British BeefDitch the Christmas turkey in favour of a foolproof joint of beef, or enjoy both to give your customers variation. Once the traditional centrepiece of a Christmas table, the roast joint of beef is coming back into popularity.

A BRITISH TOPSIDE

Topside is one of the best roasting joints. Unlike many carvery roasting joints, ours contains no brine injections. Ideally suited for both Sunday Roasts and weekday carveries. This joint is whole muscle product, which is standard trimmed and vacuum packed for freshness. It has a lean appearance and consistent quality which is ideal for portion control and produces minimal waste. Most of all, this joint holds up well on a hot plate and is easy to carve.

Prepared from the hind quarter after de-boning, this joint portions well, remains tender if cooked properly. F

B BRITISH STRIPLOIN

This Striploin can be used as a roast, or be individually portioned into steaks. It comes retail trimmed and vacuum packed for freshness with a fabulous quality and texture with a lean appearance and is very competitively priced. This particular cut is from the short loin, the strip loin is the larger of the two meats that make up the T-Bone, the smaller tenderloin makes up the other side of the T-Bone. F

Getting the Perfect Roast BeefThe beef should always be at room temperature before proceeding to cook. Leave your joint out for around an hour, depending on the size of the beef.

Roasting time suggestions: Pre-heat the oven to 180C

Rare: 20min per 450g + 20min, internal temp 60C

Medium: 25min per 450g + 25min, internal temp 70C

Well: 30min per 450g, + 30min, internal temp 80C

Prepare the beef by tying with butchers string; as the joint cooks, it expands, making it difficult to carve.

Drizzle the joint with olive oil and season with ground salt and pepper and rub into the meat. For that extra depth of flavour, rub a beef stock cube mixed with olive oil over the meat too. Before cooking, seal the beef by searing it in a pan with a little oil. Sealing adds colour and flavour, and helps seal in moisture.

Pour a few centimetres of stock into a roasting tin along with halved onions and carrots, and sit the beef on top of the bed of vegetables so the base of the joint doesn’t burn or stick to the pan. The vapour

from the stock will ensure your beef is moist, and the flavours from the beef juices, onions and carrots will create a rich base for your gravy. Place into the oven.

While cooking, lift out the beef from the oven from time to time and baste by spooning the juices over the meat. Baste at least three times during cooking.

Once the meat is cooked to its desired temperature, rest the beef by loosely wrapping in foil and putting to one side for at least 20 minutes before carving. During cooking, the fibres in the meat tighten, so resting the meat allows those fibres to loosen, which results in a soft tender beef.

Top Tips for Turkey

The turkey butterfly is the centrepiece to all Christmas dinners and can’t be anything less than perfectly succulent.

Pre-heat an oven to 190C. Create a herb butter by mixing fresh thyme, rosemary and parsley with salt and pepper with butter to form a paste.

Lift the skin of the turkey with your fingers and separate it from the flesh. Spread the butter mix under the skin. Season the outer skin and place into a roasting tin, adding a little stock or water to allow vapour to moisten the turkey during cooking. Occasionally baste the turkey during cooking by spooning the juices over the skin to create to make it golden and crispy and keep the meat moist.

Suggestive cooking time:Over 4kg: 20min per kg plus 90min

The temperature of the turkey should be 65C once cooked, you can check this with a meat thermometer. The turkey continues to cook when it is resting and should reach up to 70C.
