Giorgia didn’t even try and sell them to me, she simply offered me a spoon and a warm knowing smile and asked me to try and she didn’t need to. Wow! Giorgia is so passionate about doing things naturally and using local varieties grown without chemicals. The overriding flavour of these over 70% fruit jams is the sweet tasting natural flavour of top quality uncontaminated local organic fruit from over 500 trees and not the sweetness of sugar as is the flavour of just so many jams these days. They are superb in yoghurt, outstanding with cheese, with salumi, game, pork and lamb. But I would say eat just them with good bread, simply, and taste the fruit. FM18a Apricot Albicocca Imagine the best apricots you have ever tasted, warm straight from the tree, blushing red and soft, oozing their sweet juice.That is what this jam tastes like and this is best enjoyed eaten with toast or good bread.

FM18c Fig Fico Fig jam is one of the best to eat with cheeses, and were the classic accompaniment to Parma Ham. Lovely in yoghurt, on 'crostata' tart or just eat it simply, on toast with butter.

I met Fiona Sciolti at the Abergavenny food festival and I made the big mistake of tasting her hand made chocolate bars! They were extraordinary and nothing prepared me for such great tasting chocolate.

Zolfino Bean of Pratomagno TuscanyAlmost extinct by the 1970's, the noble Zolfini are considered by some as one of the finest shelling beans in the world, picked by hand in Tuscany and ONLY found in Pratomagno in a given geographical region consisting of 3 villages. It is described as ‘the lost flavour of the Tuscan countryside’. We get asked for these all the time, despite the price tag.

The Zolfino bean is a noble bean proud of its small territory of production along the Strada Setteponti in the pre-alpine hills and mountainous overhanging peaks along the old Roman Cassias Vetas route. Many have tried to copy it unsuccessfully and there are still only few producers of Zolfini beans in its home area.

It is called Zolfino as it has a very light yellow colour, like sulphur and it has the finest thinest skin which food critics describe as melting in the mouth like 'l'Ostia' - the host in church.
