The Tequila Interchange Project (TIP) is a non-profit organization and consumer advocacy group for agave distilled spirits comprised of bartenders, consultants, educators, researchers, consumers and tequila enthusiasts. Our organization advocates the preservation of sustainable, traditional and quality practices in the industries of agave distilled spirits. In light of concerning trends that are currently becoming mainstays in the production of agave distillates, TIP seeks to place a renewed emphasis on the importance of preserving the great heritage of agave distillation in Mexico. Blanco - The most common tequila; often called blanco or silver. It is not aged, so it offers a more unadulterated flavor from the agave plant. Blanco or silver tequilas are typically clear in color.

Reposado - Reposado translates to mean restful, or in this case, rested. Unlike the Blanco; Reposado tequilas have been aged in oak barrels for at least two months and up to a full year. This allows the flavor to mellow, taking on hints of oak and a soft golden color.

Añejo - Añejo tequilas are aged in white oak casks for a year or longer. Prized for their layers of flavor and drinkability. Perfect for drinking or sipping.

Extra Añejo - Any tequila aged for over three years. Extended aging creates a darker, mahogany-like color, and is so rich that it becomes difficult to distinguish from other quality aged spirits. Extremely smooth and complex.

Mezcal - Mezcal literally means oven-cooked agave. Plants are roasted in the ground under stone and dirt, and then fermented agave juice is distilled in wood-burning clay pots or copper stills, giving Mezcal it’s distinct smokey flavor.

A TASTE OF TEQUILA... All Tequilas are Mezcals; not all Mezcals are Tequila. Mezcal is any agave-based liquor and therefore tequila is a subset of Mezcal. Tequila is produced in only 5 specific regions of Mexico and only using the Blue Agave plant. Mezcal, however, can be produced in 9 separate regions of Mexico and can be made from over 30 varieties of the agave plant.
