We are excited to announce that the Crossings at Carlsbad has added three new team Members to our award winning food &Beverage operation. andy Sheldon is the property’s new Director of food & Beverage; Sara rader takes over as the Crossings new Director of Catering Sales and Christie D’amico joins the team in the newly created Catering Sales Manager position.
ANdy SheLdON comes to the Crossings with over 30 years experience in food & Bever-age operations. Much of andy’s extensive food & Beverage background has come within the golf industry as andy has led the f&B operations at four other golf facilities. andy brings tremendous leadership and a wealth of knowledge to all of the Crossings’ food & Beverage outlets as we will continuously look to improve the experiences for all our guests. finally, andy has shown expertise in creating, planning and running major wine, microbrew, music and culinary events. So, stay tuned for some exciting new club events in 2011.
SARA RAdeR brings 10 years of Catering Sales experience to the Crossings. prior to joining the Crossings, Sara has worked as either the Director of Catering or the food & Bever-age Director at four different golf courses throughout the uS; thus bringing great ideas from the many markets in which she has worked. as Director of Catering Sales, Sara is responsible for and excited to handle all Weddings and Social Events booked annually at the Crossings. Sara looks forward to sharing, promoting and selling this very special venue with all involved.
ChRISTIe d’AMICO most recently joined us from the Monterey, Ca area, where she worked as an Event planner at two high end golf facilities. ne of the tougher things i have found when traveling or playing a golf course for the first time is getting the right yardage. With the advent of GpS systems, laser Yardage Scopes and personal hand help GpS units it is much easier than
in the past. however, what if you don’t have one of these magical yardage givers, what do you do? When competing in tournaments i have a process that i use for every shot and i do mean every shot (excluding putting). look for yardage markers / indicators to get yardage to center of the green.
¬ Sprinkler heads
¬ yardage Poles
¬ yardage discs
¬ Cart path indicators
¬ Bushes or Trees - sometimes at 150 yards
¬ estimate distance pin is from center of green + or - paces/yards
¬ Adjust for uphill or downhill
¬ Adjust for wind - with or against / crosswind severity
it may seem like a lot of math but an informed distance will always help you hit greens which will assure you of making par or better more often than not.
My favorite tips regarding yardages and getting them: Don’t get greedy sometimes the middle of the green is the best place to be!
pins located in extreme locations are the most dangerous, don’t hit at sucker pins! aim for the middle of the green.
always get a yardage and if using an aid, always cross reference it with another source!

Crème Brulee Recipe (Makes 12)
16 egg yolks 2/3 C Sugar (if using flavored sugar, use ½ Cup flavored, and the rest white) 4 Cups Cream1 teaspoon vanilla
Mix well and portion into dishes
place 6 dishes in water bath in hotel pan
Cook at 300 degrees low fan until edges are firm (aprox 30-40 min)
remove from oven and let cool in pans for an hour, then transfer to refrigerator

Brandythere are three main types of brandy.
1 Grape brandy is produced by thedistillation of fermented grapes. american grape brandy is almost always from California, armagnac is made from grapes of the armagnac region in Southwest of france,Cognac comes from the Cognac region in france and Brandy de Jerez is a brandy that originates from vineyards around southern Spain.
2 fruit brandies are distilled from fruits other than grapes like apples, plums, peaches, cherries, elderberries, raspberries, blackberries, and apricots. applejack is an american apple brandy; Calvados is an apple brandy from the french region of lower Normandy, German Schnaps is fruit brandy produced in Germany or austria and Kirschwasser is a fruit brandy made from cherries.
3 pomace brandy is produced by fermentation and distillation of the grape skins, seeds, and stems that remain after grapes have been pressed to extract their juice (which is then used to make wine). Examples include: italian grappa, french marc, portuguese aguardente Bagaceira, Serbian komovica and Spanish orujo. Most of the pomace brandies are neither aged, nor coloured.

if you have been follow-ing this column and the golf fitness series over the past few months you probably are beginning to understand the impor-
tance of golf fitness for performance and injury prevention. i have partnered up with Dr. Mike Wasilisin of the titleist Elite perfor-mance institute located at purefitness in Carlsbad to solicit some of his expertise on helpful tips that can be beneficial to the golf swing which may also transition to a healthier everyday lifestyle. again, the goal of these pieces is to simply point out that there are many simple and easy ways to improve your golf game; with the added benefit of improving your overall physical fitness.
recapping where we left off in July, we began to introduce transferrable exer-cises - specifically, we focused on the importance of setup and posture through the swing - and started the discussion on the body mechanics of the golf swing. a transferrable golf exercise is an exercise that is very similar to the golf swing, and will give the highest chance of directly impacting your golf swing. the chop was last month’s exercise of the month and involved pushing your hips back to give you good posture and using your arms and core to cross a cable across your body. this is one of the best exercises that combines strength with flexibility.
this month we will focus on the single arm row. the single arm row is a highly transfer-

rable and functional exercise. this move should remind you of boxing but when you break down the move it is working several important parts of your swing including core stability, posture, back strength, and spine rotation. Keep in mind that most people should be working a 2:1 ratio of back to chest because working the back will help put you in a strong posture which will make you more powerful and consis-tent. this move is transferable because there are so many similarities to the golf swing such as...exercising in a golf posture, maintaining posture, middle back rota-tion, core stability, and neck rotation (the body rotates under the neck). again, the closer something is the golf swing the more transferable.
to perform, position a cable or band at shoulder height. Grab the grip with your right hand, stand a few feet away, face the machine, and assume an athletic (hips back) position. Begin pulling your right elbow in close to your right side to complete a standing row. Maintain your posture and then reach your right hand all the way forward as if you were trying to punch someone, while pulling your left el-bow back. perform this move every other day for 3 sets of 15 repetitions to improve your distance and consistency!
