Main Courses
Honey Garlic Chicken
1 kg chicken breasts, boneless, skinless
1/4 cup honey1/4 cup water 1 clove garlic, chopped1 teaspoon soy sauce
Mix all ingredients and pour over chicken. Bake uncovered at 400 degrees F for 30minutes. Turn chicken halfway through cooking.
BBQ Chicken Breast
5-6 chicken breasts2 teaspoons butter or canola oil1/4 cup BBQ sauce (mixture of Kraft Garlic and Kraft Honey Garlic)2 teaspoons BBQ seasoning1 teaspoon steak spice1/2 teaspoons garlic salt1/8 teaspoon pepper 1/2 teaspoon sugar 2 cloves garlic, pounded1/2 bay leaf
Mix all ingredients except bay leaf in oven proof dish, then add chicken and toss to coat.Add bay leaf and bake at 400 degrees F for 30 minutes. Turn chicken over halfway throughcooking and add water if pan is too dry.
Thai Chicken
4 chicken breasts, cubed1 cup green beans, cut up14 oz can coconut milk, stirred1/2 onion, chopped2 cloves garlic, minced1/2 teaspoon grated fresh ginger 1/4 teaspoon red pepper flakes1/2 lime (juice and 1 teaspoon grated peel)
Saute onions, garlic, ginger, red pepper flakes and lime peel in a little of the coconut milk.Add chicken, beans, lime juice and the rest of the coconut milk. Bring to a boil, then reduceheat and simmer, covered, for 20 minutes. Serve over white rice or coconut rice (see SideDishes.)

Pork Chops
500 g pork chops 1/2 thick, trimmed of fat1 tablespoon barbecue sauce
Brush barbecue sauce on both sides of pork chops. Bake at 400 degrees F. for 25 minutes.Turn pork halfway through cooking. Reduce time if chops are cut thinner. Chops should betender but not pink inside.
Satay
500 g beef, pork or chicken cut into 2 piecesMarinade (recipe follows)Peanut Sauce (recipe follows)
Marinate meat, ensuring it is completely covered. Beef needs at least one hour; pork andchicken can be reduced to 20 minutes. Thread 5 pieces of meat onto each skewer andplace on baking sheets. If wooden skewers are used instead of metal ones, they need to bewell-soaked in water first so they dont burn. Broil on top rack of oven for 4-5 minutes, or until done, turning halfway through. Do not leave unattended; items being broiled can burnquickly. Serve with Peanut Sauce.
Satay Marinade1/4 cup BBQ sauce2 tablespoons canola or olive oil2 tablespoons Italian dressing2 tablespoons water 1/2 teaspoon garlic salt1/2 teaspoon pepper
Peanut Sauce1 clove garlic1 teaspoon vinegar 1 tablespoon sugar 5 tablespoons peanut butter 1 tablespoon soy sauce1 teaspoon Italian salad dressingSambal or hot sauce to tastehot water (approximately 5 tablespoons)
Crush garlic thoroughly and add remaining ingredients, except for water. Stir, then addboiling water, one tablespoon at a time until desired consistency is reached. Add morewater if sauce is too thick.

Soft Tacos
500 g lean ground beef 1/4 teaspoon pepper
1/2 teaspoon salt1/2 teaspoon garlic salt1 teaspoon paprika1/4 teaspoon hot pepper sauce2 tablespoons ketchup12-inch tortilla wraps
Toppings:1 cup shredded cheddar cheese1 cup chopped lettuce1/2 onion, chopped1/2 cup light sour cream1 large tomato, chopped
Fry ground beef until no longer pink, then drain off fat. Stir in remaining ingredients. Placemeat and topping ingredients on wrap and fold into a roll, closed at one end.
Meatballs
2 slices bread500 g lean ground beef 1 onion, chopped2 teaspoons steak spice1/2 teaspoon nutmeg1/2 teaspoon salt1/4 teaspoon pepper 1/2 teaspoon onion salt1/2 teaspoon garlic salt1/8 teaspoon cloves1 beef bouillon cube1 tablespoon sugar 1 egg, lightly beatenBread crumbs2 tablespoons margarine
Add enough warm water or milk to bread to make a mush and mix with fork. Add to groundbeef along with onion and spices and shape into meatballs about the size of golf balls. Dipmeatballs in egg and roll in breadcrumbs.
Melt two tablespoons margarine in pan and fry meatballs on medium high until browned onboth sides. Cover and simmer for 30 minutes. Add a little water if pan becomes too dry.

