MICHELLE COLLINSMichelle Collins was born in Holland but grew up in the Orlando area for most of her childhood. > January marked the end of the holi-

day season but it didn’t mean that the fun

had to come to a stop. There may have

not been any more seasonal parties, but

the social calendar in Tampa was still full

speed ahead from concerts to themed

festivals taking place all around the Bay.

There certainly weren’t any post-holiday

blues around here!

There couldn’t be a more perfect way to

ring in the New Year than to have an ap-

pearance with none other than American

Blues legend, B.B King. As being ranked

as arguably one of the best guitarists of

all time, King was inducted into the Rock

and Roll Hall of Fame in 1987 and is con-

sidered to be one of the most influential

blues musicians in the business. When

Tampa natives heard that he was play-

ing not only one show but also a second

as well, fans flocked to purchase tickets

to ensure their spots at these coveted

events. King’s concerts were both at the

newly renovated Capital Theatre at Ruth

Eckerd Hall in Clearwater, one on De-

cember 31st and the other following up

on January 2nd. I’m sure all guests can

agree that New Year’s Eve next year will

be a tough act to follow after spending

this one with this legendary musician.

January is a thrilling time for Tampa na-

tives and visitors alike because it means

that thousands of pirates take over the

Bay for a day, donning stripes, swords,

and eye patches. On January 25th, the

tradition that’s been celebrated since

1904 came back to town and had Tampa

swarmed with mateys and Jose Gaspa-

rilla look-alikes. This tribute event began

with the Gasparilla Invasion in Hillsbor-

ough Bay, which is the launching of the

world’s only fully rigged pirate ship, the

Jose Gasparilla, of course! Crowds of

people then gathered to watch the Pa-

rade of Pirates, featuring over 90 deco-

rated floats, 14 marching bands, and

even some authentic pirates made an

appearance as well. The evening ended

with a night full of live music at the Pirate

Fest Street Festival, which featured other

live entertainment and food to fill up the

hungry seafarers’ bellies. And, the ad-

mission was completely free!

The Tampa Bay Times Forum started

their year off strong, bringing in multi-

million selling artist, Barry Manilow on

January 31st. One thing concertgo-

ers can agree on is that the show was

high-energy and completely packed

with some of Manilow’s greatest hits. Of

course, he sang “Mandy,” “Can’t Smile

Without You,” and “Copacabana,” but

the contemporary artist also surprised

guests with his hit song, “It’s A Miracle.”

A factor to the show that wasn’t quite so

unanimous is which passionate perfor-

mance was Manilow’s best of the night.

Each fan had their own opinion, but it

was clear that the concert as a whole was

nothing short of spectacular. <

> The secret of Italian cooking has al-ways been authenticity, and for Chef Do-natella Arpaia, that authenticity is worth more than Italian cooking itself. With several award winning restaurants, Food Network appearances as a judge on Iron Chef America and The Next Iron Chef, and the accolades of “Hostess with the Mostess” and one of “America’s Most Powerful Women,” it may be a surprise that cooking comes second on Donatel-la’s list.

Donatella always knew her passion to become a chef would remain close to heart, but as a young woman she instead chose to follow the wishes of her father and pursue a more reliable career. Her fa-ther, a first generation Italian immigrant, had been in the restaurant business for years and, having seen the pitfalls of the industry, encouraged his daughter to practice law. After a brief time spent as an attorney, Donatella finally decided to follow her culinary dream.

Donatella’s law career became one of the most vital chapters of her story after she discussed its importance at Dinner with Donatella, an elegant evening host-ed by Council Oak, the luxurious steak and seafood restaurant located in Tam-pa’s dazzling Seminole Hard Rock Hotel and Casino.

“Unlike other restaurateurs and chefs, I do have an advanced degree in edu-cation, and I think that’s always a good thing,” Donatella explains. “The restau-

rant is also a business… and law was a great discipline for me.”

But time pursuing a law degree taught Donatella more than just business skills: she learned that authenticity in Italian cooking begins outside of the kitchen. Donatella is an authentic Italian chef be-cause she set aside dreams of becoming one; she chose to honor her family first, the sign of a truly authentic Italian.

“I was the good Italian daughter,” Do-natella says. “I don’t regret it… but I’m happy I had the courage to follow what I knew was in my heart, and what was in my heart was the fact that the happiest moments of my life were around family and food.” For Donatella, family always comes first, and food follows as a close second.

November 14th was a night to honor the authenticity of Chef Arpaia, as Tampa’s elite and food lovers near and far came to enjoy a three-course dinner curated by Donatella herself. The restaurant’s location in Seminole Hard Rock, the world’s sixth largest casino, is a suitable venue for a chef of Donatella’s standing, as the Hard Rock’s thematic design cel-ebrates iconic greats and living legends, and Donatella could be considered a rock star of the culinary world. Every wall surrounds guests with pieces of the past and mementos of today, from Frank Sinatra’s jacket to Mick Fleetwood’s drum throne. The rock ‘n’ roll memories seem to come to life among the vibrant

energy of the casino, filled with the hum of hopeful winnings and the pulsating rhythm of hard rock anthems. The hotel of Seminole Hard Rock defines the rock star style with a classic yet edgy aesthet-ic; its elegant designs and modern fur-nishings offer a relaxing balance to the excitement on the casino floor.

Dinner with Donatella echoed the Hard Rock’s balance of excitement and relax-ation. The calm, intimate setting paired like a fine wine with the anticipation of the award winner’s delicious creations, and those fortunate enough to be in at-tendance awaited Donatella’s introduc-tion of each unique course. Although Donatella’s first dish was a precursor to the evening’s main course of red wine braised short ribs, it was perhaps one of the most memorable. Donatella introduced her guests to gnudi with fonduta di caccio-cavallo, Italian pasta similar to gnocchi with a charming surprise: it is made of ricotta cheese, crafted in the vil-lage from which Donatella’s mother hails. Breadcrumbs dusted the tender gnudi, which added a crystalline tex-ture that gave the dish a sugary sweetness. This first course was paired exquisitely with a lightly aromatic white wine, Castello della Sala “Bramito del Cervo.” The creamy nature of this chilled wine balanced the subtlety of the dish, while the vibrancy added a refreshing zest.

