Auchentoshan “12 year old” – Lowlands, ScotlandTriple distilled then matured for over 12 years, golden honey appearance, a hint of green apple on the nose with a smooth and sweet taste, finish is

gingery with a pleasant nuttiness.

Balvenie “14 year old Caribbean Cask” – Speyside, ScotlandAged in traditional oak casks before being finished in casks which

previously help Caribbean rum, giving it a delightful sweetness led by toffee, vanilla and tropical fruits.

Old Pulteney “12 year old” – Highlands, ScotlandMatured in air-dried ex-bourbon casks, this whisky has sweet citrus

flavours and a hint of sherry accompanying a rich body. This picked up best highland single malt whisky 12 years or under

at the world whisky awards 2010.

Talisker “10 years” – Isle of Skye, ScotlandMatured in fourth fill casks to maximise the unique character of the spirit,

this whisky is bold and meaty with sweetness that fades into a salt and pepper laden smoky finish.

Laphroaig “select” – Islay, ScotlandMatured in new American oak casks, the spirit is selected by the master

distiller from quarter cask, px cask and triple wood and a final addition of 10 year old. this gives a subtle blending of peat, oak and sweetness.

Pronounced “Ishka baha”. Uisce beatha is the Irish Gaelic term for whiskey, it translates to water of life.

Jameson “black barrel” – IrelandRich and fruity on the nose with notes of tropical fruits, thick and full on the palate with a nutty flavour, the finish is long and fruity with notes of

cinnamon and nutmeg.

Writers Tears “red head” – IrelandRich ruby red colour, orange peel and dried fruit coming on the nose with a

nutty oloroso, spicy raisin taste, finish is long with a flourish of orange.

Greenspot – IrelandMature in first and second fill bourbon cask, hints of peppermint and

creamy vanilla on the nose, papaya and citrus, spicy and soft on the palate, creamy long finish with vanilla ending.

Red Breast 12 Year Old – IrelandBright gold colour with aromas of creme caramel, toffee and dried fruits.

A bit of spice, rich and oily on the palate with flavours of roasted nuts, the finish is long, spicy and warm.

Connemara – Ireland Heather freshness and floral notes with honey sweetness and little wood, full and smooth on the palate with notes of malt and peat, finish is long

with notes of honey and peat smoke.

Chita grain whisky – JapanWarm gold appearance, light chewy mouth-feel, with notes of mango,

orange, blossom honey, and roasted grain. Finish is tender, sweet chocolate with orange zest.

Nikka from the Barrel – JapanA multi-award-winning whisky because of its rich, bold flavours.

Boasting spices such as cinnamon and cloves that are balanced by a mild, fruity sweetness with hints of raspberry and orange.

Yamazaki Distil ler’s Reserve – JapanClassic Yamazaki strawberry and dried fruit with floral notes from

mizunara (Japanese oak), dried berries. On the palate wafts of white peach with a finish vanilla and spicy sweet cinnamon.

Hakushu Distil ler’s Reserve – JapanHerbs and peppermint on the nose, pine and pleasant grassy notes.

Citrus on palate with a touch of burnt honey on toast which appears during the long finish.

Hibiki Harmony – JapanRose, lychee and hints of rosemary on the nose with candied orange peel

and honey on the palate. Finish is subtle and long with a hint of floral mizunara oak.

Kavalan “podium” – TaiwanDark gold in appearance, clean, subtle and elegant on the nose,

fruitiness on the palate featuring mango and green apple, the finish has a long and sustainable after taste.

Starward “two-fold” – AustraliaDouble grain whiskey aged solely in Australian red wine barrels.

Very well-balanced whiskey featuring notes of vanilla and tropical fruits on the nose, roasted pineapple and apple on the palate with a subtle oak

flavour, followed by a soft and dry finish.

Armorik “sauternes cask” – FranceCandied oranges and deep oak on the nose, taste is thick and velvety with intense citrus oil, finish is very long, intense wood and dried citrus fruits.

Koval “four grain” – AmericaDistilled from a mash four grains; oat, malted barley, rye and wheat

– and aged in heavily charred new oak barrels. Complex array of flavours on the nose including sweet malty aromas, liquorice and oak. Sweetness and

spice on the palate, spicy fruitcake, white pepper, then a long finish with honey, anise, and fruits.

Paul John “peated” – IndiaWarm amber colour with a sea salt dry grass aroma, flavour of fresh ground coffee, honey granola and citrus zest, the finish is medium

length with spice and peat.

Bladnoch “adela 15 years” – Lowland, ScotlandMatured in oloroso sherry casks. Notes of walnut and coffee with a rich and

chocolate heavy palate, finish is long with Christmas cake finish.

Springbank “15 years” – Campbelltown, ScotlandFragrant and rich on the nose, with a hint of caramel, pineapple,

guava and passionfruit, quite full and rich on the palate with a hint of spice. Fairly long, gentle warmth finish.

Balvenie “21 years” – Speyside, ScotlandMatured in 30 year old ex-port pipe. Elegant aromas of white peach with a puff of smoke, delicate on the palate with notes of red fruit, raisins and

extremely floral honey. Sumptuous finish with hints of cacao.

