From little barrels to slightly bigger barrels we take our finished vatted whiskey, whip it up into a cocktail of choiceand then continue to rest the liquid in a selection of differently seasoned casks.

The Stitch Solera System, aka the collection of

barrels to the left of the bar, was created to pro-

duce our very own vatted American whiskey. A

carefully selected bunch of our favorite brown

liquids have been blended together and then al-

lowed to rest and mature in our solera; a process

of fractional blending whereby new whiskey is

added to old thus maintaining consistency and

effectively speeding up the ageing process.


We are proud to announce that Stitch has been selected as Sydney’s Ardbeg Embassy. We have

joined the ranks of a handful of fortunate bars around the world representing one of the most

iconic whisky houses from the mighty island of Islay. Being an Ardbeg embassy, we have the

privilege to offer the entire range from Ardbeg, including their limited edition bottlings.