Donatella’s dessert was a perfect grand finale: a choco-late hazelnut cake with vanilla poached pairs, alongside miniature cannolis that were, as Donatella says, “Deep fried, as they should be!” The decadent cannolis were truly an indulgence, and toasted pistachios and shreds of bittersweet chocolate added hints of savory bright-ness. The dessert wine, Michele Chiarlo “Nivole,” could have been served as a dessert itself; the whispers of fruity flavor mixed joyously with a candy-like boldness, and the wine carried a sweet perfume that many wished to wear out of the restaurant.

While tasting the different hues of the dinner’s spectrum, savoring each bite of the Italian masterpieces, I began to watch Donatella eating her own creations at the table across from mine. She was completely satisfied; she did not stop to notice every nuance of every taste, nor did she look around to watch her guests’ reactions. She was not fazed by the caliber of her food. She knew it was there; it was within her the whole time. Donatella simply enjoyed herself, eating mushrooms with her fingers and laughing with her friends. For that moment, she was not Chef Arpaia, but Donatella, eating with her hands in her own kitchen.

This is probably the same expression Donatella wore over the holidays, as her family celebrated Christmas in her home for the first time. “I want to bring back the traditions that my mother had but also add new ones,” she says. After watching her that evening as her authen-ticity came to life, it is clear that Donatella’s traditions will continue.

On Saturday, February 22nd, the historic Ybor City district of Tampa will be host-ing the 67th annual Fiesta Day, a street festival celebrating Tampa’s immigrant heritage. From 11 am to 6 pm, 7th Av-enue, also known by Ybor City natives as La Setima, will be transformed into a walk down memory lane as the sights and sounds of Ybor City’s golden age re-turn to life.

Throughout the day, the exotic flavors of Cuban and Spanish tradition will send your taste buds straight back to the turn of the century. The classic dishes of Ybor City’s original immigrants can be found at vendors all along 7th Avenue, so be sure to come hungry for an ethnic bite out of history. This dish was created during the cigar factory strike of the late 1920s, when immigrants relied on cheap, plentiful food sources, such as Cuban bread and blue crab. Long after the strike, deviled crab remains a local culinary treasure.

Fiesta Day also features quality arts and crafts unique to Ybor City’s heritage. 7th Avenue will be bustling with local art-ists and artisans offering one-of-a-kind artwork and handmade jewelry rich in Tampa’s Latin culture. Centennial Park is the home of the Ybor City Sat-urday Market, a Saturday morning tradi-tion offering fresh produce and gourmet foods to the Tampa community, and on February 22, flan becomes the culinary star of the market. This year, forty con-testants will compete for the Top Flan in Tampa Bay, along with cash prizes and Flan Fest bragging rights.

Flan Fest is the most delicious way to soak in the cultural heritage of Tampa’s immigrant background, as most of the flan recipes in the competition have been passed down from numerous gen-erations of Latin families. This was the case for the winner of Flan Fest 2013, Armando Delgado, a Ybor City native whose coveted flan recipe dates back over 70 years. There have always been a wide variety of flavors at Flan Fest, from the creamy traditional flan to white choc-olate-raspberry flan, but even the most different flan recipes seem to share the common ingredient of family heritage.

Judging for Flan Fest takes place at noon, and at 2 pm the Flan Eating Con-test invites flan lovers hungry for the Lat-in sweet and Ybor City tradition to eat their fill. This is one of the highlights of Fiesta Day for those who have a seem-ingly unsatisfiable appetite for flan. > It’s no secret Florida has the largest inventory of backlogged foreclosures in the country. Although the market has improved somewhat, 2014 is going to be another record year for residential foreclosures in the Sunshine State. The process takes on average an excruciat-ing 900 days to complete. In an effort to clean up, expedite and streamline the foreclosure process, the Florida Fair Foreclosure Act was signed by Governor Rick Scott in July of 2013.

So how does this impact you? What is the process if you find yourself caught in the foreclosure fray? Below are some points for homeowners to consider if faced with foreclosure:

1.Foreclosures are judicial in nature, meaning if the lender is foreclosing on the borrower, the lender will serve the borrower with at a minimum the sum-mons and complaint. The new Florida Fair Foreclosure Act requires the bank to provide the note with the lawsuit. A very sensitive timeline must be abided by whenever one is involved in litigation, it is extremely important you contact an attorney immediately upon receiving any legal paperwork.

2.The borrower generally must make good on the total payoff amount to be back in good standing with the lender. Oftentimes homeowners are confused as to why the mortgage company will not accept payments after initiation of the

lawsuit. This issue may be brought to the judge’s attention, who may enter an order dictating the payment obligations of the borrower during the pendency of the lawsuit.

3. Lenders are tough to deal with. Home-owners will find that, more often than not, the banks will not negotiate; they want their money, period. Representation by an experienced attorney will proof to be the most effective way to negotiate.

4. During the foreclosure process, it is important to stay on top of all other bills such as credit cards and car loans, how-ever keep in mind dealing with a foreclo-sure takes precedent. An attorney may be able to help you stay in your home and renegotiate other financial aspects of your life.

5. When a lender forecloses, the amount owed to the lender for the mortgage usually exceeds the value of the home or the foreclosure sale price. The difference between this sales price and the amount owed is known as the “deficiency.” If, after the house is sold, the bank does not recover the entire loan amount, the bank may sue the borrower for the deficiency amount. This is known as a deficiency judgment. The new Florida Fair Fore-closure Act has shortened the deadline for banks to seek deficiency judgments from 5 years to 1 year after the foreclo-sure sale.

6. Foreclosure judgments are final. This means the homeowner has no chance of recovering their home after entry of a foreclosure judgment. This provision protects the new owner of the property once its rightfully transferred from the bank.

