The 2018 Winter Olympics will be held this month in Peyongchang, South Korea. The Olympics will be held February 9th—February 23rd. Winter Olympic sports include:
Alpine Skiing Biathlon Bobsleigh Cross-country skiing Curling Figure skating Freestyle skiing Ice hockey Long track speed skating Luge Nordic Combined Short track speed skating Skeleton Ski Jumping Snowboarding
In celebration of the Olympics, Vienna will be hosting our own Olympic inspired games, February 19th through the 23rd. Games will include:
Curling Ice dancing Ice hockey Skiing
A closing ceremony with medals will be presented on the last day, February 23rd.

Ingredients
6oz chicken thigh fillets (or breast), cut into bite size pieces
1/2 tsp baking soda
1 1/2 tbsp peanut oil (or other cooking oil)
6 oz fresh chow mein noodles
3 - 4 cups green cabbage, finely shredded
1 carrot, julienned
1 cup bean sprouts
3 shallot/scallions, cut into 2" pieces
2 cloves garlic, finely chopped
1/4 cup water
Chow Mein Sauce
2 tsp cornstarch
1 1/2 tbsp soy sauce
1 1/2 tbsp oyster sauce
1 1/2 tbsp Chinese cooking wine (or sherry)
2 tsp sugar
1/2 tsp sesame oil
White pepper
Directions
Chow Mein Sauce: Mix together cornstarch and soy sauce, then mix in remaining ingredients.
Pour 1 tbsp of Chow Mein Sauce OR 1 tbsp Real Chinese All Purpose Stir Fry Sauce over the chicken and set aside to marinate for 10 minutes.
Prepare the noodles according to the packet instructions.
Heat oil in wok or large fry pan over high heat.
Add garlic and stir fry for 10 seconds or until it starts to turn golden
Add chicken and stir fry until the skin is white but the inside is still raw - about 45 seconds to 1 minute.
Add the cabbage, carrot, and the white pieces of shallots/scallions. Stir fry for 1 - 1 1/2 minutes until the cabbage is just starting to wilt and the chicken is cooked through.
Add the noodles, Sauce and water. Stir fry for 1 minute, tossing to coat the noodles in the sauce.
Add bean sprouts and remaining shallots/scallions. Stir through quickly then remove from heat.

Each month, residents have the opportunity to explore the culture of different countries through the “Passport Program.” February’s focus is China. Chow mein refers to stir-fried noodles with little soup that are characterized by a salty taste. The name is from the Taishan Chinese dialect (a kind of Cantonese). There are many varieties of chow mein all over the world. It is a famous Chinese cuisine.

too busy with living to worry about potential disasters. I watch the news accounts of the aftermath of hurricanes and tornadoes, floods and fires and mudslides. My heart goes out those who have lost so much. Those who tell the survivors that at least they have their lives and that “stuff” can be replaced are missing the point. A lot of “stuff” can’t be replaced. All that’s left are memories. In a way, though, I’m no different. Most of what I’ve had is gone. Only memories remain. For some, the “world we know” vanishes in a moment. For others, it is more gradual. We never stay in one place, and that seems the way of it. All my Best, Jim
I’ve been following the news more lately. The false alarm about an ICBM headed for Hawaii gave me much to think about. I remember the time of duck-and-cover drills in school, civil defense and fall-out shelters. On his weekend drives, my dad would take us by the constructions sites of the Nike missile defenses around Philadelphia. I don’t doubt that many were deeply concerned about nuclear war, but I don’t recall anyone I knew then who dwelt on it. We just went on, dealing as best we could with what life gave to us. Looking back on that time, it’s clear that the strategy of MAD (Mutual Assured Destruction) works well. Somehow we made it through. It’s hard to imagine how anyone could win an all-out nuclear exchange, and enough recognized that to keep it from happening. And as Jan wrote in a recent letter, “Someone said the other day that she’s scared because trump and Little Rocket Man (Kim Jong Un) have red buttons on their desks. I hastened to tell her that he can’t just push a button and go nuclear. There’s a whole host of men with launch codes. Bottom line is I think that God would not allow two idiots to blow up his world. I’m sure he has better plans for us.” That’s exactly my sense of it. The dooms-day clock was recently moved 3 0seconds closer to midnight, but I don’t think it will reach the end. There’s an ancient Chinese curse, “May you live in interesting times.” We’re certainly doing that. Technology is bringing such rapid changes, and who knowns where it will lead. Just that it will be somewhere.” We’re still faced with nuclear weapons from rogue states and maybe terrorists. As in the false alarm in Hawaii. Early warnings don’t do much than start a panic. There’s no high ground, no safe place to reach in the short time given. It might be better to go on with our lives until disaster strikes. That’s what we do anyways. In California, scientists tell us the “Big One: is inevitable, but most of us don’t dwell on the chances of an earthquake. And that’s how it should be. We’re
