Leiths School of Food and Wine
Leiths School of Food and Wine Foundation CertificateQualification that provides students with the confidence and capability to cook for themselves at university and while living independently.
CTH (Confederation of Tourism and Hospitality) Level 3 Extended Certificate in Professional Cookery ‘Practical examinations for the culinary skills units, are internally assessed and verified, and externally moderated by a CTH culinary examiner. Candidates are required to produce complex dishes to a high standard’. This qualification ‘earns’ UCAS points for candidates.
Level 2 Certificate Food Safety and Hygiene for Catering The award meets the minimum requirements laid down by the EU to work within a food environment.
This year’s group consisted of Alysha Brown, Flora Cheung, Saskia Enderby, Amelia Graham, Nancy Parish, and Joyce Zhang. They had very different experiences of cooking prior to starting the course; some had cooked very little, whereas others had cooked a lot at home, whilst others had completed a GCSE course.
The beauty of this course is the fact that it challenges all, whatever their previous experience. The greatest challenge of the course is to encourage the students to have an over-view of the whole task rather than looking at the individual ‘recipes’ within a lesson. The girls amply demonstrated this in their practical examination which they all passed.
One of the highlights was watching the tremendous teamwork they engendered as a group when preparing a Canapé party for fifty people. At the start they worked individually on their own responsibilities, but as ‘serving time’ drew near they quite naturally supported each other.

OSWESTRY YOUTH MUSIC FESTIVALA record number of 88 pupils ranging from the age of 4 up to 18 took part in this year’s Festival and won a record number of first places. Lucy Nelson from Lower Four successfully won the ‘Logo’ Prize.
Hedy Dong (singing), Hedy Dong (piano) and Kate Reardon (brass) all went through to the final-of-finals and competed for ‘Young Performer of the Year’. Hedy Dong’s piano playing was the overall winner.
