INGREDIENTS 1 Tbsp olive oil 30 g butter 4 shallots, finely diced 1 large clove garlic, finely diced 1 heaped Tbsp freshly cracked black pepper 2 Tbsp brandy 250 ml beef stock 250 ml cream Salt, to taste 2 x 300 g steaks, cooked to your liking and rested METHOD 1. Add oil and butter to the large heavy-based frying pan used to cook your steaks. When the butter starts to foam add shallots and garlic, and cook gently until translucent. 2. Add cracked black pepper to the shallot mixture and sauté for a moment. Add brandy and flambé to burn off the alcohol. 3. Add the beef stock, bring to the boil and simmer to reduce by half. Add cream and reduce (again) by half until sauce coats the back of a spoon. Season to taste with salt. 4. Tip the rested steaks and any juices into the pan. Turn to coat with sauce and serve immediately. © MANU FEILDEL 2014 top tip To cook your steaks simply season with salt and pepper, sear in a pan with a bit of oil and butter, flip once then set aside to rest as you prepare the sauce.
