W _ith the conclusion of the HP Byron Nelson Championship
and Memorial weekend, our summer activities at the club
are officially in full force! Contrast that with the Great Lakes
region of the country (where my corporate executives reside), where it might
take until July 4th to finally go swimming. That’s a particularly nice feature
of our weather and The Sports Club, because the Grill-n-Chills on Friday
nights are now the premier attraction of the summer. If you’ve not yet enjoyed
Racquets and the north end of the property on the weekends, I think you will
be very surprised at the energy!
Fifty years is a long time. This year marks the 50th Anniversary of the Four
Seasons Hotels and Resorts. With 84 hotels and resorts in 34 countries, it is
synonymous with luxury service, elegant spas, and fine restaurants. Of course,
The Sports Club goes above and beyond with our incomparable facilities,
and we members are the beneficiaries of such a fabulous club experience. In
addition, I just turned 50 years old in May—and no, I didn’t have to produce
my birth certificate (despite constant demands from Donald Trump and the
Tea Party). So, without radical medical advances, I’m now likely playing the
11th hole of my “back nine.” The Toronto-based Four Seasons Company
celebrated their Golden Anniversary in style at the swanky Beverly Hills
Four Seasons LA, and I celebrated mine alone at home with a bottle of Jose
Cuervo... See the similarities?
Rest assured, I will pick myself up and continue to guide the Board of
Governors and Operating committee process through the rest of my term,
mid-life crisis or not!

O n April 17, Four Seasons Resort and Club held its annual employee celebration. This
year held particular importance as this spring marked two very significant milestones:
Four Seasons’ 50th anniversary and Four Seasons Resort and Club’s 25th anniversary. The
celebration carried a “Now and Then” theme, taking us all back to 1986. Believe it or not, there are 16
staff members who have been here the entire time, most of them working here when the Club first opened in 1983 in advance of the hotel.
This dedicated group was acknowledged with rousing applause for their unwavering commitment.
The highlight of the evening was our staff Superstar of the Year announcement.
Two of our staff members who are consistently applauded by our members had a huge
night. I am elated to announce that Su Howe, Members Lounge, was acknowledged
as the runner-up for Superstar of the Year. And, drum roll please, David Aigbe,
Locker Room, was awarded Superstar of the Year for 2010! David and Su have a
combined 35 years of exemplary service to the Club. When you see Su and David,
please congratulate them on this well-deserved accomplishment!

Please join all of us in welcoming Luis Argote as General Manager and Patrick Pollak as
Hotel Manager of the property. Together they make a formidable team who bring a
strong background in customer service and award-winning hotel operations.
“It is rare for a Four Seasons property to replace its senior leadership team of General Manager
and Hotel Manager all within one month, but the fact that we did it at Four Seasons Dallas speaks to the
depth of talent already in place,” says Club Manager Rob Cowan.
Luis Argote is only the fifth person to hold the title since the Resort opened 25 years ago in
April 1986. Argote most recently served as General Manager of Four Seasons Resort Costa Rica and
opened the property, spending six years at what is recognized as the leading resort in that country. A
native of Caracas, Venezuela, Argote joined the travel and tourism family business at a young age. He
is fluent in English, French and Spanish, and enjoys golf, cycling and the arts. Argote’s wife, Shanna, is
originally from Arlington, and they and their two sons reside in Southlake.
Patrick Pollak serves as Hotel Manager, responsible for the daily operation of the hotel, spa and
salon, and the services it provides to both our Club members and resort guests. He and his wife, son and
daughter join us from Four Seasons Mexico City. Patrick is a native of France, spent much of his life
and career in Mexico, and is fluent in English, French and Spanish. While he brings a strong background
in food and beverage, his primary focus is on daily customer service and the optimal operation of the
facilities. He and his family reside in Flower Mound.
The Resort and Club leadership team bid a fond farewell in February to former resort General
Manager Michael Newcombe, who is on a new assignment at Four Seasons Westlake Village, and to Hotel
Manager Gianluca Sparacino, who now oversees food and beverage operations throughout Four Seasons
properties in Europe. We wish both of them well, as they guided all of us through a very challenging part
of our resort history!

S ports Club members can help us make our golf
courses a better habitat for native bird species
by helping paint, build or install 100 birdhouses on TPC and
Cottonwood Valley this summer. Starting Memorial Day weekend
and running through Labor Day weekend, we will have a variety of
approved birdhouses ready for pick up at Kids For All Seasons. For
a $50 fee, you will pay for your birdhouse AND support the Tree
North Texas Project, which is planting three million trees in the area
over the next ten years. This is the largest tree project in the USA!
We will have a workbench, supplies to paint or build your birdhouse
and autograph it, a certificate of authenticity, and we’ll document
where your birdhouse goes when our team of volunteers hangs it in
our designated “natural areas.” If you want to install it yourself, we
can arrange for that, too! Native bird species we are supporting this
summer include chickadees, Carolina wrens, bluebirds, wood ducks
and screech owls.
This very special environmental initiative will help us achieve
Audubon International Certification, which means we are actively
enhancing the environment on our golf courses through the reduction
of water, chemicals and pesticides, and fostering the development of
natural areas for our native wildlife and bird species. We encourage
all our members to take part in this great family activity over the next
few months!