Macallan “fine oak 15 year” – Highland, ScotlandTriple cask, matured in a variety of ex-bourbon and sherry oak casks,

rich in flavour, sweet aromas of rose and cinnamon on the nose, raisins, orange and chocolate on the palate which lingers into a long, chocolatey

orange finish with dried fruits.

Laphroaig “lore” – Islay, ScotlandAntique gold appearance, rich and smoky on the nose with seaside

minerals. Rich, peaty and spicy on the palate. Finish is dry and long with a smoky and sweet aftertaste.

Lowland whisky is most commonly gentle and light, often lacking in any serious peaty flavours. Commonly known as the “Lowland Ladies”, these drams will often

offer a gentle, elegant palate reminiscent of grass, honeysuckle, cream, ginger, toffee, toast and cinnamon. This sophisticated style is a result of the unique triple

distillation only common in the Lowlands, and has resulted in Lowland whisky being uniquely suited to introduce malts to new whisky drinkers.

C A M P B E L T O W N Campbelltown was once one of the most prolific regions in Scotland, sadly us prohibition affected the area and until recently there were only 2 distilleries

producing whisky. Campbelltown sits on the mull of Kintyre, very close to the sea. This imparts a slight coastal character onto their whisky, but they are mostly known

for their dryness and often their pungency.

H I G H L A N D If you roughly drew a line between Edinburgh and Glasgow, everything above

that would be the Highlands. The Highlands is Scotland’s largest whisky producing area, covering to the north of Glasgow all the way to Wick in the north, not to

mention the east and west regions excluding Speyside. Due to the large area, whisky in the Highlands is very diverse and offer a vast amount of different flavours so it’s

hard to put a certain style on Whisky from this region. Typical notes from this region would be of peat, honey, and heather in a much more robust, dry body.

I S L A YThe small island of Islay is tucked away in Scotand’s southernmost part of the Inner Hebrides. Due to unique make up of the peat on the island,

Islay malts are pungent with smoke, brine and peat on the nose, but multilayered on the palate, displaying anything from mossy, peaty, floral mixes to peppery

linseed and soapy hints. This complexity of layers is the reason Islay malts are often prized as the best in Scotland.

S P E Y S I D E The region of Speyside is located in the north east of Scotland surrounding the River Spey, it’s seen to be more of a sub-region to the neighbouring Highlands

because of the high density of distilleries in the area. It’s home to highest number of distilleries in Scotland with well over 60 at present. Due to the sheer volume of

distilleries, there’s a huge amount of difference in the character of Speyside Scotch, from lighter grassy numbers, to the sweeter, richer, sherried type. The single malts

from the area are notable for their refined smokiness and complexity.

AustraliaAustralia has had a long history of spirits and distilling dating as far back

as the first fleet when convicts and settlers landed in 1788, there was also 65,000 litres of rum to accompany them. Hard liquor was so valued it even became the

currency at the time, Australia’s first! But this burgeoning market wasn’t to survive. In 1839 the distillation prohibition act banned colonial distillation altogether and it

was to be another 153 years before anyone was granted a distilling licence. Fast forward to 1992, lark distillery founder Bill Lark who not only resurrected

Tasmanian distilling, but distilling all across Australia. At the end of 2017, there were more than 120 listed distilleries in Australia with 31 of these in Tasmania.

These new world whiskies have been highly praised internationally, even so in 2014 Sullivan’s Cove French oak cask winning best world’s single malt,

the first time a distillery outside Scotland or Japan had won the award.

IrelandDeriving from the term uisce beatha – meaning ‘water of life’ – even the

word whiskey has Gaelic roots. One of Europe’s earliest distilled beverages, the first record of Irish whiskey dates back to 1405, around 90 years before it was first recorded in Scotland. Producing Irish whiskey evolved from a local pastime into

an industry in 1608, when Northern Ireland’s Old Bushmills Distillery became the world’s first licensed whiskey distillery. Much of current production is distilled

using a mixture of grains and unmalted barley, oats, wheat and rye. Triple distillation is also very common which results in a lighter, fragrant

dram and a more approachable way to start drinking whiskey.

AmericaAmerican whiskey is a distilled beverage produced in the United States

from a fermented mash of cereal grain. Among the types included under this designation are bourbon whiskey, rye whiskey, rye malt whiskey, malt whiskey,

wheat whiskey, and corn whiskey. All of these are made from mashes with at least 51% of their named grains.

JapanJapanese whisky owes its origins to Scotland. Masataka Taketsuru,

whose family owned a sake brewery is known as the ‘Father of Japanese Whisky’. After studying chemistry in Glasgow and working closely at the Longmorn Distillery,

he then returned home and founded the Suntory Yamazaki Distillery with Shinjiro Torii. 10 years later Taketsuru went on to open his own distillery - Nikka Yoichi. Developments in whisky production including the use of a Coffeey Still, utilising Japanese oak to finish whisky and reduction of lipids in wort have resulted in a

delicate and floral dram that encapsulates pure harmony and balance.