Steak
500 g steak 1/2 thick, trimmed of fat1 tablespoon barbecue sauce2 teaspoons steak spice
Brush barbecue sauce on both sides of steak and sprinkle with steak spice. Bake at 400degrees F. for 25 minutes. Turn steak halfway through cooking. Reduce time if steak is cutthinner or medium rare or rare is desired. Tougher cuts of steak can be marinated first for 1hour or more.
Steak Marinade1/4 cup canola or olive oil2 tablespoons soy sauce2 tablespoons lemon juice2 tablespoons Worcestershire sauce1 clove garlic, crushed1/2 teaspoon pepper 1/4 teaspoon hot pepper sauce
Hamburgers
500 g lean ground beef 2 slices bread6 tablespoons milk1/2 onion, chopped1 teaspoons steak spice1/4 teaspoon garlic salt1/4 teaspoon salt1/8 teaspoon pepper
Add milk to bread and mix with fork to make a mush. Add to ground beef along withremaining ingredients and shape into patties. Broil for 10-15-minutes turning halfwaythrough. Cooking time depends on how thick the patties are.
Basic Tomato Sauce for Spaghetti
1 large onion, chopped2 cloves garlic, minced1 tablespoon olive oil5 tomatoes, chopped2 stalks celery, chopped2 bay leaves1/4 teaspoon pepper 1/2 teaspoon onion salt1/2 teaspoon garlic salt1 teaspoon paprika

1 teaspoon sugar
In a large pot, fry onions and garlic in olive oil. Stir in remaining ingredients.
Bring to a boil and turn down to a simmer for 30 minutes. Remove bay leaves.
Spaghetti Carbonara
8 slices bacon, chopped into 1-inch pieces2 cloves garlic, minced1/4 cup milk or cream3 eggs, lightly beaten with fork1 cup parmesan cheese1/2 teaspoon salt1/4 teaspoon pepper 1 teaspoon white wine1 lb. spaghetti
Fry bacon until crisp. Drain bacon fat, reserving 2 teaspoons. Saut garlic in bacon fat.Combine all ingredients except noodles. Cook and drain spaghetti noodles. Add sauce tohot noodles and toss well. Serve immediately.
Salmon with Mushrooms and Cheese
4 servings salmon fillets1/2 lemonnon-stick cooking spray1 cup sliced mushrooms1 tablespoon canola oil1/4 teaspoon salt8 teaspoon light sour cream1/2 cup grated cheddar cheese1/4 teaspoon paprika
Spray a casserole dish with non-stick cooking spray and place salmon in a single layer.Squeeze lemon juice on salmon and broil 6-8 minutes until it is cooked all the way through.Fry mushrooms in oil until water is released. Drain and sprinkle with salt. Over each portionof salmon, spread mushrooms, then sour cream, then cheese, then sprinkle with paprika.Broil for another 4-6 minutes until the cheese starts to brown.
Parmesan Fish
1/2" thick fillets of a white fish such as sole, perch, halibutnon-stick cooking spray1/2 lemon1/4 teaspoon garlic salt1/4 teaspoon salt

Side Dishes
Coconut Rice
1-1/2 cups basmati, jasmine or white rice
14 oz (1-3/4 cups) coconut milk, stirred1-1/4 cups water 1 teaspoon sugar
In a saucepan with a tight-fitting lid, bring the coconut milk and water to a boil. Stir in riceand sugar. Cover and simmer for 15-20 minutes. Do not remove lid during first 15 minutesof cooking time.
Roast Potatoes
4 potatoes, chopped2 tablespoons canola oil1 teaspoon steak spice1/4 teaspoon garlic salt1/4 teaspoon salt1 teaspoons dried parsley
Mix all ingredients together. Bake, uncovered, at 400 degrees F for 40 minutes or untilpotatoes are soft. Stir occasionally.
Spinach Salad
4 cups baby spinach1 cup sliced mushrooms4 slices pre-cooked bacon2 eggs1 tablespoon Italian dressing
Scramble eggs with salt, pepper and garlic salt. Cut bacon into bits (scissors are an easyclean up) and heat in microwave for 15 seconds. Toss spinach and mushrooms withdressing.Top with eggs and bacon.
Oil and Vinegar Salad Dressing
1 part vinegar 4 parts oil1/2 part water Shake well. Add spices if desired.

Cauliflower with White Sauce
1 cauliflower, cut4 tablespoons flour 1 tablespoon margarine
2 cups milk1/4 teaspoon salt1/8 teaspoon white pepper or hot pepper flakes (optional)
Boil cauliflower until just soft. Do not overcook. Drain.
In a glass bowl mix the flour and margarine, then add milk, salt and pepper. Microwave for 1 minute on high. Stir with whisk. Microwave for 30 seconds more and stir with whisk.Repeat 4 or 5 times. Watch the bowl to make sure it doesnt boil over. Pour over cauliflower.
Oriental Noodles
1 package ramen noodles with seasoning1/2 cup mushrooms, sliced4 teaspoons canola oil, divided1/8 teaspoon garlic salt, divided1/8 teaspoon salt, dividedpinch of pepper 1 cup frozen oriental vegetables1 tablespoon soy sauceSambal or hot sauce to taste
Saut mushrooms in 2 teaspoons canola oil with pepper and half the garlic salt and salt.Remove from pan and saut vegetables in remaining oil with soy sauce, hot sauce, ramennoodle seasoning and remaining garlic salt and salt. Cover to speed cooking; add water if pan becomes too dry. Cook noodles and drain. Mix noodles with vegetables andmushrooms.
Stuffed Mushrooms
12 large mushrooms, stems removed1 cup cheddar cheese, shredded1/4 cup parmesan cheese1/2 teaspoon salt1/8 teaspoon pepper 1/4 teaspoon garlic powder
Mix cheeses and spices together. Stuff into cavity left by mushroom stems. Bake, cheeseside up, at 400 F for approximately 12 minutes.

