Pumpkin Spice Energy Bars !

15 minutes 7 Bars

!8 ounces dates (I used 1 package of Dole dates) 3/4 cup walnuts 3/4 cup almonds 3/4 cup peanuts 2 tablespoons maple syrup 2 tablespoons plain pumpkin puree 1 heaping tablespoon pumpkin pie spice !1. In a food processor, combine all ingredients until the mixture is well combined, but there are still some chunks of nuts. 2. In a bread pan lined with parchment paper, spread the mixture and press it down firmly with a spatula. 3. Pull the whole mixture out of the pan and cut it with a knife into 7 large bars or up to 28 bite-sized snacks. !!!!!

Chocolate Peanut Butter Energy Balls !15 minutes 34 Balls !!

1/2 cup almonds!1 (15 ounce) can black beans, drained and rinsed well!3/4 cup peanut butter (or other nut butter of choice)!1/4 cup honey (or other liquid sweetener of choice like agave nectar or maple syrup)!1/4 cup unsweetened cocoa powder!!1. In a food processor, process the almonds until they are a fine crumb. !2. Add the beans and process until they are well incorporated.!3. Add the peanut butter, cocoa, and honey until the mixture is smooth. !4.Roll the mixture into balls. !Optional: Place the balls on a baking sheet and allow them to firm in the freezer for 10-20 minutes before serving. !!Store in the refrigerator.

1 cup frozen blueberries!juice from 1 lemon (scant 1/4 cup)!1/3 cup coconut milk!3/4 cup cold water!!Place all ingredients in the blender and blend until smooth.

Tahini-Maple Energy Bites

1 cup sunflower seeds!1 cup pitted dates!1/4 cup tahini (sesame seed paste)!1/4 cup maple syrup!!1. In a food processor, process the sunflower seeds

and dates until they form a coarse crumb. !2. Add the tahini and maple syrup and process until a

dough forms. !3. Roll the mixture into 1-inch balls.!!Store in the refrigerator.

Banana Split Smoothie !5 minutes 1 smoothie

1 banana, frozen!4-6 strawberries, frozen!1 cup milk (I prefer unsweetened almond milk)!2 heaping tablespoons cocoa powder!1 heaping tablespoon peanut butter!1-2 tablespoons honey!!Place all ingredients in the blender and blend until smooth.!!Note: If you don’t have frozen fruit, add a few ice cubes.

Healthy Carrot Cake Bars ! 20 minutes 30 Bars

5 carrots, tops cut off and scrubbed clean (no need to peel)!1 cup walnut pieces!1 cup whole almonds!1 cup whole pitted dates!1 cup old fashioned oats, packed!1/2 cup raisins!1/4 cup dried pineapple pieces (or raisins)!1/8 cup + 1 tablespoon maple syrup!1 teaspoon cinnamon!1/2 teaspoon ground cloves!1/2 teaspoon allspice!1/4 teaspoon ground nutmeg!pinch salt !8 ounces cold cream cheese!2 teaspoons vanilla extract!20-30 drops liquid stevia drops!1. Using the fine shredding attachment on

your food processor, shred the carrots. !2. Put in the S-blade and add the walnuts,

almonds, and dates. Process until you have a crumbly mixture. !

3. Add the oats, raisins, pineapple, maple syrup, and spices and pulse until everything is well mixed. !

4. Press the mixture into a 8X8” pan lined with parchment or lightly oiled foil. Put in freezer while you make the frosting.!

5. In the food processor, blend the cream cheese, vanilla, and stevia until smooth. Do not overprocess.!

6. Use a spatula to frost the bars. Cut into 30 squares and serve.

Vegan “Caramel” Dip !2 minutes 4 servings

1/2 cup tahini (sesame seed paste)!1/2 cup maple syrup!!Put the tahini and maple syrup in a bowl and mix well. Serve with apples, other fruit, or crackers for dipping.

Nut Butter Stuffed Dates

3 pitted dates!1 teaspoon nut or seed butter of choice!!Cut a slit length wise in each date. Stuff each date with about 1/3 of a teaspoon of nut or seed butter. your nut or seed butter.

1 apple, diced!1 tablespoon raisins!1 tablespoon sunflower seeds!1/4 cup unsweeteened almond milk!1 tablespoon nut butter of choice!!!Place the diced apple in a bowl. Top with raisins, sunflower seeds, and almond milk. Drizzle your nut butter over the top. Eat with a spoon.

Strawberry Shortcake Energy Bites

10 minutes 16 balls

1 1/2 cups freeze dried strawberries!1 cup soft pitted dates!3/4 cup cashews!1 tablespoon honey!1 teaspoon pure vanilla extract!3 tablespoons hemp seeds (optional)!!Put the freeze dried strawberries into the food processor and process unitl they form a powder. Add the remaining ingredients and process until they are well broken down. Roll the mixture into 1-inch balls.
