Essential information

The most attractive fish in Mongolia is Taimen (Huchotaimen). It reaches length of 100-160cm here; the biggest pieces of taimen fish caught by our clients were longer than 140cm. The most common fish is Siberian trout-lenok normally reaching 50-40cm. In some areas even over 70 centimeters. Next to these there are two types of pike here. The pikes differ in their coloring; both reach the length of 70-100cm; however it is possible to catch even pieces of 115cm in length. There are also more types of grayling, the widest type being Siberian grayling; pieces of about 40cm are fished commonly. Other fish available here is bass, reaching a trophy length of 40-50cm, burbot reaching up to 1m.

Our guides are familiar with catching fish and releasethem and how to treat a fish, unhook, put it back in the water. We know a crucial moment for a fly fishing andoften we take photos on the action.

Weather for fishing can be fantastic during the sunny days in Autumn. The weather in September and October would be pleasant at the most of the time however In October, the weather can be cold andthe temperature might drop to -10C at night hours. It is typical to have occasional snowstorms and wind. In this case you are advised to prepare your fishing equipment and dress warmly.

More information about Mongolian cuisine .

As to be expected, the nomads of Mongolia sustain their lives primarily with the products of their domestic livestock (that will be meat and milk then!). These simple base materials are processed with variety of methods, and combined with vegetables.

Suutei TsaiOffering milk tea for guest is expressing tradition of Mongolian hospitality.  The sharing of tea provides nourishment, comfort, and puts all at ease. Tea is frequently served with boortsog - home made biscuits cooked on the stove. Main nomads drink is salted milk tea (Suutei Tsai), which may be  turned into a robust soup by adding rice, meat, or dumplings (bansh).

Orom

Mongolian nomad’s food comes from the products of  domesticated livestock - cattle/yaks, camels, horses, sheep and goats. Milk is the main ingredient of the nomads diet and processed into cheese (byaslag), dried curds (aaruul), yoghurt (tarag) as well a light alcoholic spirit distilled from yak milk (shimiinarkhi). However, the most delicious one is clotted cream called ” orom”.

Page 14: Special tours mongolia

KhorkhogIt is one of the most delicious dishes and is typically only cooked on special occasions. The  meat (usually mutton or goat) gets cooked in a sealed pot, with the help of hot stones which have been preheated in a fire.

AiragThe most favorite national beverage is airag, fermented mare's milk. It is a better to drink with cold and fresh. In Mongolia ,Dundgovi, Bulgan and Arkhangai provinces are the best places for drinking airag due to its rich pastureland and local unique technology of making an airag. Khuushuur It is a kind of meat pie or dumpling which is very popular in Mongolia. Meat, either beef or mutton is minced and mixed with onion (or garlic) salt and other spices. A variety of khuushuur has a round shape made by pressing the dough and mince together using the dough roller. After making the shaped one, fry them in oil until the dough turns a golden brown. The khuushuur is then served hot, and can be eaten by hand.

Buuz

Mongolian steamed dumpling filled with mince meat. The meat ball is then placed inside a small pocket of dough which is folded around the ball with a small opening at the top and in the chef's own personal style. The buuz is then steamed and eaten by hand. The meat is flavored with onion or garlic and salted..

Tsuivan It is very popular dish and easy to make and simple ingredients used in it such as hand made noodles, vegetables and various kind of meat (mostly beef and mutton) can be used at choice of cook’s interest .

BanshSmall filled pockets, boiled. Its size is smaller than buuz, but preparation method and recipe is same as Buuz, and Mongolians use the bansh for different meals and soups.

Guriltai shulA soup with meat and hand made noodles. As with any soup, the ingredients and their relative amounts can be varied at will. Mongolian people mostly use meat and noodles on their meal.