Breakfast
Thin Pancakes
3 cups milk
3 eggs, lightly beaten2 cups flour 2 tablespoons canola oil1/2 teaspoon vanilla3 tablespoons sugar canola oil for frying pancakes
Mix all ingredients with a fork, then combine thoroughly with a wire whisk. Use a largefrying pan greased with some of the oil. Pour in 2 ladles of batter and coat bottom of pan.Fry on medium-high heat until done, flip the pancake and fry the other side.
Thick Pancakes
1-1/4 cup flour 2 tablespoons sugar 2 teaspoon baking powder 1 egg, slightly beaten1 cup milk1 tablespoon canola oil1/2 teaspoon vanilla
Mix together dry ingredients. Add remaining ingredients and stir. Pour 4-inch diameter pancakes onto hot, greased griddle. Lower heat to medium. Flip pancakes and flattenslightly with spatula when bubbles appear and edges are slightly hard. Makes 8.
French Toast
2 slices bread1 egg1 tablespoon milk1/4 teaspoon cinnamon (optional)1 teaspoon canola oil
In a flat-bottomed container, stir eggs, milk and cinnamon with a fork. Dip bread into eggmixture, coating both side. Heat oil in frying pan, add bread, lower heat to medium andbrown on both sides.

Scrambled Eggs
2 eggs2 tablespoons milk
1/8 teaspoon saltpinch teaspoon pepper pinch garlic saltcheddar cheese, grated (optional)Non-stick vegetable spray
Stir eggs, milk and spices with a fork. Spray frying pan with non-stick vegetable spray; heatand add egg mixture. Turn down heat to medium and scrape eggs around pan with aspatula until they set. Stir in cheese until melted.
Oatmeal Griddle Cakes
2 cups milk2 cups quick-cooking oatmeal1/2 cup raisins1 egg, lightly beaten1/2 cup canola oil1/2 cup whole wheat flour 2-1/2 teaspoons baking powder 2 tablespoons sugar (white or brown)canola oil for frying pancakes
Heat milk and pour over oatmeal and raisins. Let cool. Add egg and canola oil. Mix together flour, sugar and baking powder then add to oatmeal mixture and stir. Pour 4-inch diameter batter onto hot, greased griddle. Lower heat to medium. Flip and cook other side whenalmost done.

Lunch
Hard-Boiled Eggs
Place eggs in a pot of water then bring to a boil. Lower heat so it is still boiling. Boil for 10
minutes. Drain and fill pot with cold water. Remove shells once eggs are cool enough tohandle.
Devilled Eggs
6 eggs2 tablespoons mayonnaise1/8 teaspoon saltpinch of pepper pinch of garlic salt1 stalk chives, chopped (optional)1/8 teaspoon paprika
Hard boil eggs as above. Slice eggs lengthways. Scoop out yolks. Mix yolks withmayonnaise, salt, pepper and chives. Replace yolk mixture in eggs. Sprinkle lightly withpaprika.
Grilled Cheese
2 slices bread1 slice cheese1 teaspoon butter or margarine
Make a cheese sandwich with the butter side out. Fry in pan or griddle, lowering heat tomedium once it is hot. Brown on both sides. Sandwich is done when cheese is melted andoutside is golden brown.
French Onion Soup
1 tin beef consomm condensed soup1 tin water 1 onion, sliced thinly1 tablespoon Italian salad dressing1/2 cup croutons
1/2 cup mozzarella cheese, shredded1/4 cup parmesan cheese1/2 teaspoon garlic salt
Saut onions in Italian dressing until they are soft. Bring soup and water to a boil. Dividesoup between 4 oven proof bowls. To each bowl, add onions then croutons thenmozzarella then parmesan then garlic salt. Broil until cheese is melted.

Dessert
Peanut Butter and Jam Cookies
1 cup peanut butter
1 cup sugar 1 egg1/4 cup jam
Cream together peanut butter, egg and sugar. Roll into 1-inch balls and place on ungreasedcookie sheet. Bake at 350 F for 8-10 minutes. Remove from oven and immediately top witha bit of jam.
Coffee Cake
1 cup flour 1 cup sugar 1 teaspoon baking powder 1/2 teaspoon salt1 tablespoon cinnamon1/2 cup milk1/4 cup canola oil1 egg, lightly beaten1 tablespoon sugar
Mix together all ingredients except 1 tablespoon sugar. Spray 8" square baking pan with non-stick cooking spray and pour in batter. Sprinkle with sugar. Bake at 400 degrees F for 25minutes.
Butterscotch Brownies
1 cup brown sugar 3/4 cup flour 1 teaspoon baking powder 1/4 teaspoon salt1/3 cup butter 2 teaspoons vanilla1 egg, lightly beatennon-stick cooking spray
Mix dry ingredients together. Melt butter and add to dry ingredients. Add vanilla and eggs.Stir well. Spray 8" square baking pan with non-stick cooking spray. Spread mixture in pan(batter will be thick). Bake at 325 degrees F for 30 minutes.