7. There are many, many other consider-ations and every property owner’s situa-tion is different, so be savvy and consult with a lawyer.

The foreclosure process moves quickly and does not favor the homeowner. Based on the final nature of these judg-ments, it is essential to contact an at-torney to assist in the process from start to finish. Options may range from short sale to bankruptcy to refinancing the ex-isting loan.

So protect your nest and stay above the foreclosure fray by communicating with your bank at the first sign of financial hardship. You may just end up sending a candy gram to your banker... <

> We have all sat at the bar seeking what is new and the “it” thing going on in the spirit world today. By spirits of course I mean the tangible spirit that ends up in the glass your holding before you while sitting at your drinking establishment of choice. We have by now all been exposed to the resurgence of the classic cocktail and the rise of the bar scene as it once was in the heyday of speakeasies in and around the prohibition era. The trend, and a good one at that, has leached wonderfully into our local bars and brasseries. The enthusiasm at these local bars and restaurants to bring the properly built cocktail out of the ‘30s and into the here and now has been successfully integrated into our everyday lives. You all can name at least one place nearby that has shone you the light and opened your eyes to what a cocktail should taste like. The majority of these concoctions consists of a base spirit that usually revolves around vodka, bourbon, rum and of course gin. Imagine my delight when I heard rumblings of scotch being introduced coyly onto the realm of the mixed drink. A spirit that has its roots as a blended beauty to begin with; being shown how to express itself and play with other spirits while intertwined in the same glass. A love affair is sure to follow.

One such place to seek out the “scotchtail” is one of the longest running restaurants in Orlando. I speak of Christner’s Prime Steak & Lobster

Restaurant over on Lee Rd. Formerly Del Frisco’s; this has been a long running establishment that is loved by locals and visitors alike. Most of you know it, but now you have another reason to go back. I speak of the bar and what they are doing to stand proudly alongside the cocktail movement that our country has embraced. I will use them as a good example on how to showcase scotch as a spirit that can be successfully introduced to the cocktail menu. The great thing about their drinks is scotch has taken on the many forms of itself from strong and unyielding to playful and impish. A perfect example can be found in Christner’s Peach Scotch Smash. Fresh muddled peach and mint play nicely off the generous amount of J & B Scotch in this “scotchtail.” Lemon is brought to the party, which balances nicely with the Cointreau and rounds off this approachable drink nicely. This is one for the unsure and the “I don’t drink scotch,” drinkers to really see what they have been missing out on. I would start off with the Southern Lass, a blend of scotch, fresh lemon juice and house sweetened ice tea. This lass has a dark side that can get you in trouble in a way you kind of want to be in. She has manners but the longer you hang out with her the more she will forget them so grab a few of your friends and grab a round. My personal favorite is the Mamie Taylor because she brings one of my favorite things these days, ginger beer. In Florida I find this to be a refreshing way to go pretty much year round these

days. Mamie has an old familiar name in the realm of scotch, Famous Grouse. Add a touch of fresh lime juice and fill with ice and you have a sipper you can enjoy before, during, or after the meal. Do yourself a favor, go in and introduce yourself to the bartenders and ask them to show you the way to a new or old friend hanging out on the “scotchtail” menu at Christner’s. You will be glad you did.

They are a great example of what others are now starting to grasp and that is this is a new age for the cocktail and the bartender. Oan a side note I also noticed a bevy of singles from all different backgrounds at the bar. They were there in force and I can say no matter what you prefer you will be able to introduce yourself and walk out knowing you had a successful evening. I speak of course of their large selection of single malt scotches. What? What were you thinking? I know it is almost Valentine’s Day but slow down my friend. I figured since we were talking scotch I had to mention one of my favorite things to see at a proper bar and that is single malt. I am a sucker for Compass Box but you will not have any trouble finding the single you are looking for.

This is a great time to seek out your favorite bartender and find out what they have been creating as of late. I can speak for myself when I say I love when my bar guests and friends ask if I have been working on anything new or if there is something new they have to try. Introducing scotch to a cocktail is not new, don’t worry I am not that rusty so don’t try to nail me to the wall if I did not mention any of the classics. My point is this is a new time and your local bartender has a bevy of new playthings to bring to the party so enjoy it. So if it has been a while since you have cracked the bar menu or tried something new, these are the days to do something about it. I hope you get a chance to try the cocktails I highlighted above at Christner’s if you are in the area but if not at least seek a “scotchtail” out wherever you are. > Beyoncé Knowles is a name that there was no shortage of in 2013. To say she had a successful year is a gross un-derstatement. The American singer and songwriter was included in Time maga-zine’s yearly list of the 100 most influen-tial people in the world—among other notable accolades—and even had the pleasure of ending her year with a loud bang that came in the form the artist’s fifth studio album, Beyoncé. As a gen-eration that has seen Knowles rise from a third of a beloved pop group to inter-national superstar, if we know anything about her it’s that she doesn’t stop short of top quality when it comes to her ca-reer.

The now 32 year old was just a teenager when she and three others formed the R&B girl group, Destiny’s Child. After a few replacements, the final—now fa-

mous—line-up consisted of Knowles, Kelly Rowland and Michelle Williams. There shouldn’t be a need to remind you that Destiny’s Child became one of the best-selling female groups of all time, but here’s a little one just in case. The group has sold over 60 million records worldwide and if Knowles had ended her music career with their disbandment in 2005, I think everyone would have agreed she’d had a good run. But come on, we’re talking about Sasha Fierce here! Rather than quit while she was ahead, Knowles decided to continue the pursuit of her own music career and in doing so she proved that her peak had yet to come.

Last month, their little bundle of joy turned two years old—Happy Birthday, Blue Ivy! — and just one month prior to that, Knowles released her fifth studio album. Not too many artists would even dream of promoting a new album while simul-taneously handling the difficulties of raising a toddler, but that doesn’t seem to be the case with the unstoppable Knowles.

