• 2Tbspbrandy• 250mlbeefstock• 250mlcream• Salt,totaste
• 2x300gsteaks,cookedtoyourlikingandrested
METHOD1. Addoilandbuttertothelarge
heavy-basedfryingpanusedtocookyoursteaks.Whenthebutterstartstofoamaddshallotsandgarlic,andcookgentlyuntiltranslucent.
2. Addcrackedblackpeppertotheshallotmixtureandsautéforamoment.Addbrandyandflambétoburnoffthealcohol.
3. Addthebeefstock,bringtotheboilandsimmertoreducebyhalf.Addcreamandreduce(again)byhalfuntilsaucecoatsthebackofaspoon.Seasontotastewithsalt.
4. Tiptherestedsteaksandanyjuicesintothepan.Turntocoatwithsauceandserveimmediately.
