THE BARE NECESSITIES• Ingredients for 4 servings: • The measures you see in the

pictures are for two, but the measures I will tell you are for 4.

• 2 Natural Coconuts, 14 to 16 fresh shrimps, 1 kilo of any white fish (I used monkfish) also fresh, 6 big ripe tomatoes, 2 small glasses of dry white wine, 2 small glasses of home made fish stock, 1 onion, 1 garlic clove, 1 lemon juice, a bunch of parsley, olive oil and salt.

• In a big sauce pan, fry the shrimps, reserve. Fry the fish and reserve too.

• Chop the onion in small pieces and add to the sauce pan at medium heat using same oil.

• Once the onion is transparent add the tomatoe (previously you have gratted it) and the minced garlic clove. Stir at medium-low heat until you get a sofrito done.

• When the tomatoe has lost all the water and it looks oily and darker, add the chopped fresh parsley, the wine and the fish stock and some salt.

• Stir at medium heat and let the sauce reduce.

• Preheat the oven at 350 F.

• Meanwhile grate the coconuts and reserve.

• The seafood: fish and shrimps and let it cook for 5 minutes at low heat until the meat absorves the sauce.

• Take the sauce pan away from the heat and add the gratted coconut and the lemon juice.

• Place in earthenwear dishes and have in the oven at 350F for 15 minutes.

• Present in the same earthenware dish or in a nice cup or inside the coconut shell.