This also means the rough is up.
When you find your ball in the rough, make a
few adjustments. Place the ball slightly back in
your stance, grip the club firmer and make more
of a descending blow on the golf ball. These
adjustments will allow for more solid contact and
keep the clubface square through the rough and
at impact.

I t’s time to break out the water hoses and get ready for the heat. Our bentgrass greens
are a cool-season turfgrass that really does not like the extreme high temperatures we
experience here in the Dallas area during the summer months. Last summer was one
of the hottest on record, and we are hoping for some milder temperatures this year.
During the day, the bentgrass plant undergoes a process called respiration, which is a lot like
perspiration. Respiration is a process by which the plant loses water to help cool the leaf surface. The
bentgrass plants’ respiration is really ramped up when the temperatures are extreme. We monitor and
apply moisture very precisely using water meters checking in the morning and afternoons.
Fans also will be installed around some of our greens complexes where additional air movement is
needed. This air movement across the green is much like a cool breeze for you and me as the plant is
respiring. When temperatures get really hot, we are able to place temporary fans around the greens to
help with air movement.
We have aggressively aerified this winter so that we could minimize disruption to the putting surfaces
during the hot summer months. The less stress we put on the putting surfaces during the summer, the
more energy the plant will have to fight off the heat.

S ummertime is a fantastic time at the Sports Club, with activities for everyone in the family to enjoy.
Starting with the littlest ones, there are swim lessons at the Family Pool. Each year, more kids are learning the basics of water safety and developing skills to allow them to fully enjoy summer fun in the water. Our Summerfest Camps are better than ever, thanks to consistent programs year-on-year, but more importantly the best team of camp instructors who have many years of experience teaching in our camp programs. It is a blast for the staff to see kids coming back each year and watching them grow and develop.
New this summer is a Summer Shape-Up Program offered by Personal Trainer Lori Hickey. This program sets you up for improving your health and wellness through detailed benchmarking of your current fitness level, then developing a workout regimen with Lori over a minimum of 12 training sessions. Lori’s hands-on approach will guarantee that you will feel cared for, supported and pushed to reach new heights.
Thanks to our Golf Fitness guru Brad Davis, you can “Shape Up Your Swing” this summer by participating in his six-week program on Wednesday evenings beginning June 22. This is a must for golfers who could trim strokes off their score by improving strength and flexibility.
If these activities are just too much for you, simply kick back and enjoy Friday night Grill N’ Chills and Dive-In Movies at the Family Pool, Tennis Happy Hours, Independence Day Festivities and much more!

¼ each Avocado
1 ounce Kernel Corn
1 ounce Roasted Red Bell Peppers

Travel is necessary to keep the wine lists at Four Seasons Resort and Club fresh and dynamic. Travel reveals the traditions and trends that allow the lists to remain interesting.
As I sit in São Paulo airport after a trip to one of the emerging regions of the world, I reflect on the surprises that I encountered at the Expovinis wine trade fair and the vineyards of the Serra Gaucha region of Brazil. The expectation is for wines of a similar style to Brazil’s South American cousins Chile and Argentina. However, this is not the case. The wines (especially the reds) have lower alcohol levels often in the range of 12.5-13.5%; more acidity which makes the wines feel vibrant, alive, and refreshing; and, a determined moderation in oak usage which shows the purity of fruit achievable here. Add a dash of European minerality, and the wines are beautifully balanced.
On the trip previous to this, I visited New Zealand where the Syrah grape makes amazing wines. Unfortunately, fewer people are drinking Syrah these days. This presents an opportunity for New Zealand to rehabilitate Syrah’s waning image. Again, the wines are fresh with acidity, making them delicious matches for food. The ripe berry fruit is highlighted. And, the moderate body doesn’t overwhelm as with so many Syrah’s that caused the revolt against this lovely grape. I hope that more people who enjoy red wines will retaste this grape.
Earlier this year, I traveled to Lebanon. Not known in the wine world at large, Lebanon has a winery that is iconic: Château Musar. The wines of Chateau Musar can be consumed upon release, but also can be held for 10 years or more. In an effort to present the wines after they have achieved their vinous adulthood, the main red wine from Chateau Musar is released seven years after the harvest. I tasted red wines to 1952 and white wines to 1954. Several years, including
red wines from 1964 and 1995, were among some of the most extraordinary that I have tasted. That such wines have been produced in the Bekaa Valley and throughout the civil war of 1975-1990 leaves one in awe.
I hope that you will explore new wines from both emerging and classic regions. Your adventurous spirit is certain to be rewarded.

A few dos…1. Do consider a morning event versus an afternoon event to
avoid the Texas heat.2. Do offer your guests a cool beverage upon their arrival. A glass
of iced tea or lemonade is a thoughtful way to greet guests.3. Do freeze lemonade or iced tea in ice cube trays. That way, as
the ice quickly melts, the tea or lemonade doesn’t get watered down.
4. Do plan a lighter menu. Fresh fruit skewers and assorted fresh green salads are the perfect accompaniment to a main entrée.
5. Do consider a brightly colored linen versus flowers for a pop of color. Flowers tend to wilt!
And a few don’ts…1. Don’t serve items that sweat. Cheese and deli meat are meant
for indoor events only!2. Don’t plan a formal affair. It isn’t kind to ask guests to wear high
heels and three-piece suits in 100 degree weather.3. Don’t forget music! Pandora Radio and iTunes are great,
