The charming nose evokes summer – apple pie, cinnamon, rhubarb and custard, pineapple, lime, papaya

and banana; more fruits with water and rain-cleansed forest glades. The palate mixes sweet and citrus –

sherbet lemons, grape skins, flying saucers, Empire biscuits and pine.

An interesting nose, with peardrops, polished wood, clove, cinnamon, orange and Marsala. Water brings

out tobacco, scented wood, sherbet, coconut and Kummel (caraway). The palate has beeswax polish on

expensive furniture, orange peel, warm spices, peaches and floral perfumes.

The nose has bacon frazzles, dried seaweed, coal, oranges, leather and something medicinal; later, sugar-

sprinkled black pudding and barbequed prawns. The palate – big, hot and fierce – has embers and ash,

Hawaiian pork, pepper and liquorice, but also honey and marshmallows.

The nose offers light smoke, wood shavings, barrel staves, perfumed soap, candles, honey and Murray

The nose has mincemeat, vanilla and hazelnuts, with grass, candied orange and lemon. With water, this

freshness continues with spearmint, fennel, ice cream soda, but leather and tobacco also appear. The

palate has tangy citrus, dried fruits, mint julep and hops.

Bottle note

The nose delivers big toffee, before you discover vanilla, marmalade, sweet tobacco and honey-glazed

ham. In reduction it balances millionaire’s shortbread with salty pease pudding. The sophisticated palate

combines brown sugar and Edinburgh rock with oak tannins, sandalwood and clove.

Salty, dry and earthy with mushrooms, raisins, leather, soy sauce, matchboxes and sandpaper while meaty

spicy notes emerged on the palate. In dilution it was sweeter and stickier with dates and prunes while it

was hot, dry and tannic to taste.

Bottle note

Creamy vanilla custard/crème brulee, then crystalline sugar in espresso coffee, while the custard is joined

by rhubarb and plum crumble. Water raises gunpowder, scorched fruitcake and buttery caramelised sugar.

The nose has crispy duck with orange or plum, rye bread, dates, wood shavings and polished silver; water

brings Cointreau, marmalade and cola cubes. The rich, dry palate carries toffee, syrup, chilli chocolate,

sultanas, fruit peel and peppery smoked ham.

Bottle note

With aromas of tinned peaches, iced cinnamon buns, leather, spearmint, plums, nutmeg, saddles, grass,

cocoa and tastes of green ginger, angelica, blackcurrant sorbet, dark chocolate, fresh mint, cherries, and

tarragon this is calming yet hot & lively. Water is essential.

Bottle note

The friendly nose invites you in with candied pineapple, gorse, honey, fudge and vanilla, but also has

intriguing pepper and leather depths. The palate is penetratingly hot, with viscous textures and flavours of

toffee, pepper, ginger, dry grass and citrus.

Bottle note

On the nose syrup sponge pudding, fruitcake and wool tapestries and the scent of sweet tobacco ; in

reduction, Jaffa cakes and dusty marshmallows. The neat palate has Madeira cake and crème caramel;

water brings ginger, soda bread, and old leather theatre seats.

The perfumes unfold, through dried flowers, tea caddies, bubble gum and vanilla, eventually to an

aromatherapy session; water brings coffee, hazelnut and ash. The palate balances heather honey

sweetness against volcanic heat and roasted chestnuts with liquorice and star anise.
