perfect soup for a cold Winter’s day.

1 Medium Onion1 Butternut Squash1 Sweet Potato1.5 ltrs Vegetable Stock1 tblspn Extra Virgin Olive OilSeasoning (ideally Organic Sea Salt &

Course Ground Black Pepper)

Peel, chop and de-seed all vegetables

Soften onion in the oil and then add the

remaining vegetablesSeasonAdd the vegetable stock and simmer until all

vegetables are softBlend soup until smoothTaste and season again if required

Serve with multi-seed bread to dunk

Winter WarmerRecipesBreakfast

Homemade MuesliThis recipe makes a delicious breakfast that is

jam packed with ‘get up and go’. Eaten warm

or cold, it is filling, nutritious and ideal for the

weight conscious.

150g of breakfast oatsHandful of your chosen fruit - dried or fresh or

bothHandful of sliced almondsA dozen hazelnuts, walnuts, pecans or brazil

nutsA tblspn of mixed seeds (sunflower, hemp,

pumpkin, sesame, chia).A tblspn of branA tblspn of sweetener (honey, agave or you

can use golden syrup but be aware of the

calories!)

Cover with either warm or cold milk. This can

be semi-skimmed or an alternative is almond

milk.Enjoy!

LunchButternut Squash SoupDelicious, nutritious, warming and filling. The

DinnerShepherds’ PieA leaner version of this classic dish that also

covers off most of your 5 a day. Serves 4-6.

400g of lean lamb mince1 medium onion3 large potatoes2 medium parsnips1 tblspn Extra Virgin Olive OilSeasoning

Peel all vegetablesSlice 1 parsnip and 1 carrot very thinly, fry until

crisp, drain on kitchen paper and set aside

Boil potatoes and sweet potato until cooked, then

mash thoroughlyBrown lamb mince, place in sieve and rinse with

boiling water to flush away fatSoften chopped onion in the oil and then add the

remaining chopped vegetables and stock

SeasonAdd the lamb mince and simmer until vegetables

are softThicken stock with 1tsp of cornflour made into

a paste with a little water, by stirring in

thoroughly

½ small swede80g green beans

1 sweet potato3 large carrots

1 ltr stock1tsp cornflour

Place lamb and vegetables in a deep

overproof dish and cover with mash.Top the mash with the carrot and parsnip

crisps made earlier Bake at 180º, Gas Mark 4-5 for 20

minutesServe hot with lightly boiled greens

i.e. spring greens, broccoli,Hearty, warming and nutritious

nostalgia on a plate. Perfect for a

cold day!
