Yogurt products are a major part of the daily diet in many parts of the world as set, stirred or drinking yogurts. At Palsgaard we focus on the challenges dairy producers face within development and production – and more importantly: How to meet these challenges in the best possible way.
Mouth-feel and stability is very important when it comes to dairy products. It actually does matter and it makes a world of difference that a set yoghurt is stable and creamy – just as it does for a stirred yoghurt to be precisely what the end customers expects it to be when they taste it. And it must be the same experience every time.

Emulsifiers, stabilizers and know-how in yogurt put to work
Test your new yogurt in our application centers before going full-scale
Take advantage of our application centers in Denmark, Singapore, China and Mexico, and our technical experts around the world. Working closely together with your product development team, they can help to determine the best combination of emulsifiers and stabilizers needed to achieve the desired mouth-feel and water-retaining capacity in, for example, a new yoghurt formulation. Our fully equipped pilot plants can be set up to reflect your own production equipment or, if you prefer, we can also work alongside you at your own production site.
With application centers on three continents we can be in close contact with our customers throughout the entire process of preparing a new product for production or adjusting an existing product. During the process, we can analyse the various phases and modify the end product so that it will meet consumer preferences in the desired markets.

Solutions for set yogurtThe gelatine-free choice for set yogurt
Palsgaard® AcidMilk 342 is the preferred solution by yogurt manufactures wishing to avoid gelatine. The unique com-position provides excellent water binding and gelation char-acteristics. This makes it an excellent choice for controlling viscosity and texture in set yogurt without the use of gelatine.
Palsgaard® AcidMilk 342 is produced with specially select-ed milk proteins, which, at the right dosage, form a firm, smooth and elastic gel-like texture. This is very effective in reducing syneresis.
Palsgaard® AcidMilk 342 is developed so that it can re-place e.g. Palsgaard® AcidMilk 305 one-to-one in the recipe. This means that you can switch product without having to change other raw materials or parameters in the product / production.
The premium solution for set yogurt
The outstanding functional properties of Palsgaard® Acid-Milk 305 ensures an excellent structure of the set yogurt and a great mouth-feel.
Thoroughly tested Palsgaard® AcidMilk 305 immediately shows its superior functionality in set yogurt. Its excellent water binding capacity prevents syneresis when adding as little as 0.70%. At the same time Palsgaard® AcidMilk 305 gives a very pleasant body to the yogurt.
Palsgaard® AcidMilk 305 can be used in both set yogurt produced from fresh milk as well as recombined milk and it also works well in low fat yogurt.

The premium solution for stirred yogurt
Produced with the usual high Palsgaard standards Palsgaard® AcidMilk 306 offers a solution for the quality conscious and demanding manufacturer.
Extensive tests have been carried out comparing various types of milk solid non fat (msnf) with Palsgaard® AcidMilk 306. These all prove that when it comes to both improving the viscosity and mouth-feel as well as preventing syneresis, Palsgaard® AcidMilk 306 outperforms all msnf.
The optimum dosage is 25-40% less than that of e.g. skimmed milk powder (SMP), which could also make it an economi-cally attractive alternative in the production of stirred yogurt.
Palsgaard® AcidMilk 306 is used in both stirred yogurt pro-duced from fresh milk as well as in recombined milk and it works equally well in low fat yogurt.
The gelatine-free choice for stirred yogurt
Extensive knowledge in various ingredients have been the key to developing Palsgaard® AcidMilk 347 which is the ideal choice when requesting a stabilizer solution for use in stirred yogurt without gelatine.
Palsgaard® AcidMilk 347 provides the stirred yogurt with a very creamy consistency and a rich mouth-feel. Further-more it offers a viscosity which is more than twice as high as the viscosity obtained with e.g. SMP.
The clean label solution
Palsgaard® AcidMilk 316 is the ideal choice when wanting to produce clean label yogurt.
Based exclusively on clean label food ingredients Palsgaard® AcidMilk 316 is completely without any E-num-bers and still it keeps a firm structure and upholds a smooth and creamy consistency of the stirred yogurt.
Palsgaard® AcidMilk 316 and Palsgaard® AcidMilk 347 are both Kosher and Halal certified.

Thoroughly tested Palsgaard® AcidMilk 372 shows out-standing results and offers a better cost-in-use calculation when comparing to a pectin based recipe. It gives a good stability to both yogurt drinks with living bacteria as well as long life yogurt drinks. At the same time Palsgaard® Acid-Milk 372 adds little viscosity to the yogurt drink, so the ad-vantages using Palsgaard® AcidMilk 372 are obvious.

Palsgaard® AcidMilk 372 is the natural choice in the pro-duction of low msnf yogurt drink with living bacteria as well as long life yogurt drink. With its unique functional proper-ties it protects the proteins against heat denaturation at low pH. At the same time it gives a pleasant mouth-feel in the yogurt drink and assures a uniform product throughout the shelf life period.
Yogurt drinks are produced in various ways that demand different functional properties from the stabilizer. For yogurt drinks with different levels of msnf Palsgaard® AcidMilk 372 helps obtain the right viscosity and storage stability. Further-more Palsgaard emulsifier and stabilizer systems are devel-oped to work under different processes and product types e.g. “yogurt drink with living bacteria” and “long life yogurt drink”.
