We started with a Secondary Program

When we started the Post-Secondary, we started having them join the Secondary class.

Maintaining a learning environment is important.

Teenagers can frustrate adult students, duh!

When ratio of college level to high schoolers gets up to 50/50 dynamic changes, for the better.

Understanding that program is a privilege for the high-schoolers - acting out not accepted.

We found that we had to “un-invite” some of the High School Students.

But over time most have come up to the bar.

We did lose some College students along the way.

Lecture classes started as college only

We moved them to an on-line/ hybrid format

Now Secondary students can sign-up as well

At first they didn’t realize that there was studying to do

Keeping them engaged, on-line not for everyone

We are arranging one day a week to meet at their home high school, to have face to face.

High School students can now get up to 60% of the credits required for an AAS Degree while still in High School.

We had done catering for quite sometime.

Oregon State Law states that a County Agency can’t overlook a State Agency, HUH?

Catering for School OK, outside groups not!

Had to talk to ODA - about manufacturing, some catering allowed on the side.

Other schools in same situation.

In the Beginning . . .In the Beginning . . .

We started with a kitchen and a desire to save money.

In a Culinary Program, the students can produce a lot and eat a lot, with no return on investment.

Why not sell some of it?

Many Culinary Programs have restaurants, we didn’t have those facilities available.

Go retail, develop DeliGo retail, develop Deli

Needed to generate venue, started sales out of classroom.

We also started with an agreeable Administration who was willing to invest in saving money.

We had to decide how far we wanted to take the money making part and how far we would be able to stretch the curriculum.

In the end the two assist and support each other.

We got lucky with the fact that we didn’t have to change the kitchen very much

We also got lucky by being able to source two local entities that accepted our grant requests.

Your district has a grant writer on staff, talk to them.

For me it was finding items we could sell that still provide good practice of skills for the students.

Incorporating daily, multi-item production, into tiered learning

Getting the students to work in multi-skill level teams, with senior students supervising junior students.

Carving out a schedule that includes both lecture and production.

Along the way you have to evaluate the skills that your students are displaying.

Grading skills in a production situation, when different teams are doing different tasks, takes more work and attention to their work and results.

Adaptations to your programAdaptations to your program

Depending on the field you are in there may be opportunities to do work for clients and defray the costs of your program.

Be careful not to compete with businesses that are hiring your graduates.

Programs in welding, vehicle repair, desktop publishing, graphic arts, etc. may be able to find regular customers.

Math, Science & Literacy in CTEMath, Science & Literacy in CTE

Math, Science & Literacy in CTE is a good way to incorporate some core subjects in a form that give the students a practical usage for them.

It has been shown that students who use these skills in CTE situations, tend to learn and retain them better.

Unfortunately, I have found, that you need to kind of sneak up on them with it, after all Math IS a four letter word

No we don’t claim to have incorporated all of this into our curriculum, but we are trying, here’s one Math Example with Examples