The self-titled album, Beyoncé, shocked the music industry when it was suddenly and exclusively released for iTunes on December 13th with no prior promo-tions. It sold over 820,000 downloads in just three days making it the fastest-selling album ever in iTunes history, the highest debut-week sales of Knowles’ solo career and of any female artist in 2013. As well as her first explicit album, Beyoncé is also described by Knowles as a “visual” album. It consists of fourteen

tracks with 17 accompanying short films. “XO” was chosen as the lead single off the album for both the US and world-wide. Since its release, the track has re-ceived wide criticisms for its sampling of audio from the 1986 Space Shuttle Chal-lenger disaster, though Knowles main-tains the audio is a tribute and that she meant no harm. Despite the negative publicity, “XO” has been received posi-tively by most music critics and is gradu-ally climbing up the Billboard charts af-ter debuting at number 66.

Her high-energy performances on stage have led to many calling Knowles one of the best entertainers in contemporary music. She has won 17 Grammy Awards and sold over 118 million records as a solo artist and 60 million with Destiny’s Child. She is undebatably one of the best-selling music artists of all time (as I’m sure Kanye West would happily let you know). She has achieved success in almost every venture she has set out on

> DesignerThings is a brand new site, which seems to be gaining traction very quickly. Though it has only been up and running for a few months, the Facebook fan page alone is pushing almost 9,000 likes. The company was founded by local entrepreneurs from well known Orlando businesses such as Dimitri Karabinis of Vines Grille & Wine Bar and several oth-ers. I had the opportunity to sit down with one of these managing partners, William Royall of Royall Advertising, to hear firsthand what all the buzz is about.

“DesignerThings is an online outlet store for high-end fashion, for designer brands and anything that we feel exem-plifies really good designs.”

From sunglasses and handbags to watches and lighters. Royall says the site is loaded with high quality, well-designed items and it’s safe to say that

the public doesn’t seem to disagree. De-signerThings is now selling on a national basis and even internationally with many orders going into Canada and overseas. Certainly there are a handful of factors which play a role in driving traffic to the website, but one major influence is its ease of use.

“We put a lot of focus on making sure our website is very clean, very easy to navigate and that the product them-selves have enough information on them. With better product images and better product descriptions we can show more information and better photos of a handbag than any other website that’s out there selling them for example.”

Another factor contributing to Design-erThings’ rise in success is their ongoing sale on high-end designer brands.

“Our pricing is unbeatable. We are buy-ing direct from these designer brands and getting these things in bulk. We have unique items that no one else has and we also have it priced at 40-70% off the typical retail price. Something that might cost $1000 can be found on our site for anywhere between $300-$400. Other designer sites offer flash sales which generates a lot of ‘I have to buy this now or else I’ll ran out of time and I might miss this deal.’ At DesignerThings we offer those really good deals across the board on a regular basis, not flash sales that run out within 24 hours on one specific product.”

“What I’m most excited about for De-signerThings is not just growing as an e-commerce company, but also constantly innovating for the future and being ahead of how fashion is sold online. We want to break the mold of how that hap-pens so eventually delivering the same day you buy it, being able to purchase it while standing in a subway, instantly buying something from the television show you just watched on TV and so on. It’s those types of innovative ideas. That is the direction we’re going to push with this.” <

> Dogs eat first and ask questions later, and that’s not always a good thing. Some foods, including pantry staples, can be dangerous, so pet owners need to be educated and vigilant. Tina Wismer, DVM, medical director at the ASPCA Animal Poison Control Center, walks through the top seven foods dogs must avoid.

XylitolA sugar substitute in many sugar-free candies and gum, xylitol can cause seizures and liver failure. It dramatically lowers a dog’s blood sugar levels.

Grapes and Raisins“Both can cause kidney failure in dogs,” says Wismer. If your children like to snack on them, make sure they don’t share. “Toddlers might innocently offer them to the family dog.”

Macadamia NutsThese nuts, popular in baked goods, will weaken or paralyze a dog’s hind

legs, though researchers don’t know why. “While it usually resolves in about 24 hours,” says Wismer, “it is very frightening.”

Yeast DoughIf you bake bread, be sure your pooch can’t get at the dough. says Wismer. “It will continue to rise in your dog’s stomach, and because alcohol’s a byproduct of the process you’ll have a drunk and painfully bloated dog.” In some cases, the expanding dough could rupture your dog’s stomach or intestines.

Onions“Affect red blood cells and can cause anemia.” Wismer says. In fact, a single small onion can be fatal.

ChocolateIt contains theobromine, an alkaloid, which causes seizures, accelerated heart rate, tremors and even death. Darker varieties are particularly dangerous.

OFF LIMITS

Moldy food“Molds may contain compounds that cause muscle tremors or seizures,” says Wismer. “We see a lot of citrus molding on lawns in California and Florida, and a moldy snack can mean a trip to the vet.” “Keep your pantry door closed, if possible, and store your food on the upper shelves. Also, educate yourself, family, and friends about what your dog should not eat.”

KITTY CORNER“CATS ARE SELECTIVE EATERS, SO THEY DON’T GET THEMSELVES INTO AS MUCH TROUBLE AS DOGS,” SAYS THE ASPCA’S TINA WISMER, DVM. BUT THAT DOESN’T MEAN YOU SHOULD LET YOUR GUARD DOWN. The biggest concerns are onions, garlic, and other members of the Allium family.Cats, like most other animals, are drawn to such foods, and that can be dangerous. Pay particular attention to senior cats’ diets, Wismer says. “To get an older cat with health problems to eat, some owners may give them baby food with onion or garlic powder. That can cause anemia.” Most foods that are bad for dogs will also harm your cat. Also avoid:A regular diet of canned tuna, which contains mercury that will harm a cat’s health over time. It also does not provide all the nutrition cats require. Dog food, which does not offer the proper balance of nutrients. Milk and other dairy foods, especially for adult cats, who cannot break down lactose. This causes diarrhea, vomiting, and, in extreme cases, inflammation of the pancreas. <

CityWalk, the restaurant’s menu is anything but “wastin’ away.” Recently, Margaritaville

Orlando has debuted its refreshed menu, bringing new life to its Florida-themed cuisine.

