Use Lighting To Advantage

3 to 4-pound chuck roast

1 tbsp veg/olive oil

2 tbsp salt

1 tbsp teaspoon black pepper

2 bay leaves

1 tsp dried rosemary

1 tsp garlic powder

1/2 cup beef broth

3 to 4 Baby Red or Yukon potatoes,

quartered

5 stalks celery

3 to 4 carrots, cut into 2-inch pieces

2 medium onions quartered

Combine olive oil, salt, black pepper,

rosemary, garlic powder in a small bowl. Rub

mixture all over roast to coat all sides.

Place half of the vegetables in the bottom of

slow cooker crock, top with roast, then add

remaining vegetables, liquid, and bay leaves.

Cover and cook 5 hours on HIGH or 8 hours

on the LOW setting.

Note: You can make this delicious and hearty

beef pot roast in any 5-6 Quart Slow Cooker,

or you can adjust the recipe as needed.
