Nutrition Education
The Oregon Family Nutrition Program (OFNP) provides nutrition education and related
physical activity education to youth, families and adults with fun, interactive games and
activities. Curriculum and activities are based on the current USDA Dietary Guidelines.
The funding comes from the USDA Supplemental Nutrition Assistance Program –
Nutrition Education Program (SNAP-Ed). Non-qualifying sites* were funded by other
sources (FCH and community partner).

Curriculum Development
High School Lessons – In 2008 I began working with Glenda Hyde on developing lessons to be
piloted in Central Oregon high school programming. The initial lessons piloted in 2008 were
successful, and since have been regularly edited, re-worked, and additional lessons have been
added. Currently, there are 10 classroom/educational lessons along with materials to guide a
complimentary series of “Healthy Cooking Lab” sessions. Since being developed in 2008 the
lessons have been used in SNAP-Ed delivery with 4 Central Oregon high schools (including 2
high school alternative Ed programs, and 2 teen parent programs. The lessons will be shared with
the high school work group in FFY2013.

Statewide Food Hero Campaign – Crook & Jefferson SNAP-Ed has seven elementary
schools participating in the 2012/2013 school-based phase of this three-part (including
participating in pre-survey (fall, 2012) and post-survey (Spring 2013) evaluation
components of campaign) statewide social marketing campaign for the website. The
primary and secondary target audiences are SNAP-eligible moms of school-aged kids and
the school-aged kids. The short and long-term Food Hero goals are: Moms visit
FoodHero.org/and or social media sites; Increase Fruit & Vegetable Intake, total and
forms; Increase meals cooked at home. Pre/Post survey evaluation results and impact will
be reported in the future.
OCHO and Meyer Grant Contributions – Contributions to the OCHO grant projects
included ‘training’ middle school 6th
graders at Jefferson County Middle School (JCMS)
for the taste-testing session as well as co-facilitating the actual taste-testing session at
JCMS. I also helped to organize and arrange for Crook-Jefferson OFNP program
assistants to participate in training and recipe testing/tasting sessions in Jefferson County
schools.
Meyer grant contributions included co-strategizing and planning OFNP-partnered
sessions to be carried out in Central Oregon community garden sites. As the Crook-
Jefferson SNAP-Ed program coordinator, I adapted garden lessons for SNAP-Ed
nutrition education to be delivered by CJ OFNP staff at the Willowcreek Community
Garden site in Madras.

Evidence of Program Impact
Oregon Family Nutrition Program. To be effective in nutrition education programming
OFNP staff is trained in curriculum and classroom management, equipped and annually
updated with staff input. Each staff member gets an annual observation in a classroom.
OFNP staff meets at least twice a month to discuss and evaluate programming and also
review feedback from teachers. OFNP staff delivers at least 6 lessons (usually 30, 45 or
60 minutes) over 6-9 weeks to 3 to 4 classrooms in each block of time. OFNP staff work
with a minimum of 3 schools and/or partner sites each week during the school year.
Faculty meets with administrators at least twice a year to get feedback, suggestions and
commitment for another year. Administrators approve a Wellness Team concept where
school teachers, administrators and staff are allowed and encouraged to reinforce
nutrition lessons and messages throughout the school day and all year long. OFNP staff
rotates displays, bulletin boards and tri-fold displays at each school throughout the year
and has a presence with a display and demo or a static display when attendance is not
possible during Open Houses, Conferences and Parent/Family nights.

4. Other Assignments –
In March, 2012 I was given .05 of my FTE for FCH/generalist activities. During this time
I was able to extend outreach in Crook-Jefferson counties beyond SNAP-Ed
programming by presenting nutrition education at local community health fairs and
events. I have also been able to work collaboratively with extension staff from other
programs such as Open Campus and 4-H to discuss possibilities, and in some cases plan
and schedule nutrition education classes and other related opportunities in the
communities. Discussions are ongoing and results of these collaborative partnerships will
be reported on in the future.

Nutrition Education Programs – Crook/Jefferson SNAP-Ed
Dividing CDJ Unit in 2012
During FFY 2012, Glenda Hyde, Dana Martin and I worked to divide the CDJ Unit. I
began managing the Crook-Jefferson SNAP-Ed unit in March, 2012 and Glenda Hyde
Continues to manage the Deschutes County SNAP-Ed unit. Crook-Jefferson
compromised about 1/3 of the total CDJ unit programming and resources. Dividing the
unit was planned to improve the quality of program delivery by increasing Managing
Faculty contacts with community partners, increasing flexibility in decision making, and
being able to provide better service and responsiveness to community partners and
clients.
Volunteer Program
Prior to the CDJ SNAP-Ed split, I assisted Glenda Hyde in training ~ 8 Nutrition
Education Volunteers (NEV) in FFY 2012. Participating volunteers receive training and a
resource notebook with the most current nutrition education information based on the
most recent USDA Dietary Guidelines. In return for 6 hours of training, volunteers agree
to volunteer at least 3 times over 6 months to help low-income residents learn more about
good nutrition. Volunteer activities include doing lobby demonstrations at local food
pantries, brown bag sites, SNAP offices and WIC events. After the CDJ split in 2012, I