The new menu features island-inspired appetizers that transform your dining experience into a tropical vacation. The Grilled Shrimp Skewers satisfy your crav-ings for sweet and spicy with a Jamaican jerk glaze that is balanced by a sweet hint of sugared coconut and pineapple. The “Drunken” Shrimp Skillet, another exotic dish for shrimp lovers, is a skillet full of Caribbean tastes and treasures, as the shrimp is sautéed with tequila key lime butter, roasted garlic, onions, and pep-pers. One of the outstanding choices on the list of delicious new appetizers is the Beach Taco sampling. These tacos take you south of the border with the bold tastes of Carne Asada Steak and Braised Pork Carnitas. The steak taco is thought-fully crafted, as the simple additions of pico de gallo, cheese, and cilantro al-low the rich flavors of the carne asada to stand out. If you desire a spicier kick, the carnitas taco is the perfect choice to wake up your taste buds with its zesty salsa verde, while a generous portion of queso fresco cools down the heat.

The massage begins with warm stones placed in the palms of the hands, which represent the warmth of the Bahamian people, the warmth that I experienced firsthand each time I inter-acted with the friendly staff of Sandals. After a combined treatment of muscle stretching, compression, and manipula-tion techniques, the feet are exfoliated with sand from the Exuma beaches, fol-lowed by a light mist, representing the spray of the cool ocean waves. The 80 minutes spent on this massage seem to fade as quickly as the setting island sun, and I walked away as relaxed as the na-tive Bahamians, not even aware of the time that had passed.

Although relaxation is one of the pleasures of a romantic getaway, you may want to dip your toes into a sea of adventure. The island of Great Exuma is full of exhilarating escapades, and Sandals Emerald Bay offers excursions that will send you and your significant other on journeys that will make sparks of excitement fly. These excursions include transportation from the resort to your destination and last anywhere from a few hours to a full day, depending upon your appetite for adventure. One of the most popular excursions, the Ocean Safari, is a four-hour tour of the beautiful Exuma islands that allows guests to discover the wildlife of the Caribbean. On this excursion, as soon as the Ocean Safari powerboat took off from the dock, my trip to the Exumas became a dimensional experience; it was enthralling to watch the colors along the surface change with the angle of the sun as we traveled at high-speed through the shallow waters.

The Caribbean Sea is breathtaking from the shore, but when you are pulled full-force on a powerboat into its waters, it literally takes your breath away.

The first stop on this journey is quite unique, to say the least. Although it is debated as to how they first appeared on the islands, the infamous swimming pigs have become the star of the tour, boldly approaching their visitors with ironic charm. Loveable and enthusiastic, these swimming pigs are a perfect start to your Exuma adventure. The excursion continues with

a trip to an island filled with Bahamian rock iguanas, an endangered species of friendly lizards that roam the island with their majestic spirit. As there are only 300 left in the world, it is a marvel to experience these lizards in their natural splendor. When I visited the Bahamian rock iguanas, I found myself amazed at their strange beauty; their glowing red-rimmed eyes seemed to stare at me with peaceful satisfaction, and they walked the island unafraid of their human guests. The most amazing feature of these lizards is their unexpectedly silky skin. As my hand reached the back of one of the larger iguanas, my preconceptions of its texture were shattered; its smooth skin, composed of mosaic-like squares, rivals the beauty of the Caribbean waters, with colors that range from rosy champagne to smoky charcoal.The tour is completed with snorkeling over a shallow reef, where you can catch a glimpse of the diverse fish of the Exumas. This was my chance to feel like a real mermaid, swimming among

the creatures of the sea in water as clear as the air above. As wonderful as the Bahamas are on land, the islands are nothing compared to the endless life under the sea. During your stay at Sandals, take hold of your true love’s hand and your adventurous spirit and dive into an excursion of a lifetime!

A romantic retreat would not be complete without delicious dining, and Sandals Emerald Bay offers a variety of seven restaurants that specialize in different tastes, from local Caribbean cuisine to fine Italian cooking. La Parisienne, Sandals’ signature French restaurant, serves as a lovely finale to an enchanting day spent at the beach. Paris is perhaps the most romantic city in the world, but Great Exuma challenges that theory by transporting the romantic aura of Paris to the unparalleled paradise of the Caribbean. La Parisienne entices your senses with contemporary sophistication and an innovative menu, and whether you dine inside or on the terrace, the formal white-glove service transforms your dining experience into an evening of elegance.

I found the menu of La Parisienne to be an ideal marriage between the French and Bahamian cultures, as the restaurant specializes in seafood as well as Parisian flavors. One of the delights on the menu is the salmon, served with a lemon-crème sauce, tender root vegetables, and mixed greens tossed in a light vinaigrette. This colorful plate enhanced my Caribbean evening with the subtlety of French inspiration. The lemon meringue is a refreshing dessert, paired with a petite fruit tart overflowing with ripe mixed berries and a light whipped crème. Any delicious choice at La Parisienne is sure to become a happy ending to your evening of romance.

After experiencing Sandals Emerald Bay, I learned that the best attribute the resort has to offer is its ability to make couples feel as though they are the only two people on the island. There are countless locations to find seclusion from others: poolside cabanas for daydreaming, cozy fire pits that turn moonlit nights into romantic memories, and hammocks held by palms that are

large enough for two people to unwind and indulge themselves in the cool island breezes.

When Art Sparks the Fantasy

> “The purpose of an artist is to create, educate, inspire and open up a world of fantasy to the viewer,” Sven ‘DEBO’ Bode believes. “Art shouldn’t be compli-cated; it should be enjoyable and com-municative. Pure and real!” he says. His vibrant, abstract images take you into a contemplative state – a state of being where you may even “meditate [your] own mortality.”

