Here at Watsons Bay Boutique Hotel we live and breathe Summer, so we have designed this magazine to get your finger on the pulse with the ultimate schedule for summer in Sydney and to share our passion for bringing you the freshest cuisine, quality community entertainment and state of the art facilities.

We are excited to be able to reflect onthe incredible events that have taken place over the last year and to share our excitement for the Summer ahead. We are proud to have contributed to dozens of local film festivals and sporting associations, and to have raised over $8,500 for our local schools in the last 12 months. We plan to raise this bar higher for 2015 kicking off with our Carols by the Bay fundraiser this December.

So we invite you to feel at home at Watsons Bay – swing by on your morning walk and enjoy a fresh juice or smoothie from our brand new Kiosk bar, or bring some friends over for a long, sundrenched lunch and trial our new Summer menu. Great flavours will always be great flavours. Just because there’s a special occasion doesn’t mean you need to throw every herb, spice and condiment into a pan and create a special sauce or puree. Remember to keep it simple and combine flavours that bring the best out of your dish.

6 Tips for Christmas EntertainingBy John Pye – Executive Chef at Watsons Bay Boutique Hotel, Sydney.

1. Keep it Simple

Christmas lunch only happens once a year. As much as hitting the over-crowded seafood markets and shops can cause anxiety, blisters and an awkward sweaty lip, it’s worth investing a few hours of torture and purchasing some great fresh produce. It really does make a difference and your guests will appreciate your efforts.

2. F is for Fresh

Hot meats and veggies, cold meats and salads, seafood with fairy bread... whatever you choose to go with, commit to it and pay attention to the smaller details. It shows you’ve thought it through and want to put on a show.

3. Pick a concept and nail it

…and I’m not talking about popping green and read alternate napkins on the place settings. Think about who you’re catering for and really make it special. At Watsons Bay Boutique Hotel we create and style each event to attract who we’re entertaining – it’s part of the experience and shouldn’t be forgotten.

4. Styling is everything

Again, don’t over complicate your meal. Four courses are more than enough – we stick to this concept for any of our events. Appetisers and canapés on arrival, a starter, a main and a dessert... Don’t over-do it.

5. Four Course Rule

You don’t need to be a sommelier to know that some beverages match better with some foods and flavours. Google it! Read the tasting notes on the back of the labels. Research and show your guests you’ve covered all bases and doing everything you can to create a wonderful experience.

6. Drink it up

If you implement these six simple rules, you’ll definitely be able to avoid washing up – your guests will be so impressed they’ll mop your floors too... If you’re still struggling for inspiration – just pop on down to

FISH ‘N’ CHIPS Prepare a large batch of battered fish and present to your guests in small paper cups with fresh lemon and tartar sauce. GRILLED SALMON Serve with panzanella verde, fresh tomatos and wild rocket. CHOCOLATE ICE CREAM Serve with honeycomb crumble, strawberries and garnish with mint.

Ingredients 1. Pour out 3/4’s of the Coconut Water from a young fresh coconut [save this water in a glass and chill for later, yum!]

2.Mix Coconut Rum, Pineapple Juice, Cayenne Pepper, Honey and Lemon Juice in a cocktail shaker with ice3.Pour into the young coconut and garnish with an umbrella

1. BBQ SALT AND PEPPER KING PRAWNSMix a handful of roughly chopped coriander, with 1 tbs of dried chilli flakes, 1tbs of olive oil and a dash of lemon juice. Marinate the King Prawns in this bowl for 30 minutes before grilling on a BBQ for roughly 5 minutes on each side. Serve with freshly ground pepper and dashings of salt with fresh tartar sauce.

On Sunday 12th October at our annual Bridal Showcase in partnership with David Jones, we had the pleasure of interviewing two leading Australian bridal designers – the much loved Lisa Gowing and hugely talented Steven Khalil. Our brides-to-be were treated to an intimate discussion with the designers and below we share with you the highlights.

Q. About their design process

LG: Whether made to order or ready to wear, my process is very involved. The process can start with any type of inspiration and the collection builds from there, and incorporates all key themes that people know of Lisa Gowing – feminine, soft, delicate silhouettes using French lace and luxurious silks.

SK: My couture gowns are extremely involved with a lot of detail and require months of work. Most women have a silhouette in mind, but we help them create their vision in a perfect dress. My ready-to-wear dresses possess all the qualities of the couture gown, but it’s a simplified version.

Q.Top tips for brides when searching for the perfect dress

LG: Most brides know what suits their body type, however they have never tried on a wedding gown before and don’t realise the full extent of silhouettes that are available. Try on as many as possible and you could surprise yourself.

SK: Only ever take your most elite friends and family as everyone has a different opinion. Be comfortable in your own decisions.

Q. Tips for different styles and body shapes

LG: What brides often don’t realise is that a wedding dress has so much more fit and cut and process than a normal dress – you can pull something off that you would not usually wear because it is so much more flattering and has been cut really well.

SK: Definitely try a range of different styles, although I do suggest sticking to your personal style to some extent, so your wedding reflects you.

Q. Bridal trends for 2015 to look out for

LG: Bridal is not overly trend driven like fashion, but in 2015 you’ll see softer silhouettes, matte finishes, feminine, vintage inspired, layered tulle and lace sleeves.

SK: We’re starting to see fuller ball gowns, the fish tail and trumpet shape – all are worth a try.
