork. There have been very few, which is a great sign, soI’m encouraged to predict there will be none next year. However, mistakes andincomplete paperwork continue to occur. I would rather you (cookoff referee) takesome extra time to get the forms complete, than rush incomplete information to me.So this year, I want to try to get this area improved.

The biggest problem I face is the lack of cookoff identification. At the upper right-hand corner of the Results Sheet is an area titled, “Chili Cookoff IdentificationInformation.” This information includes the cookoff registration number, the name ofthe cookoff, and the location (city, state) of the cookoff. The forms received fromCASI when the cookoff is registered have this information on them.

I’m aware that there are times when these forms don’t make it to the cookoff site,and generic forms (either from a Rules Book or the CASI website) must be used. Whenusing these generic forms, it is absolutely essential that the Cookoff IdentificationInformation area be filled-in completely. If you’ve ever tried to look up a cookoff inCIS, you’ll know how important the cookoff registration number is. A year from nowI want to write that there were no instances of this problem in 2008.

On to Terlingua! Once again this year we reached a new high in qualified show teamswith 189, pending the outstanding cookoff results. This year (so far) we qualified 466cooks which is close to the 469 who qualified in 2003. Soit looks like we’ll have another great TICC. I’ll be there;I hope you will be too.

Our local Class Six store (Liquor Store on Goodfellow AFB) started a contest thefirst part of July. The winner would receive a Tequila Rose suitcase. The sponsorwas Army Air Force Exchange Service (AAFES) and McCormick’s DistillingCompany. Every time we were on base, which was 4 – 6 times a week, I went inand signed my name and Cliff’s name on an entry form. I told the Managers severaltimes how important to me it was that I win this suitcase since I was one of theoriginal Tequila Roses which Susie Shaw instituted at a Top of Texas CCO in Ennis,TX on May 15, 1998. One day late in July, I walked in to sign up and the box andsuitcase were gone. I hunted up one of the Manager’s and asked who had won thesuitcase. They said that they had not pulled the winning ticket as of yet, but thoughtthey would the next weekend. I didn’t get a call and I was really disappointed. Infact, I went to the Tequila Rose site and investigated ordering one. Cliff talked meinto waiting until we returned from a trip to his Mother’s house in MO. After beinggone 10 days, we returned and there was a message sent the 2nd day we were gonethat I had indeed won the suitcase. I quickly returned the call afraid that they hadgiven up on me contacting them, but some person who knew me had told them tobe patient because I was out of town. When Heather called me back, she told meshe wanted a picture to send to McCormick’s and to AAFES home office. I askedher if she wanted me to round up a few of my local Tequila Rose sister’s and wearour Tequila Rose shirts and come for the picture. She was delighted, but not nearlyas excited as I was about getting the suitcase. It is lined in black with beautiful pinkTequila Roses. Life is Good!!!! As a crowd gathered on the Military Plaza of the Alamo in San Antonio, Texas,there was a look of curiosity and puzzlement on their faces. The gentlemen wearingyachting garb certainly looked dignified and there seemed to be an air of solemnitywhen bugler Bill Smallwood sounded the start of the ceremony with militaryprecision. What was up? Senior Admiral of the Brotherhood of Admirals ofAdmirals of the Texas Navy, Duke Walton orchestrated a series of events, asAdmiral Kevin Paetzel read the Proclamation of Grandest Importance andpresented Dr. Ben Bradshaw, distinguished professor of demography at theUniversity of Texas, San Antonio with his commissioning papers from TexasGovernor Rick Perry, appointing him as an Admiral in the Texas Navy. Dr.Bradshaw was duly welcomed into the “Brotherhood of Admirals”, a small andnon-elite, pro active group within the membership of Texas Admirals as well!A surprise presentation was made to Saralyn Walton, awarding her the coveted“Yellow Rose of Texas” designation, also signed by the Governor, for all her gooddeeds to and for the citizens of our great state! This award was presented by JanieBurruss and Johnye Harriman, former executive director of the Chili AppreciationSociety International, a nationwide group that raises money for local charities fromthe proceeds of chili cook-offs!

Finally, under the thoughtful direction of Admiral Duke “Ducky” Walton, theattending Admirals, guests, and attentive onlookers paid tribute to Senior AdmiralEd “Chill Lee” Paetzel, founder of the Brotherhood of Admirals. Famous (or nearfamous) cowboy poet, Walt Perryman read an original poem in honor of Ed. Therewas humor and pathos in his tome and the people “lightened up”, even though theydidn’t know anything about the gentleman he was talking about! They had tofigure he was special. Both of ’em!

Smiles and grins were evident in the crowd when the Admirals raised their Kazoosto accompany Bugler Bill in a medley of traditional Texas songs. They had kazoostoo! I think this is how Ed Paetzel would have liked to be remembered. He wasa great planner and organizer and never forgot that these kinds of “happenings”were all about having FUN!