It seems that he had discovered his pur-pose in life at an early age. At five years old, DEBO knew he had a calling when he stood in front of his kindergarten classmates and began creating artistic images on the blackboard. “To receive the undivided attention of my audience

felt right,” he recalls. At this early age he realized he was up to something, he had a mission to create beautiful things for others to enjoy. Growing up in Germany, surrounded by its rich history, deep cul-ture and quality education, he pursued his passion with his first art works: Black and white drawings on paper. At the age of fifteen, his art teacher and friends con-vinced him to display about twenty of his pieces in an exhibition in Hannover, his hometown. “They were mainly deep, somewhat dark, dreamlike drawings of people,” he told me. “Some were done with different pencil techniques, while others were time-consuming ink dot drawings.” These pieces caught the at-tention of critics who recognized the

teen artist’s genius in his technique. He ended up selling most of his drawings at the exhibition.

Then, at seventeen, DEBO set out to dis-cover the world. He first moved to Berlin where he began his university studies in engineering. His true passion, however, pushed him to also attend art workshops and classes at Berlin’s Academy of Arts. Always a frequent visitor to the city’s astounding art museums, he studied the great masters. And at the National Gallery, he had the opportunity to at-tend lectures by the world-renowned Modernist, Joseph Beuys. Dalí’s, Jackson Pollock’s and Marc Cha-gall’s works, it was Joseph Beuys who gave him the confidence to pursue his own style and display his pieces in gal-leries. Beuys (1921 – 1986) reinvented the avant-garde in Germany, with a fair bit of controversy on the side. According to MoMA, Beuys didn’t see a separation between art and society. In his last twen-ty years, he devoted his time “to both art and constant activism for socioeco-nomic reform.” Provocative artist, activ-ist and professor of art, Beuys further sparked DEBO’s artistic talents. DEBO may not have used fat and felt (Beuys’s signature materials), but he spent years experimenting and exploring his own style. During this period he traveled

around the world, visiting countries and cities in Europe, Middle East, Africa, Asia and in the South Pacific. These experi-ences influenced his artistic phases.

But his moment of artistic epiphany oc-curred in 1993.

Can you merge the corporate with the creative? This question had always pre-occupied DEBO’s mind, more so, when he was a successful business owner in the advertising industry. That’s why he created the alias “DEBO,” a play on the artist’s last name. He wished to set his creative identity apart from his corporate one.

“No one understands that a successful business mind can very well also be a very creative artistic one,” he said.

“It was a Saturday,” DEBO told me. “I was coming down the steps from my of-fice’s building, ready to cross the street,” he remembers. There, ahead, walking toward him, he spotted His Holiness the XIV Dalai Lama with his bodyguards. “The Dalai Lama was on a political visit to Berlin and may have wanted to dis-cover the real people of the city,” he said. This chance encounter was about to have a profound impact on the art-ist. “I will say ‘Hello,’” he thought and tried. After the bodyguards made sure that he was of no threat to HH, the Dalai

Lama, charismatic as always, ended up sitting down with DEBO by the steps of his office building. They chatted about life, spiritual moments and art. “He ad-vised to create beauty from the heart and what is part of my inner self, to give enjoyable moments to the people,” the artist remembers. After their chat, DEBO was ready “to make the commitment to present to the world his message.” His new artistic persona was a fusion of the corporate and the creative. See, it was not only through art that he would “cre-ate.” Whether it is through fashion pho-tography, industrial engineering, maga-zine publishing or painting, DEBO fulfills his passion.

He reinvented himself as an artist in 1994 with his Ethno series, acrylics on canvas. More than sixty large paintings were cre-ated over a period of time, some pieces

reaching prices of over $20,000. Collec-tors are frequently asking for more re-leases from the artist.

“Travel widens your horizons, liter-ally,” he told me. Taking in various cul-tures and sights, he played with global themes, putting his touch on each can-vas. The Ethno series (paintings ranging from colorful simplistic figures to near expressionism-realism) defined the artist as the “missing link between pop art and cave drawings,” he says.

“Like life, we evolve and everything changes,” DEBO says about his different art phases. His abstract phase, consist-ing of impressive oil paintings on canvas, began in 2005. “Heart” (2006, 48” x 60”) is one of these large paintings. Although abstract, it looks as if you can feel and hear the organ pounding. Vivid, deep

reds give it life and guide you through a world of emotion.

“Oil allows you to work in many layers, using massive material to create deep emotional textures,” DEBO said. “Oil is a very active medium. Characters evolve while painting, it’s intense and I can’t seem to work fast enough to see the result of my initial idea,” he told me. The artist uses pallet knifes, spatulas and custom made tools to bring the color on the canvas and to form movements, hid-den figures and symbols – sometimes using sand or dirt to add more structure, texture. “Everything is allowed to create an imaginary journey, a natural look [and feel],” he said.

His abstract heart painting, along with his goal to widen the access to original art, inspired his newest project. PopHeart®

celebrates love and emotion. It’s mixed media on high-end 300g cold press art paper and each original is 18” x 24”. “Anyone can read the meaning,” DEBO says about his new series. Not only is its love theme universal, the heart series is original art that’s affordable. (Originals starting in the low $200s.)

The artist will donate a portion of every PopHeart® sale to a charity close to his heart. And it has already caught the eye of art aficionados who have asked for ap-proximately fifty pieces to be displayed behind the front desk at an upcoming Shanghai hotel.So which phases and which pieces are DEBO’s favorites?

“All of them,” he told me. It’s hard to part from his creations. Each painting means something different and special

to the artist – “Each one is a part of me, my history, my heritage, my blood, my immortality.”

DEBO’s art has been exhibited in Berlin, Tel Aviv, London, Tokyo, L.A., Miami, Or-lando, and Alys Beach, Florida. He now looks forward to Art Basel Miami Beach 2014 where he’ll exhibit his latest piec-es. And he’s not only looking forward to more exhibitions, he’s also actively seek-ing gallery representation in the U.S. that match his vision.

Also, he has a wish, he wants to see Orlando’s art scene grow. Part of the DAD (Downtown Arts District of Orlan-do) board, he helps promote the arts through special projects. Established in 2000, DAD’s mission is to enhance art education, promote cultural tourism, and promote art venues and events in

downtown Orlando. He wants to see more galleries, more outlets, so that Orlando can attract more artists and art lovers.