trained Sandi Boley, EPA 2 to coordinate a newly established CJ Nutrition Education
Volunteer program. We currently have 1 active volunteer (inherited form CDJ split) that
we re-trained for CJ programming and 2 hopeful volunteers to train in FFY 2013. The
establishment of a successful CJ Nutrition Education Volunteer programming is ongoing
and collaborative effort along with Sandi Boley that is currently focused on the
recruitment phase. A successfully established program will have similar goals and
expectations as the Deschutes county NEV program.

NEP Fall Conference, 2012 – Planning committee member and co-facilitated the
‘Parade of Programs’ sharing session and co-organized the ‘Poster Sessions’ for the
conference. It was reported via campus feedback that almost 60 evaluations were
returned, and the overall response was that this was the “best NEP conference ever!”

Campus Statewide SNAP-Ed Plan Work Groups
- Mixed Ages Work Group; In September I was asked by our campus leaders to be
interim coordinator for the ‘Mixed Ages’ work group and that has turned in to a
permanent task. As work group coordinator, I will be responsible for organizing team
meetings and providing the team with guidance and support materials as needed in
order to accomplish the task successfully. This project has a deadline of spring, 2013
and the main expected outcome is for the work group to assess/analyze/review
materials and ultimately select a curriculum package to be used across the state
staring in FFY 2014 for programming done with the ‘Mixed Ages’ project group. As
part of this process, the work group will also be supplying pertinent information to a
campus-lead evaluation team to develop an evaluation tool to measure behavior
change with this project group.
- High School Work Group; The ultimate goals and outcomes of this work group are
the same as listed above for “Mixed Ages,” but instead of serving as work group
coordinator I will be a member of the work group team. As a team member, I will
work collaboratively with other team members to help identify, analyze, and select a

curricula package that will be used in FFY 2014 programming with the high school
project group.
- Native Work Group; This is a special sub-work group that I formed with the SNAP-
Ed manager of the Warm Springs’ unit in order to ensure that the specific needs of the
Native American community are able to be met in all project groups in FFY 2014.
With support and guidance form campus leaders, the plan will include a needs
assessment of the Native community, followed by evaluation of work group curricula
packages, and SNAP-Ed-approved recipes. The expected outcome will be to make
adjustments and modifications to teaching materials and resources as appropriate, in
all project groups, to meet the needs of and improve likelihood of behavior change of
Native American’s participating in SNAP-Ed programming.

National Extension Association of Family and Consumer Sciences (NEAFCS)
Conference
The National Extension Association of Family and consumer Sciences (NEAFCS)
is a nationally recognized association of Family and Consumer Sciences faculty.
The organization’s annual conference is a principal event for Extension Family
and Consumer Sciences faculty to update their skills and knowledge regarding the
issues facing families today. There are nearly 2800 members. Between 800-1000
members attend the annual conference.
Abstracts for poster, seminar or research presentations are evaluated through a
double-blind, national peer- refereed process. There was a 67% acceptance rate
for presentation proposals and 96% acceptance rate for poster sessions at the
2012 conference.
Epsilon Sigma Phi
Epsilon Sigma Phi (ESP) is the national association of over 3,200 Extension educators
from all program areas. ESP is dedicated to fostering standards of excellence in the
Extension System and developing the Extension profession and professional. The ESP
Conference is the venue for dissemination of innovative programming among Extension
faculty and faculty emeritus nationwide. Between 300- 500 educators attend this
conference annually. A double blind, national juried-refereed process evaluates abstracts
for seminars, research presentations and posters. The acceptance rate for abstracts
ranges from 30-50%.

Society of Nutrition Education and Behavior
The Society for Nutrition Education and Behavior is dedicated to promoting effective
nutrition education and communication to support and improve healthful behaviors and
has a vision of healthy communities through nutrition education and advocacy. There are
approximately 900 members of SNEB. The organization’s annual conference is attended
by nearly 600 nutrition educators. Abstracts for oral and poster presentations are
evaluated through a peer-refereed process. There was a 77% acceptance rate for
proposals at the 2012 annual conference. In addition to presentation at the conference,
accepted abstracts are published in the Journal of Nutrition Education and Behavior.
