TECHNICAL STUDY

Technical study is a vital tool in our study for it will provide

comprehensive discussions about the product, manufacturing process, facility

location and lay-out, the structures specification, the raw materials and

resources. This study also considers the labor requirement and waste

disposal. The technical study entails a careful study in order to most

accurately select the most feasible of these factors.

I. INTRODUCTION

y THE PRODUCT

The Jackfruit Tokwa is in blocked form and dirty white in color.Jackfruit

seeds, as the raw material, is edible and inexpensive source of nutrition.

Major users of the product are individual households.

Food is an important necessity of our daily life. It is a basic need. And

when it comes to healthy living it is equivalent to healthy lifestyle and

healthy foods.



II. THE MANUFACTURING PROCESS

A.

a.) PREPARATION OF RAW MATERIALS

Prepare and wash the selected jackfruit seeds properly for 20 minutes.

b.) PEELING

Heat the seeds in an oven for ten minutes. Remove it from the oven and shelled it

manually for ten minutes in order to remove the seed coat.

c.) SLICING

Before slicing the seed, remove the thin brown spermoderm covering the fleshy white

cotelydons manually.

d.) DRYING

Toast the seeds in oven to reduce the moisture in 50-60C.

e.) GRINDING

Blend the langka seed to be turned into tofu into a puree. When grinding the beans, add

just enough water to help the process along.

f.) BOILING

After grinding, put the puree for tofu into a bowl gradually add the 5 L of water while

mixing it with a basting spoon to come up with a creamy consistency. Boil the langka

milk in a pot for 10 minutes in low fire. While boiling, continuously stir the milk to

prevent scorching.

g.) COOLING

When the 10 minutes is over, remove the pot from the stove and let the milk cool down

to about 55° C to 60° C. To hasten the cooling, you may put the pot in a bowl of cold

water. Watch the thermometer so that the milk does not cool down to below 55°C.

h.) FORMING WHEY

Dissolve the CaSO4 in 100 ml of water. Add the dissolved CaSO4 . You shouldnt add the

CaSO4 when the temperature drops to lower than 55° C, otherwise, the langka milk

wouldnt curdle or solidify well. Adding CaSO4 results in the formation of whey, which is

the watery part of the milk that separates from the curd.

i.) PRESSING

Line the wooden press with cheesecloth and put it on a basin or on the sink. To strain

the whey, pour the curdled langka milk onto the wooden press. Cover the curd with

another piece of cheesecloth, and press it for an hour; use a weight for this purpose if

necessary. The thickness and fineness of your tofu will depend on how well you press it.

j.) CUTTING

After an hour, remove the tofu from the press and slice it by 4x4 inch.