“In art, the hand can never execute any-thing higher than the heart can imag-ine,” said Ralph Waldo Emerson, and DEBO does just that. Staying true to his heart, his passions and emotions, he paints bold creations that spark the fan-tasy. <

> Near the Tantabiddi Entrance to the Ningaloo Reef, a newborn Humpback whale struggled to stay afloat. Closely swimming next to its mother, only the tip of its snout broke the surface – the baby didn’t know how to breathe. That’s when its mother dove below and with her upper jaw lifted her newborn high above the water. She held it tenderly in this position for about ten seconds while the calf took its first breath. Curt and Micheline Jenner, of the Centre of Whale Research at Western Australia, witnessed this in 2009 and documented for the first time this natural, breathtaking moment that’s so rare to see in the wild.

“This is only the start of an amazing journey for the calf,” Wyland says. “Over the course of its life, it will travel thousands of miles and encounter many dangers, but for now it will be safe in the protection of its mother.”

The Marine Life Artist captured this moment in his 2011 painting “First Breath Portal,” and later recreated it as a sculpture. “Humpbacks – The First Breath” is the official 35-year anniversary bronze, celebrating Wyland’s artistic journey and quest for environmental awareness.

Wyland officially began his journey into the art world in 1978, with the opening of his gallery in Laguna Beach, Calif. A painter, sculptor, muralist, writer, filmmaker and music producer, his mission has been to showcase the “world’s finest marine life art, introducing people to the power of nature, and giving back to the communities everywhere,” Wyland writes. “[It] has redefined what an artist and an art gallery can mean to the world.”

On November 9th, 2013, Wyland visited his gallery at Disney’s Boardwalk Resort

in Lake Buena Vista, to unveil his new artwork at an open-to-the-public event.

“Animals need a voice,” Wyland told me. “Painting goes further than a photograph,” he said. “There’s a spiritual quality to art, like how you feel when you’re immersed in nature.”

He saw his first whales, two grays, when he was fourteen years old. Before disappearing into the Pacific, they stuck their fluke straight up above the water. This image has been embedded in the artist’s psyche.“It changes you,” Wyland told me. And that’s what he wants his paintings to do – change you, inspire you.

But it’s not just through art that Wyland spreads his green message. In 2013, the Wyland Foundation celebrated its 20th anniversary. Through art and science education, Wyland and his non-profit

foundation have inspired millions of young people to become ambassadors for the planet.

He loves mentoring kids, he told me. This generation is more aware of the environment and more interested in conservation efforts, Wyland noted. They just need that extra jolt of inspiration to take action and help save our planet.

Can one person change the world? It’s possible if one is a big dreamer and doer.

Inspired by Walt Disney and Jacques Cousteau, Wyland wants to share his love for the world’s oceans through creative and innovative ways. And he’s thinking big, really big. One hundred life-size whale sculptures will be placed in cities around the world. The cities not only have to provide the land, they have to “earn” these art pieces too. That is, they have to take an active role in environmental conservation. The first sculpture was placed at the Beijing International Sculpture Park in China. (Wyland will not disclose the others’ location.) What makes the artist’s

monumental project more exciting is that ten of these sculptures will be underwater.

Last fall, Wyland launched a national mural contest for K-12 students in an effort to save art education in North America. And this April the 2nd annual National Mayor’s Challenge for Water Conservation, sponsored by the Wyland Foundation, invites you to visit mywaterpledge.com and make a direct pledge. Besides saving money and reducing pollution, you may win a prize, like a Toyota Prius, that will make it easier to go “green.”

At the Disney’s Boardwalk event, Wyland welcomed guests of all ages. An intimate crowd gathered around the charismatic artist as he showed us his newest work, including the “Cool Arctic Waters” orca painting. During the summer months, these beautiful animals play and feed in the Arctic waters. In the painting, Wyland recreates a scene of orcas foraging for food and enjoying the midnight sun. “It’s always fascinating to consider the lives of these beautiful animals in places that we would consider inhospitable,”

Wyland writes on his website. “But they are perfectly adopted not only to survive, but to thrive.”

As Wyland began painting an original piece, a sea turtle swimming in its underwater world, “Dirty Oil” played in the background.

“Turn up the volume,” Wyland asked. He wrote the song for his Blues Planet III album.

“I will never forget your dirty oil spill,” blues artist Taj Mahal sings. “I never will forget that burning platform,” he continues, referring to the 2010 Gulf of Mexico Oil Spill, reminding us that the fate of our oceans lies in our hands. <

GETTING A LEG UP IN FASHION

> If you shied away from wearing

leggings because they were fitted or

because you felt they were revealing,

think again. During the 1980s, leggings

gained popularity as workout attire and

were worn by those with good physiques.

Today, almost everyone owns a pair of

black leggings because they are easy to

wear and comfortable. The Lycra in the

material allows us the comfort to move

and bend with ease. Leggings are one

of those fashion staples that will permit

you to go from the gym to the office

with a quick addition of a tunic length

top, sweater, or jacket. Keeping your

leggings a neutral color (black, brown, or

charcoal grey) will make it easy for you to

wear them with everything.

Leggings offer versatility and will fit most

body types; petite, tall, thin, and plus-

size. Knowing what to wear with them

is most important. Worn under shorter

dresses or longer length tops that cover

your bottom, leggings offer support

while making a fashion statement.

Let’s break down body types even

further:

Apple: Fullness in the middle means

you don’t want to tuck anything in.

Avoid belting as it will draw the eye to

your waist. Wearing a monochromatic

color scheme such as black with a bright

jacket will give you a longer appearance,

camouflaging a full tummy. The same

color top and bottom will not cut you off

visually at the middle.

