RESERVATION POLICYThe club strongly suggests reservations for dinner. However, we will make every attempt to accommodate any member wishing to dine with us. Walk-ins and late reservations will be accepted on a space available basis.

CANCELLATION POLICY If a reservation for a special event (where the policy is in action) is cancelled less than 24 hours before the start of the event, then the member holding the reservation will be billed for 50% of the cost of the event. This will apply for each guest that the original reservation was made for. Cancellations made more than 24 hours from the time of the reservation will not be billed a cancellation fee.

It’s early June and the staff is enjoying a quick lull to catch our breath following a huge Memorial Day weekend. Other than Memorial Day itself, we were blessed with beautiful weather to conclude one of the wettest Mays on record for the Wilmington area.

We again saw record participation at all of the social events over the weekend, kicking off with the “Meet & Greet” at the “deep end CABANA.” The need for nourishment and refreshment was most evident, and seemed to be fulfilled with lots of lobsters, of course chicken fingers, smoothies, beer and wine, and the occasional mojito!

BREAKFAST AT THE YACHT CLUB! That’s right, returning for the second summer. On Friday, Saturday and Sunday mornings, you can escape the house, with or without “kid’s in tow,” and enjoy a (possibly) relaxing bite of “summer at the beach.” For details refer to “Morning Provisions” on page 7. Or, as breakfast is wrapping up (at 10:00 am), in case you missed it, head on over to the Deep End Cabana for a quick snack on the run at the recently launched “grab&go.”

In the belief that we are only as proficient as our members perceive us to be, please let us know what you’re thinking. I would like to remind you of comment cards in your dining check books, as well as the suggestion box located in the Lounge, to facilitate quick, easy and anonymous (if you should so choose) input about any and all things related to your club.

As I put the finishing touches to this article for the July newsletter, the Annual Member Meeting and Father’s Day are right around the corner. These two occasions remind me of how fortunate we are, and me in particular, to be on this beautiful island partaking and providing to a very proud and supportive membership, and of how proud I am of my “yacht club children” ----- my staff!

It’s now prime time on Figure 8 Island! In speaking for “all my children,” we hope to see you ALL, soon and often over these precious few summer months.

Decorated cars and golf carts line up at 9:30 am at the intersection of Beach Road South and Littleneck Road to lead the parade to the flag ceremony. Bicyclists and pedestrians may join the parade of vehicles along the way. The flag ceremony will begin at 10:00 am (SHARP) at the intersection of Beachbay Lane and Beach Road South followed by a continuation of the parade to the Yacht Club. Festivities will include free rides, games, face painting, drinks, snacks and live music by A Full Dish. A bar for adults will be available as well.

Summer Herb Risotto

Prep Time: 10 minutes Cook Time: 45 minutes

INGREDIENTS2 oz clarified butter

1 each onion, diced small

4 cups risotto (arborio rice)

½ cup white wine

3 qt chicken stock or vegetable stock

1 cup minced fresh mixed herbs (parsley, chives, tarragon, thyme, oregano,

basil, green onions)

1 each minced shallots

1 each minced clove garlic

Parmesan cheese, optional

PREPARATION, SERVICE, AND BREAKDOWN1. Combine the stock and wine in a separate pot and bring

to a simmer. Have this step completed before beginning the rest.

2. Heat the clarified butter in the rondeau until hot.

3. Next, add the onions, shallots & garlic to the butter and allow them to sweat.

4. Add the risotto and stir to allow the clarified butter to coat the risotto.

5. Start adding the some of the stock and wine combination, just enough to cover the risotto. Stir the risotto constantly with a wooden spoon to allow the stock to absorb in to the rice. Continue this process one ladle at a time until all the liquid is used and the Arborio rice is creamy and still slightly al dente.

6. Once all the liquid has been used, stir in the desired herbs (in any combination) and remove from heat.

7. Get a sheet pan and line the inside of the pan with plastic wrap. Pour the risotto into the pan and place it on a rack to cool.

CHEF’S NOTE: If making a lemon-herb risotto, add the juice and zest of two lemons when stirring in the herbs.

Depending on the application, you may want to include parmesan cheese, peas, saffron, grilled chicken, fish, shellfish, and so forth.
