The Healthier BiscuitI decided to experiment today on a biscuit with lots of herbs and spices, along
with seeds..... and the result was ..... a yummy healthy option of biscuit
ingredients
175g spelt flour175g oats1tsp bicarbonate of soda1tsp vanilla extract1dessert spoon linseeds1tbsp pumpkin seeds1tbsp sunflower seeds1tbsp flax seed1level dessert spoon cinnamoncontents of 1 Yogi liquorice t-bagcontents of 1 Yogi Women's Energy t-bag75g dried cranberries35g organic coconut oil35g cashew butter35g butter 100g soft brown sugar

4tbsp milk
pre heat oven to 150c / gas mark 2
line sufficient baking trays with baking parchment
method
cream the sugar with the coconut oil, cashew butter and butter in a large bowl,in another bowl add the bicarb to the flour and set aside,add all the other dry ingredients and vanilla extract to the sugar/butter mixture.then add the flour and combine thoroughly.Add the milk and knead to a dough........it will be quite crumbly so don't worry!On a floured surface carefully roll out and use a cutter (I like square ones because they are easier to store!!!)put on the baking trays, they don't spread so they can be close together.Bake for approx 20 minutes .... ovens vary!Allow to cool on a wire rack, then store in an airtight container.
