METHOD1. Separate the egg yolks from the whites, making sure there is

absolutely no yolk in the white.2. Place in the very clean bowl of a cake mixer and whip the egg whites

until they are very stiff. A small pinch of salt will assist once the egg whites have started to whip.

3. When the egg whites are very stiff slowly add the castor sugar.4. Once this has been completed add the brown vinegar, vanilla essence and lastly the hot water. As soon as they are all mixed turn the mixer off. 5. If using an electric oven heat the oven to 240°C. Place a sheet of greaseproof paper on an oven tray and sprinkle the paper with cold water. If using a gas oven turn the gas oven up to high and place the pavlova in the oven when it reaches this temperature. Immediately turn the gas oven off

once the door has been shut.6. Now place the pavlova mixture into the centre of the tray and smooth

out with a spatula to form the round shape as required.7. Place in the oven and leave the oven on for 5 minutes.

8. As soon as the pavlova starts to brown turn the oven off and let the pavlova

remain in the oven until the oven is cold.

INGREDIENTS4 eggs (room temperature) 1 tsp brown vinegar castor sugar ½ tsp vanilla essence1 dssp hot water

NOTE: If you feel the pavlova is browning quickly, open the oven door slightly to release the heat. Slice the pavlova in half and spread with whipped cream. Place the other half on top and spread the top with whipped cream.Top with the strawberries.