Pear: Fullness in the thigh, hip and

bottom means you want to avoid tops

with elastic bottoms. Any style top that

stops at the full area will draw attention

to it. A-line styles with shearing under

the bust will skim the hip area rather than

stretch over it. Tops with detail around

the neck will draw the eye upward as

well. Bottoms should not have pockets

on the hip or side because they will add

fullness. As with apple shapes, tucking

in a bulky top can give the appearance

of a larger size.

Hourglass: Bust and hips that are in

proportion with a small waist means you

can wear almost any style. Try teaming

your leggings with a cropped jacket

layered over a longer cotton top.

As a previous fit model — fit models

try on samples and make comments on

the fit; corrections are made until the

garment fits properly — I learned fit is

more important than style. Garments

should not pinch, pull or stretch over

your body. A proper fit means comfort

throughout the day. Our generation has

embraced the fact that you no longer

have to sacrifice comfort for style.

Leggings afford you the opportunity for

both comfort and style.

Try on a variety of brands and look for

fabric with at least a 2% stretch fabric;

this allows for movement and comfort

without the sagging in the backside

while you are wearing them.

Caring for your leggings is easy –

machine wash cold, line dry. Garments

with Lycra should be hung to dry, as this

will extend the life of the item. Please

be sure to read the care instructions on

the label. Drying in high heat may cause

damage over time. Although washing

instructions may say to dry using medium

heat, I prefer to hang dry.

Finally, to complete your look, you

will need appropriate footwear. Your

activity throughout the day will dictate

the style of the shoe. For example, an

active mom, student, or athlete will want

sneakers or flats to keep up with their

daily activity. For a trendier fashionable

look, you may opt for high heels or

boots that may be worn to a dinner party

or date. Business women will want to

choose a more conservative shoe such

as a neutral colored pump or flats while

avoiding excessive buckles and straps.

You can have all the beautiful out-

fits in the world but if you don’t co-

ordinate with the right shoes, you

just can’t look good. Make sure

you look good from top to bottom.

> Valentine’s Day, to many, symbolizes and celebrates the love and attraction one has for another person. Although love is something worth celebrating every day, it is a girly-girl’s dream to feel extra gorgeous on Valentine’s Day. Even men agree: something about the holiday of love makes them want to pull out all the stops for that special someone. Whether this is your 40th Valentine’s Day together or your first, looking great on a romantic date helps reignite the flame in any relationship. When I think about getting ready for a Valentine’s Day date, I consider what I am going to wear, what my hair is going to look like, and I will even find a way to incorporate those new shoes I have been waiting to show off. Forget flowers and candy; getting dolled up is better than chocolate! For women, primping for the big night is almost as exciting as the night itself. When it comes to Valentine’s Day tips and tricks, it is important to know what preparations are worth spending your precious time on and what are not.

LET YOUR HAIR DOWN.Research shows that men prefer women with their hair down on dates. The ponytail or bun is a great look when you are working long hours at the office, but on a date, men like to feel that you are having a good time. Letting your hair down symbolizes that and also shows off your sexy new haircut!

DO WEAR A LIP STAIN, BUT SKIP THE GLOSS.On Valentine’s Day, romance is certainly in the air, and if your night is going as planned, you can bet on a goodnight kiss. Lip-gloss is a huge no-no on dates; nothing is worse than the feeling of sticky goop on a woman’s lips. Can you say turn-off? Sure, gloss looks nice in pictures and under certain lighting, but most men don’t notice gloss until it’s being pressed up against their lips. The last thing you want is for your date to wipe their mouth after a kiss, so don’t give them a reason to! Skip the gloss and opt for a lip stain instead. A lip stain will give you long lasting lip color on a night filled with social interaction and delicious food, and you should never have to worry about re-applying your make up on a date.

WEAR YOUR SIGNATURE SCENT. Scent is a very powerful thing, and, if applied correctly and chosen carefully, your scent can be your trademark. Instead of testing out a new fragrance on the big night, it is best to stick to your usual pick. Men and women (especially men) subconsciously use scent as a trigger for reminiscing, and it almost always triggers a positive memory.

FEEL SEXY IN YOUR OUTFIT OF CHOICE.There is nothing sexier than confidence, and a great outfit is the ultimate confidence booster! Instead of worrying about the latest trends and what looks good now, think about what flatters your personality and body type. Accentuate your curves and femininity without giving too much away. Men are visual creatures, and they will notice your outfit before they notice your hair or makeup.You can never go wrong with the classic little black dress. Always remember that Valentine’s Day is not just for the couples of the world to flaunt their love openly. Valentine’s Day is about love, and love comes in many forms. Even if you do not have a valentine this year, don’t fret; you can still embrace the love. Love yourself, and be your own valentine. Buy yourself something nice, or pamper yourself for the day. <

> New scientific research is proving what doctors from BluePearl

This information is according to a recent editorial in the New

York Times by Dr. Gregory Berns, a professor of neuroeconomics

at Emory University and the author of “How Dogs Love Us:

A Neuroscientist and His Adopted Dog Decode the Canine

Brain.”

The editorial titled, “Dogs Are People, Too,” explains how

Berns’ research has been confirming pets can differentiate

between their owners and other people, and actually have

emotion and feelings for certain things, people and smells.

Usually, when a pet is placed in an MRI, they have to be under

anesthesia to remain still. However, Berns has trained the dogs

in his study to get into the MRI and remain still voluntarily.

This allows scientists to study how the dogs’ brains react to

certain things while they are awake.

“This is absolutely wonderful research and proves what we have

believed for years,” said Dr. Neil Shaw, chief medical officer

SHEN YUN PERFORMING ARTS Shen Yun Performing Arts show is more of an experi-ence than a performance, as it takes you on a jour-ney through over 5,000 years of Chinese civilization. It intertwines classical Chinese dance, live orchestra, beautiful costumes, and animated backdrops to en-hance the experience. This show focuses on the tradi-tions of the Chinese arts. The dance sequences are classical Chinese dances that are similar to martial arts, making the dances very demanding and expres-sive. The music is also traditional, right down to the instruments that are played. Overall, this show is a just as cultural as it is entertaining.
