Thanksgiving is just around the corner, and let’s be honest while the turkey is the main attraction; the sides are what we pile high and can’t wait to sample. When your sides are loaded with flavour and nutrition, neither you nor your guests have to be too concerned with packing on the holiday pounds. Check out some of these healthy but delicious versions of your holiday favourites. I promise you won’t miss the excess calories!

Squash SoupCreamy velvety soups are perfect for the season, with sweet

and earthy vegetables being so easily available in stores and supermarkets. Sweet potato, zucchini, pumpkin, and my favourite, squash are nutritious complex carbohydrates loaded with vitamins, minerals and fiber. The typical cream of ‘whatever’ soup is very rich in flavour and calories, the latter we don’t need so much. This butternut squash soup is a great mix of fall ingredients ideal for the holidays with much less fat and sodium for a guilt free delight.

INGREDIENTS4 tablespoons unsalted butter1 medium onion, coarsely chopped1 celery rib, coarsely chopped2 garlic cloves, coarsely chopped1 cup dry white wine1 quart low-sodium broth1 quart water4 pounds butternut squash—peeled, seeded and cut into 1-inch cubesSalt and freshly ground white pepperLarge pinch of freshly grated nutmeg

In a large pot, melt the butter. Add the onion, celery and garlic and cook over moderate heat, stirring, until softened, about 5 minutes. This will allow the onions to become caramelized and just delicious. Add the white wine and simmer for 3 minutes. Add the stock and water and bring to a boil. Add the squash, cover partially and simmer over moderately low heat until tender, about 30 minutes.

Working in batches, puree the soup in a blender. Return the soup to the pot, bring to a simmer and season with salt, white pepper and nutmeg. Garnish with the pumpkin seeds, a little nutmeg or sprig of rosemary.

This provides 10-12 servings and can be refrigerated for up to 2 days.

Cran-Blueberry Sauce

The star condiment of the feast is the cranberry sauce. In this cran-blueberry sauce you get to skip the refined sugar and add more berries for the perfect blend of sweet and tart.INGREDIENTS1 (12 ounce) package fresh cranberries1 cup water½ brown sugar1 teaspoon ground cinnamon¼ teaspoon ground nutmeg1/8 teaspoon ground allspice1 pint fresh blueberriesWash and pick over cranberries. Place in a medium saucepan with water, and sugar. Bring to a boil, reduce heat, stir and simmer for 10 minutes or until cranberries burst.Slightly mash the cranberries with the back of a wooden spoon to ensure all skins are broken. Add the cinnamon, nutmeg and allspice. Mix well.

Remove from heat and mix in the blueberries (be careful not to over mash). The sauce will thicken as it cools.Transfer to a bowl, cool slightly and place plastic wrap directly on top of sauce to cover. Refrigerate until chilled or serve warm.

Honey and Rosemary Sweet Potatoes

A dish of candied yams or sweet potatoes is another holiday favorite that can easily be modified to reduce calories from simple sugars but retain all the great flavors we love. Rosemary added to honey in this sweet potato side creates a unique dish that will also develop a glorious scent throughout your home.INGREDIENTS 2 tablespoons olive oil¼ cup honey2 tablespoons chopped fresh rosemary1 teaspoon salt1 teaspoon freshly ground black pepper3 large sweet potatoes, peeled and cut in 1-inch cubesPreheat oven to 350 degrees F (175 degrees C). Line a baking sheet with foil or parchment paper. Mix the olive oil, honey, rosemary, salt, and black pepper together in a large bowl, and stir the sweet potato cubes in the mixture to coat. Remove sweet potato cubes with a slotted spoon, and arrange in a single layer on the prepared baking sheet. Bake until tender, about 35 minutes.
