Its effects result in the formation of off-odors and flavors, reduction or destruction of essential fatty acids, generating of glycerol, free fatty acids and toxic products. The maximum levels for acid value of edible fats and oils were established by the Ministry of Public Health (Notification No. 205/B.E.2543) at 0.6 mg KOH/1 g oil for refined fats and refined oils or mixed fats/oils, 1.0 mg KOH/1 g oil for mixed fats and mixed oils, and 4.0 mg KOH/1g oil for natural fats and natural oils or mixed fats/oils. The rapid screening on acid value of fats and oils should be applied to control the quality of cooking oils. Test Kit for Acid Value of CookingOil

Self Food QualityCare Cooking oil deterioration is accelerated by light, heat, water, acids, enzymes and microorganisms. Health Impact Consuming deteriorated cooking oils :

• Cause loss of nutritional value from the destruction of essential fatty acids (for example, linoleic acid) and vitamins (A,D and E)

• Cause health effects from toxic products Target Sample Edible fats and oils Number of Tests / Kit 15 Tests

Sensitivity of Test Kit Detection limit : 0.2 mg Potassium hydroxide (KOH) per 1 gm of fat or oil Test Kit Tool

• 1 Large glass bottle of test solution • 1 Small plastic bottle of test solution • 1 Plastic dropper of test solution • 1 small glass bottle • 2 Long plastic droppers • 1 Syringe • 1 Sheet of test kit handbook

Procedure

1. Add 1 ml (level 2) of fat or oil into small glass bottle by one long plastic dropper.

2. Add 4 ml (level 4,2 times) of test solution (large glass bottle) by another long plastic dropper, shake to dissolve.

3. Add 3 drops of test solution (plastic dropper), mix together. 4. Add test solution (small plastic bottle) by using syringe, as follow.

4.1 0.15 ml for refined fat/oil or mixed fat/oil shake vigorously, read the result No.1 in the table

4.2 0.25 ml for mixed fat or mixed oil (natural oil + refined oil), shake vigorously, read the result No.2 in the table.

4.3 1.0 ml for natural fat or natural

oil or mixed fat/oil, shake vigorously, read the result No.3 in the table
