Maple mashed sweet potatoes

4 sweet potatoes½ cup maple syrup¼ cup olive oilSalt and pepper2 green onions, mincedPreheat oven to 400 F.

1. Bake the sweet potatoes until they’re tender and soft, about 45 – 60 min. 2. Toss the baked sweet potatoes into a bowl and splash in the maple syrup and olive oil. Mash well then season with salt, pepper and green onion.

Dark Chocolate Pumpkin Nanaimo bars

Bottom layer½ (125 mL) cup butter1/3 (75 mL) cup cocoa powder¼ /50 mL)cup sugar1 large egg, beaten1 ½ (375 mL) graham cracker crumbs¾ cup (175) sweetened shredded coconut

Top Layer6 oz (170) dark chocolate¼ cup butter

Middle Layer1 cup (250 mL) icing sugar½ cup (125 mL) butter (at room temperature)½ cup (125 mL) pumpkin purée2 Tbsp custard powder (or vanilla pudding powder)1 tsp cinnamon½ tsp ground nutmeg½ tsp ground ginger¼ tsp ground clovesPinch salt

Instructions

Bottom Layer1. In small saucepan over medium heat, combine butter, cocoa and sugar, stirring occasionally until butter has melted and mixture is smooth. Set aside to cool.2. Stir in egg, graham cracker crumbs and coconut3. Press into ungreased 9-inch square pan. Refrigerate for 60 minutes

Middle Layer1. In medium bowl, use electric mixer to cream together icing sugar, butter, pumpkin, custard powder, cinnamon, nutmeg, ginger cloves and salt. Spread over bottom layer; chill.

Top Layer1. In top part of double boiler over barely simmering water, melt chocolate and butter together, stirring occasionally, until smooth and shiny. Pour over custard layer2. Refrigerate overnight.
